Oh my goodness. I was so happy with these Buffalo chicken flatbread pizzas. Fantastic flavors all around, from the spicy chicken to the tangy cheese to the creamy Ranch and fresh cilantro. All served on low-carb flatbread pizza crusts that take only a few minutes to bake. It really doesn’t get any easier than these pizzas. And it really doesn’t get any more flavorful.

One Great Pizza

Thin flatbread pizza crusts are quickly becoming a staple in our home. They help make a Buffalo chicken flatbread pizza great. I keep homemade pizza sauce on hand in the freezer, so I can whip together a quick dinner by just adding some cooked sausage or chicken or whatever I have on hand. They’re also a great way to use up leftovers, from tomato slices to turkey.

I highly recommend that you shred or grate your own cheese at home. Don’t buy the pre-shredded or pre-grated stuff. It has stuff added to it to keep it from sticking together. That ‘stuff’ affects how the cheese melts. Shred it yourself and use the good stuff.

You can leave off the blue cheese crumbles and Ranch dressing and instead drizzle these pizzas with blue cheese salad dressing.

  • Preheat oven to 350 F.
  • Place pizza crusts on baking sheets and bake for 2-3 minutes. Remove.
  • Spread pizza sauce out evenly onto the crusts.
  • Sprinkle with chicken, mozzarella and blue cheese crumbles.
  • Bake for 4-5 minutes or until mozzarella has melted.
  • Drizzle with Ranch dressing and garnish with cilantro.
  • Cut each crust into 4 slices and serve.

Notes

Substitute blue cheese dressing for the ranch for even more blue cheese greatness!

Pulled Chicken BBQ

I love smoked chicken. Mostly white meat. For dark meat I prefer grilling. My quest is to make pulled chicken BBQ. And often.

Nothing is easier to do than to smoke a few chicken breasts. Bone-in split breasts give the most flavor without having to worry about the meat getting too dry or tough. Unlike smoking a pork butt or beef brisket, chicken cooks quickly without a lot of prep or fancy rubs, mops, or injections (though you could certainly inject a bit more flavor if you desired, and some folk like brining theirs first).

Pulled Chicken BBQ Sandwich

Smoked To Perfection

I loaded up my Weber Smokey Mountain (WSM) cooker with split breasts. I removed the skin from the chicken first because it isn’t going to crisp when you are smoking low-and-slow. All the skin does is prevent the smoke and salt and pepper from penetrating the meat. So, off with it! I prefer the WSM cooker. I believe that cooking chicken over a water pan results in a more tender, juicer meat. That way I don’t need to worry about removing the skin and having dry chicken.

After the chicken is cooked and cooled I pull or shred it and use it in tons of recipes, like simple pulled chicken BBQ sandwiches. Just add a bit of your favorite BBQ sauce and slap it on a bun, add some chips on the side, and you’re ready to eat!

  • Generously season the chicken on all sides with salt and pepper. Don’t be shy.

Buffalo Chicken on the Char-Broil Big Easy

Note: This recipe was developed using the Char-Broil Big Easy Oil-Less Fryer. If you are cooking using the Char-Broil Smoker-Roaster Grill you should cook with the lid open and the temperature set to High. You might also need to adjust the cooking time.

This week is Buffalo Chicken Week in our house. I often do ‘theme weeks’ for dinner. Like the other week when I smoked a few turkey breasts. That week we had a few different turkey sandwiches and smoked turkey Cobb salads. So this week we’ll be having something with Buffalo chicken on the Char-Broil Big Easy in it every night. Now, don’t think we’ll be bored of Buffalo chicken by the end of the week either. I’ll make sure each dish is different, from Buffalo chicken flat-bread pizzas to grilled cheese sandwiches loaded with Buffalo chicken.

The Big Easy Does Chicken Right

Well, since it is Buffalo Chicken Week, I need Buffalo chicken. And plenty of it. And when I think chicken, I think of my Char-Broil Big Easy oil-less fryer. It really doesn’t get any easier for cooking poultry. For this Buffalo chicken all I had to do was marinate the chicken and drop it into the cooker. The meat was incredibly moist and tender (the Big Easy is great for that) with a nice Buffalo chicken flavor. So I shredded the meat and mixed in a few more splashes of Frank’s Red Hot Wing Sauce and I was ready for a week of great Buffalo chicken recipes.

