Slow Cooker Party Shrimp

I love shrimp. Boiled peel-and-eat shrimp loaded with Old Bay flavor are my favorite. All I need is a bit of spicy cocktail sauce and I’m ready to go. I thought I’d try something new this time instead of boiling shrimp in spices. I thought I’d try slow cooker party shrimp. And wow! Perfectly cooked shrimp, tender and moist, about as hassle-free as you can possibly get. This is absolutely the easiest way to cook up a big batch of shrimp for a party.

It’s Time To Party

You can cook these slow cooker party shrimp ahead of time and chill them to serve them cold, or let your guests grab the shrimp right out of the slow cooker. Well, using tongs would probably be a good idea. I’d serve them with a variety of cocktail sauces. Spicy. Not spicy. Remoulade. Those things.

I used 20-24 count wild caught Gulf shrimp for this dish. I prefer Gulf shrimp, and I prefer wild and not farm-raised. Gulf shrimp that have been living in the wilds cannot be beat. That’s why I also use them in my shrimpin’ dippin’ broth.

Also make a batch of my refried bean dip in your slow cooker. It’s another great party dish.

Slow Cooker Shredded Buffalo Chicken

I love Buffalo chicken wings, and anything Buffalo chicken wing-flavored. I like to keep shredded Buffalo chicken on hand. That way I can throw together a quick sandwich at any time with no fuss or trouble at all. I love the kick of the Buffalo sauce. The more, the merrier I say! I often cook Buffalo chicken in my Char-Broil Big Easy, but also love making a big batch in my slow cooker. Slow cooker shredded Buffalo chicken is easy to make, smells fantastic all day long while it’s cooking, and can be used in a lot of ways. Make a double batch and keep the extra in the freezer.

Add Sauce As Needed

Don’t be afraid to add more wing sauce to this slow cooker shredded Buffalo chicken as it cooks if you think it’s getting too thick. Check on it every few hours just to be sure and give it a good stir. You can take off the slow cooker lid and let it reduce if you think it’s too thin.

Don’t chop the chicken super fine. I figure how fine I want it will depend on how I end up using it. You can always chop it more later.

I use this chicken in a variety of recipes. Such as my Buffalo chicken alfredo, tacos and subs .

I’ve done that corned beef and cabbage thing. Loved it. I’ve done the corned beef sliders thing. Definitely loved it. There’s nothing wrong with tradition, but it’s time for something new. Time for slow cooker spicy corned beef. Oh yes. Tender, sliced, and the best part, topped with a simple glaze that doesn’t remind you of the usual corned beef ‘thing’. You can tell that just by looking at the list of ingredients! Oranges and corned beef? Yes. Cloves, you bet! And lots and lots of other great things that end up packing the corned beef with crazy good flavor. This isn’t a boring dish by any stretch of the imagination.

This Isn’t Your Usual Corned Beef

I sliced this slow cooker spicy corned beef thinly and served it on rye bread with just a bit more of the glaze drizzled over the top. Piled high. Big time high. That’s it. That’s all it needed. No kraut, Swiss cheese, or anything else. Yeah, you can add those things. But, wow the glaze is so good I just wanted to enjoy it and the crazy delicious corned beef. At most I’d add a slice or two of cheese and put the sandwich under the broiler for a few seconds to get it hot and melted.

For the corned beef

  • 4-5 pound corned beef rinsed, lightly trimmed
  • ¼ teaspoon dried rosemary
  • 1 bay leaf
  • 1 teaspoon dried dill
  • 6 cloves whole
  • 1 stick cinnamon
  • 1 clove garlic
  • 1 medium onion cut in chunks
  • 2 ribs celery cut in chunks
  • ½ orange unpeeled, sliced thin

For the glaze (double to have extra for drizzling over the meat after slicing)

Instructions

For the corned beef

  • Place all of the corned beef ingredients into a slow cooker.
  • Cook for 8 hours until tender, but not falling apart.
  • Remove the beef from the slow cooker and let cool slightly.
  • Wrap tightly in foil and refrigerate overnight.
  • Preheat your oven to 350 F.
  • Unwrap the beef and place in a 9″ x 13″ baking dish that has been sprayed with non-stick spray.
  • Combine the glaze ingredients and pour over the top of the corned beef.
  • Bake for 30 minutes.
  • Remove and slice. Drizzle with any glaze left in the baking dish or double the glaze and warm the remaining before pouring over the beef.

