This New Orleans French bread pizza is flat out delicious. Everything on it tastes soooo good. There isn’t a pizza like you might be used to. Instead, there are artichokes, salty olives, roasted red peppers and tender chicken strips. And of course, cheese.

Very Different And Very Good

You can make this pizza on a traditional crust. Or you can do like we did and use French bread. If you want a bit of heat, mix a little red pepper flake into the chicken mixture before spreading it into the bread. A bit different but fantastically different, we really enjoyed this New Orleans French bread pizza.

I highly recommend that you shred or grate your own cheese at home. Don’t buy the pre-shredded or pre-grated stuff. It has stuff added to it to keep it from sticking together. That ‘stuff’ affects how the cheese melts. Shred it yourself and use the good stuff.

Instructions

  • Preheat oven to 450 F.
  • Place bread in the oven for a few minutes until it gets just a bit crispy. Remove.
  • Heat oil in a large skillet.
  • Add the chicken and garlic cook for 3-5 minutes or until chicken is no longer pink. Do not overcook as the chicken will cook more in the oven.
  • Remove from heat.
  • Stir in the artichokes, peppers, olives, oregano and pepper and 1/2 cup of the cheese.
  • Spoon mixture onto the bread halves and sprinkle with remaining cheese.
  • Place in oven and bake 8-10 minutes or until bread is nice and crispy and the cheese is melted.
  • Place under the broiler for 1 minute to lightly brown the cheese if desired.

Notes

Also great with Swiss or mozzarella cheese.

Pizza Skillet Bake

This pizza skillet bake is a great dish for a quick dinner, best made in a cast iron skillet. It tastes just like a pizza, and just like a pizza, it’s open to changes. Add some chopped pepperoni if you like. Or some fresh mozzarella. Yummy! Since the ‘crust’ is on top you don’t have to worry about your toppings keeping it from baking. It’s as easy as can be!

  • Preheat oven to 400 F.
  • Crumble sausage into a large (10″) cast iron skillet and cook until just about done.
  • Add the onion, pepper and mushrooms and cook until they start to soften.
  • Remove from heat.
  • Stir in the flour.
  • Stir in the tomatoes (do not drain).
  • Cut biscuits into fourths and arrange on top of skillet.
  • Sprinkle tops of biscuits with cheese.
  • Bake 12-15 minutes or until the biscuits are crispy.

Notes

You can put the skillet under the broiler for a minute to further brown the biscuits and cheese.

Copycat Pizza Hut Pan Pizza

For years (years ago), a co-worker and I would go grab lunch at a Pizza Hut near our office almost every day. Back then, Pizza Hut always had a lunch special that consisted of a personal pan pizza and a trip to the salad bar. It was always the highlight of our day. The crust on the pizzas was fantastic. So, I was eager to make this copycat Pizza Hut Pan pizza. That’s one of the special things about food. It can bring back such fond memories.

This recipe for a copycat Pizza Hut pan pizza is absolutely spot-on the same taste I remember of the Pizza Hut pan pizzas. A little oily, a little crunchy, and oh-so-yummy. We will definitely be making these again (and again). I loved the original from the restaurant. And I really, really love this homemade version.

For the dough

For the pizza

  • 1 cup Pizza sauce
  • ½ cup Italian sausage crumbled, cooked, and drained
  • ½ cup Mozzarella cheese shredded
  • ¼ cup Fresh mushrooms sliced, sauteed in Italian seasoning

Instructions

  • Combine the yeast, sugar, salt, and dry milk in a large bowl.
  • Slowly stir in the warm water.
  • Let sit for two minutes.
  • Stir in the 2 tablespoons of oil.
  • Add the flour and stir until a dough starts to form. Continue stirring until the flour is absorbed.
  • Remove the dough to a very lightly floured surface and knead for 10 minutes. The dough will form a wonderful consistency and smooth texture.
  • Add 2 ounces of oil to each of 3 9″ cake pans. Make sure the oil is spread out evenly in the pan.
  • Divide the dough into 3 equally-sized balls. Roll each ball out to a 9″ circle and place in the pans. Spray edges of dough with the non-stick spray.
  • Cover the pans with a dish towel or a plate and place in a warm area (around 78° F) and let the dough rise until doubled, 1 to 1 1/2 hours.
  • Preheat oven to 475° F.
  • Divide sauce between pans. Add sausage, cheese, and mushrooms, or whatever toppings you desire.
  • Bake pizzas for about 15 minutes or until the crust is golden brown and hardened and the cheese is melted.