The Big Easy is a great way to make a lot of chicken at once. I cooked 4 very large bone-in chicken breasts, and could’ve easily fit another 4 (if I’d bought more) onto the cooker.

  • The night before cooking, place chicken breasts in a resealable container or baggie.
  • Add plenty of wing sauce. Make sure to coat the chicken completely.
  • Refrigerate at least 12 hours.
  • Fire up your Big Easy. Place the chicken into the basket (you’ll need a bunk bed basket to cook more at once) and lower into the Big Easy.
  • Cook until chicken reaches 165 F. If using a bunk bed the chicken on top may cook faster than the ones at the bottom. Cook time is typically 10 minutes per pound.
  • Let rest 30 minutes before chopping or shredding. You might want to add a few more shakes of wing sauce into the cut chicken for extra flavor.

Notes

This chicken is great on sandwich, salads, you name it!

Crispy Wings on the Char-Broil Big Easy

I have cooked a LOT of chicken wings on my Char-Broil Big Easy. It’s my favorite way to cook wings, other than deep frying. The Big Easy cooks wings so easily and quickly. I usually finish off the wings over a hot grill to get a bit of a crunch on the skin. Well, no more. Crispy wings on the Char-Broil Big Easy are fantastic!

Now I can get delicious, tender, moist, crunchy wings on the Big Easy without grilling them afterwards. These crispy wings are fantastic. I won’t do wings any other way again, and that includes deep frying. This is it, the way to do wings.

Dry Skin Means Crispy Skin

The key to getting the wings crispy is to dry out the skin so that takes on a good crunch under the high heat of the Big Easy. If you don’t have a Big Easy, you should get one. Until then, you can also make these crispy wings in the oven.

I used my Wingin’ator 3000 basket when I cooked up these wings so that I can cook more at once than I could with the basket that comes with the Big Easy. You can also pick up a bunk bed basket (see the link below) that doubles the amount of room you’ll have for cooking wings. You don’t want to crowd the wings into the cooker or they won’t cook evenly.

Crispy Wings on the Char-Broil Big Easy

Ingredients

  • 4 pounds chicken wings separated
  • 2 tablespoons baking powder
  • ¾ teaspoon kosher salt
  • Your favorite wing sauce and dipping sauce

Instructions

  • Rinse the wings and pat them very dry with paper towels.
  • Place on a sheet pan or plate and cover with more paper towels. Refrigerate for 2 hours to further dry out the skin.
  • Preheat oven to 250 F.
  • Transfer wings to a resealable baggie or container. Add in the baking powder and salt. Seal, and shake or toss to coat well.
  • Spray a baking rack with the non-stick spray and put it over a baking sheet that is lined with foil.
  • Place wings onto rack but do not crowd them.
  • Bake for 30 minutes. While baking, fire up your Big Easy.

Finishing in the Big Easy

  • Transfer wings to the Big Easy and cook another 10-20 minutes or until done.

Finishing in the oven (optional)

  • Increase the oven temperature to 425 F and continue baking for another 20 or so minutes or until done.

Serving

  • Toss wings in your favorite sauce and serve with your favorite dipping sauce.

Notes

You can only fit so many wings on a Big Easy, so I’ve included instructions on how to also finish the wings in the oven.

I’m a big fan of Famous Dave’s. I didn’t think I would be. I love my local BBQ joints, so I was skeptical of a big national chain, no matter how much I think Dave is a nice guy. Well, I’m not skeptical any more. Everything I’ve ever ordered there has been fantastic and the service has always been friendly. I highly recommend you stop in and get you some ribs (or pulled pork, or brisket, or country-roasted chicken) and don’t pass up on the wonderful sides. They have some of the best sides I’ve ever had at a BBQ joint. And, since I’m also a big fan of my Char-Broil Big Easy, I could not pass up making a copycat version of Famous Dave’s country-roasted chicken.

For the overnight marinade

For the chicken

  • 4 chicken breasts large bone-in

Instructions

For the overnight marinade

  • Place the chicken in a large resealable bag or container.
  • Add the Italian dressing and toss to coat.
  • Refrigerate overnight, turning occasionally.