Notes

Makes for the best, different Reuben sandwiches!

Slow Cooker Fiesta Meatballs

I’ve done the meatballs-in-a-slow-cooker thing before. You know, the standard sweet-and-sour appetizer version. Great snacks for the big game. I wanted to do something like that traditional recipe, but with a little difference. A little kick and a lot more flavor. These slow cooker Fiesta meatballs are exactly what I was looking for. Eat them by themselves or on a roll as a sandwich, either way they’re great!

As easy as these slow cooker Fiesta meatballs are to make, I thought they were quite tasty. They were tender and juicy, and a bit spicy. Just like I like them!

Although I did use pre-cooked meatballs, homemade would be great (read: better). Next time (if I have time) I’ll use a batch of my cooked Italian meatballs. If you do use homemade you can cut the cooking time back since the meatballs won’t be frozen.

  • Place 4 tablespoons of the flour into a large bowl.
  • Season with salt and pepper.
  • Heat the oil in a large skillet over medium-high heat.

  • De-glaze the skillet with wine, scraping all of the goodies off the bottom of the pan.

  • Add the remaining 2 tablespoons of flour and stir well.
  • Slowly stir in the beef broth.
  • Add the Kitchen Bouquet and onion and garlic powders, stir.
  • Add the dried pepper flakes, if using, and stir.
  • Pour mixture into the slow cooker and stir.
  • Cook 8 hours or until the beef is fall-apart tender.
  • Adjust seasoning.

  • Split the bread horizontally.

The corned beef on these slow cooker sliders is beyond amazing. Yes, it’s tender, but that’s not the main attraction. The flavor is incredible. The corned beef brisket cooks for hours in a wonderful mix of vegetables, seasonings and broth. There’s a mild tomato flavor, which isn’t something you normally expect, but it’s just another taste that really sets this corned beef apart from anything else.

Go Kraut-less?

You can certainly add sauerkraut to make these slow cooker corned beef sliders more Reuben-esque, but honestly, I wouldn’t and I didn’t. The corned beef is so incredibly tasty that you don’t want to bury it in kraut flavors. I find it weird to even say that because I’m a huge kraut fan. Specially when it comes to a sandwich with corned beef or pastrami on it. It’s unusual for me to even see one without at least a bit of kraut somewhere!

Looks Hard But It Isn’t

I know it may seem like there are a lot of ingredients in this recipe, but I assure you that it’s not really that difficult to make. There’s just a little bit of preparation time. Then everything goes into the crockpot. I like to take my corned beef out and let it rest for a few minutes before I start slicing it.

  • Layer 1/2 of the onion, carrots, celery and garlic in the bottom of a slow cooker set to low.
  • Add corned beef brisket, fat side up.
  • Add remaining onion, carrots, celery and garlic.
  • In a bowl whisk together the broth, tomato paste, Worcestershire, brown sugar, celery seeds and red pepper. Pour over the beef.
  • Sprinkle beef with salt and pepper.
  • Slowly pour beer around the beef and cover the cooker.
  • Cook on low for 8-9 hours until the corned beef is tender.
  • Remove meat and slice or shred as desired. If storing leftovers, I would add a bit of the sauce from the slow cooker so that the beef doesn’t dry out when reheated.

For the sliders

  • Preheat oven to 350 degrees.
  • Cut buns in half horizontally.
  • Spread the insides with the Thousand Island dressing.
  • Add corned beef and cheese.
  • Add bun tops and brush with melted butter.
  • Wrap in foil and bake for 15-20 minutes.

Slow Cooker Tortellini Soup

I thought this slow cooker tortellini soup was absolutely fantastic. The sauce was perfect. Nice and tomato-y. But the big hit for me was the tortellini. It absorbed some of the great sauce and became great little scrumptious bites. I used fresh tortellini, but frozen would work just as well. So would ravioli.

It’ll Warm You To The Bone

Sprinkled with a bit of freshly grated Parmesan, this slow cooker tortellini soup was the ideal dish on a cool day.

Fennel can be a little too strong (that licorice flavor can drown out everything!), so use as much or as little as you like. Or not. And don’t be afraid to add a few splashes of hot sauce or a good amount of dried red pepper flake for some kick.

  • Add the onion and garlic and cook another 2 minutes.
  • Add the crushed tomatoes, diced tomatoes, tomato paste and tomato soup to your slow cooker.

  • Add the beef mixture and beef broth. Stir.

Slow Cooker Pizza Casserole

All the flavors of pizza in a casserole, made in a slow cooker. There’s plenty of cheese and pepperoni so you can overlook the lack of a crunchy crust. The perfect one-pot meal on a rainy, cool late winter evening. You can make it more ‘your way’ by adding Canadian bacon, mushrooms, different cheeses… whatever you prefer.

Beware Sad Pasta

Be careful to not overcook the pasta. Pasta is not the most slow cooker-friendly item in the world. If you over cook the pasta it will become mushy. Not happy mushy either. So error on the side of caution and serve this slow cooker pizza casserole as soon as the pasta is cooked. It’s sorta like my pizza pasta bake, but with a twist.

  • Crumble in the sausage and cook until almost done.

  • Add the garlic and cook for one more minute.
  • Transfer meat to a slow cooker set to low.
  • Stir in the tomatoes, water, all but 12 slices of the pepperoni, the oregano, salt, pepper, and 1 cup of the cheese. Mix well.
  • Add the pasta and stir.
  • Top with the remaining pepperoni and cheese and cover.
  • Cook for 5 hours and serve garnished with parsley, Parmesan and more mozzarella cheese.

Slow Cooker Ravioli Lasagna

As much as I prefer cooking outdoors, I still love cooking dishes inside in a slow cooker, specially on days when the weather is a bit questionable. Preparation is almost always simple, even though the final results can be quite fantastic. I went into making this slow cooker ravioli lasagna thinking it’d be ‘ok’. I came out thinking ‘wow, that was excellent’.

The Easiest Lasagna Recipe Ever

All the flavors of a great lasagna, but done so easily with very little effort. The sauce was nice and tasty, the ravioli cooked up perfectly, and of course, there was ooey-gooey cheese.

You can substitute frozen raviolis if you like. Nothing beats the taste of fresh ravioli in this slow cooker ravioli lasagna. Even though this is a quick not-much-from-scratch dish, there’s no reason to not add some fresh ingredients. Fresh ravioli can be found in a tiny fridge in the pasta aisle in our local grocery store.

It’s possible that I added a few pinches of red pepper flake to this lasagna because, well, I like a little kick in everything I make. I left it out of the recipe below.

You can use frozen ravioli. Just cook first package instructions and drain well.

Slow Cooker Fire-Eater Pulled Pork

There’s no reason to make so-so pulled pork in your slow cooker. Give it some kick. Like my slow cooker fire-eater pulled pork. It’s got some kick. Fire-eater rub and hot sauce will wake up your taste buds, that’s for sure. Tender, moist pork makes for the perfect sandwich on a cold day.

And baked potatoes? One of my favorites. Just heap on some of pork. Add sour cream. Black olives. Maybe a little chopped onion. A couple of jalapeno slices. Now that’s a baked potato!

I prefer Cholula original hot sauce in dishes like this fire-eater pulled pork. It’s spicy, but it’s not so overwhelmingly hot that you can’t still taste the dish.

Slow Cooker Fire-Eater Pulled Pork

There’s no reason to make so-so pulled pork in your slow cooker. Give it some kick. Like my slow cooker fire-eater pulled pork.

  • Sprinkle 1 tablespoon of rub around all sides of the pork.
  • Heat oil in a large skillet over medium-high heat.
  • Add pork and brown on all sides. Remove to a plate.
  • Turn off the heat to the skillet and let cool slightly.
  • Slowly (keep your arms, hands and face back as it may splatter!) add 3/4 cup of water to the skillet and whisk.
  • Pour mixture into a slow cooker on low.
  • Add the vinegar, tomato paste, remaining 3 tablespoons of the Fire-Eater rub, and 2 cups of water to the slow cooker and whisk to combine.
  • Add the meat and cover.
  • Cook for at least 8 hours or until the meat is falling apart. If the liquid does not completely cover the pork you may want to turn it every few hours.
  • Remove the pork to a cutting board and chop.
  • Transfer the slow cooker liquid to a saucepan over medium-high heat and bring to a boil. Stir in the hot sauce. Reduce heat to a simmer and simmer until reduced by half, stirring occasionally.
  • Return the meat to the slow cooker and add the reduced liquid.

Notes

Serve on buns, on nachos, on baked potatoes… however you prefer!