For the pre-cook marinade

  • Three hours before you are ready to cook, add the lemon juice to the marinating chicken and toss to coat.

For the spice rub

  • Combine the ingredients.

For the chicken

  • Fire up your Big Easy. You’ll need a Bunk Bed basket (see below) to keep from overcrowding the chicken.
  • Shake any excess marinade from the chicken.
  • Dust with the rub. Use a little or a lot.
  • Place chicken in the Big Easy basket and lower into the cooker.
  • Cook until done and golden brown, about 10 minutes per pound.
  • Remove and let rest 10 minutes before serving.

Notes

You can skip the overnight marinade and just combine the Italian dressing and lemon and marinate for 3 hours just before cooking.

Chicken Chorizo Patty Melt Sliders

If you want to see something disappear off the plate in mere seconds, make these chicken chorizo patty melt sliders. They are tender, juicy, spicy. And even though you could also make these into full-sized burger versions, they’re great as sliders. Make a slider party platter, half chicken sliders and half beef! The Mexican chorizo does add just a bit of a kick, a bit of spiciness. But I think you’ll be ok serving them to even the most spice-sensitive guests. If you’re worried about the the heat, substitute ground Italian sausage instead.

You could make the patties ahead of time and assemble these chicken chorizo patty melt sliders just in time to serve for a party. I topped these little yummy bites with our slow-cooker caramelized onions. I can make a big batch of caramelized onions in no time with almost no effort. Just keep them warm until time to assemble the sliders. You can serve them cold, and they’re still good, but they’re definitely better warmer.

I use this nifty little ole burger press to make these burgers. It’s the best thing ever for stuffing burgers with just about anything you can think of!

  • In a large bowl, combine the chicken, chorizo, garlic, oregano and salt. Form into 2-3 ounce patties.
  • Heat a tablespoon of oil in a large skillet over medium heat.

Slow Cooker Buffalo Chicken Sliders

Oh my goodness. I made a batch of these slow cooker Buffalo chicken sliders and watched them disappear lickity-split. All of my favorite flavors in a single bite: chickeny Buffalo wing sauce, Ranch dressing, and cheese. This might just be the most perfect recipe for a crowd. It can’t get any easier, just toss all of the ingredients for the filling into the slow cooker and a few hours later, you’ve got crazy good sliders.

Feed A Crowd. Quickly.

I think you could make a little ‘slider bar’ for these slow cooker Buffalo chicken sliders. Let folks choose from blue cheese, gorgonzola, jalapenos, chopped celery, carrots, cilantro… you name it! Oh, and extra Ranch dressing too for those that are Ranch-aholics like myself. Half the time I think I make Buffalo-flavored dishes just so I have an excuse to have more Ranch dressing in my life.

Go Mild. Or Hot.

You can use a mild Buffalo sauce if you’re worried about too much heat. You can always serve a hotter sauce on the side for dipping the sandwiches. Just get a good grip on the slider buns first. You don’t want the yummy chicken sliding off into the sauce.

  • Pour wing sauce and dressing mix into a large bowl and whisk to combine.
  • Pour into a slow cooker set on low.
  • Add the chicken breasts and cook for about 6 hours until fall-apart tender. If the chicken breasts are too large to be submerged in the sauce, flip them over halfway thru the cooking time.
  • Remove breasts to a cutting board and shred or chop as desired.
  • Return to the slow cooker and cook another 30 minutes.
  • Brown buns if desired.
  • Top buns with meat and cheese and place under broiler for just enough time to lightly melt the cheese.
  • Drizzle with a little salad dressing and serve.

Notes

I also added a teaspoon or so of the sauce from the slow cooker to the sandwiches.

Chipotle Popcorn Chicken Bites

I love fried chicken, especially if it has been marinated in buttermilk. But, silly me, I’d never thought of adding chipotles in adobo to the marinade. These chipotle popcorn chicken bites are soooo good. They’re tender and tasty thanks to the buttermilk and they have a really nice kick to them thanks to the smoked jalapenos. Not too hot, but they definitely pack a little spiciness.

I served these little yummy chipotle popcorn chicken bites with your standard Ranch dressing for dipping. They’d also be great dunked my copycat Chick-fil-A sauce.

If I’m cooking for a crowd, I’ll break out my big deep fryer. But, if it’s just the two of us, I’ll fire up my Fry Daddy fryer. It’s the perfect size for both of us. It fries everything perfectly. And as an added bonus, it doesn’t use a lot of oil, which saves me money.

I get out my big deep fryer when it’s time to fry a large batch of food. It comes to temperature quickly and it maintains that temperature perfectly. It has a built-in oil filter and storage unit so I can re-use the oil several times.

Chipotle Popcorn Chicken Bites

I love fried chicken, specially if it has been marinated in buttermilk. But, silly me, I’d never thought of adding chipotles in adobo to the marinade.

  • Place chicken into a bowl.
  • Add buttermilk and chipotles and mix well. Cover and refrigerate overnight.
  • Heat oil in a Dutch oven or deep fryer to 350 F.
  • Working in batches, shake off excess marinade and fry chicken 2-3 minutes until done and golden brown. Remove to a paper towel-lined plate and season with salt and pepper.
  • Serve with Ranch dressing for dipping.

Notes

You can substitute milk for the buttermilk in a pinch.

Chicken Nacho Dip

Truthfully, I was just looking for a way to use up some grilled chicken breast I found in the freezer. I wasn’t thinking I’d found anything too terribly exciting when I ran across this recipe for a chicken nacho dip. Well, I wasn’t just sort of wrong, I was very wrong. This chicken nacho dip is fantastic. Super cheesy, spicy, and creamy. This is a great dip, best served with tortilla chips.

Rotisserie Chicken Is Great Too

If you don’t have grilled (or smoked) chicken on hand, rotisserie chicken will work just fine too. My Weber grills and smoker make for great chicken. And I often have leftover chicken. I just save it and use it in great dishes like this chicken nacho dip.

Oh and don’t forget to warm the tortilla chips. They take just a few minutes in a 350 F degree oven. Warm chips and warm dip were meant for each other.

  • Place everything except for the beans into a slow cooker and cook on high for 1 1/2 hours, stirring occasionally. If the mixture becomes too thick thin with a little milk.
  • Add the beans and cook another 30 minutes.
  • Stir before serving with warmed tortilla chips.

Use Mexican Velveeta for a nice twist.

Chicken and Gravy Sandwiches

If you follow this blog you’ll know that my favorite thing to make and eat is a messy sandwich. Or po boy. The messier, the better. The kind of sandwiches that you can’t put down once you pick them up. The kind where the sauces run down the front of your arms. Like these chicken and gravy sandwiches. Tender grilled thin chicken breasts. Seems normal enough. Then you top them with a gravy. Chances are you can make the gravy with items you already have in your pantry. This isn’t complicated, but it’s good.

I served these chicken and gravy sandwiches with additional gravy on the side, like a French dip…. more like a French drip though! They are incredibly messy sandwiches. I believe messier foods taste better. This here is proof of that.

Chicken and Gravy Sandwiches

If you follow this blog you’ll know that my favorite thing to make and eat is a messy sandwich or po boy. The messier, the better. Like this one.

  • 1 loaf French bread warmed

Instructions

For the chicken

  • Whisk together the lemon juice and zest, honey, parsley, garlic, and oil. Pour into a large resealable baggie.
  • Season the chicken with salt and pepper and add to the bag. Seal and toss to coat.
  • Place in a large bowl or on a sheet pan in the fridge for 15 minutes.
  • If you are grilling the sandwiches, heat your grill or otherwise heat a large skillet over medium-high heat.
  • Working in batches if needed, shake off excess marinade and cook or grill the chicken 5-6 minutes per side, then flip until done. Remove to a plate and let rest while you make the gravy.

For the gravy

  • Melt butter in a sauce pot over medium heat.
  • Whisk in the flour and cook for 1 minute, stirring constantly.
  • Slowly whisk in the chicken stock. Bring to a boil then reduce to a simmer. Cook until thickened, 5-7 minutes, stirring often.
  • Season with salt and pepper.
  • Remove from heat and stir in the mustard.

For the sandwich

  • Slice bread lengthwise.
  • Using tongs, grab the chicken and then dip it into the gravy. Place onto bread.
  • Serve with additional gravy on the side for dipping.

Have plenty of napkins on hand!