Notes

You’ll need 3 9″ cake pans for this recipe. You can also make the pizzas in 10″ pans, but of course the crush won’t be as deep. Or, you can make a single pizza in a large deep pizza pan.

Skillet Cornbread Pizza

This is my take on a great recipe for skillet cornbread pizza from Martha White. Sure, it’s not really a pizza, but it has the flavors of one. It’s a really fun twist on the ‘usual’ pizza. You can add pretty much the same ingredients you’d find on any pizza. Since there’s no sauce on top, just serve the slices with a little (warmed) pizza sauce on the side for dipping.

A pizza crust can be a blank canvas for whatever dish you want to “paint” onto it. This Mexican breakfast pizza is a great example. We took a store-bought thin crush crust and just topped it with some of our favorite breakfast ingredients. It made for the perfect, very quick-to-make breakfast-for-dinner meal.

Grab The Hot Sauce

Serve this Mexican breakfast pizza with a big ole bottle of Cholula hot sauce on the table. Nothing goes better with breakfast than a few good shakes of hot sauce. Cholula is one of my favorites. It’s not too spicy and it has a fantastic pepper flavor.

Ingredients

  • ½ pound Mexican chorizo
  • 4 eggs
  • 2 tablespoons milk
  • kosher salt
  • ground black pepper
  • 1 pizza crust pre-made thin
  • 1 cup hash browns frozen shredded, thawed
  • ½ cup Mexican cheese more or less shredded. I used Chihuahua
  • ¼ cup red bell pepper chopped
  • ¼ cup green bell pepper chopped

Instructions

  • Preheat oven as directed on the pizza crush package.
  • Brown the chorizo in a skillet.
  • Drain well.
  • Lightly beat the egg with the milk in a small bowl.
  • Season with salt and pepper.
  • Add to the skillet and lightly scramble until the eggs just start to set.
  • Remove from heat.
  • Layer pizza crust with the hash browns.
  • Add the chorizo and cheese, followed by the eggs and peppers.
  • Bake as directed. Slice and serve.

Notes

Add in a little minced jalapeno to the peppers for a nice little kick.

Grilled Chicken Flatbread Pizza

We were both very pleasantly surprised as to how well this simple grilled chicken flatbread pizza came out. There’s a great crunch from the flatbread, and some kick (we used a hot Italian flatbread). The savory garlic cooking creme was nice and garlicky, making for a nice combination with the grilled chicken. We’ll definitely use the cooking creme as a pizza sauce again. This is a wonderful change from our usual red-sauce pizza. The combination of the toppings and sauce were perfect. And we both really love using flatbread as a canvas for a pizza. Sure, traditional dough is great. Or we could’ve bought a pre-made pizza crust. But that flatbread crunch was something we were both craving. Plus it holds up really well to a lot of toppings and we do love our toppings!

Grilled Chicken Flatbread Pizza

A Nice Change From Red Sauce Pizza

If you can’t find the cooking creme to make a grilled chicken flatbread pizza, just use a nice garlicky pizza sauce. You can substitute rotisserie chicken instead of cooking the breasts. Just chop and toss with a bit of the dressing first.

  • Place chicken into a resealable baggie. Add the dressing. Marinate in the refrigerator for 1 hour.
  • Fire up a grill for direct and indirect cooking.
  • Place the bell pepper over direct heat, turning occasionally, until charred and softened.
  • Meanwhile, sear the chicken over direct heat then move to indirect heat and cook until the internal temperature reaches 165 F.
  • Let the pepper and chicken cool.
  • Remove most of the char from the pepper. Remove the seeds and cut into thin strips.
  • Cut the chicken into thin strips.
  • Bake the flatbreads per package instructions. Since you already have a grill going, just toss them onto indirect heat for a few minutes until they start to crisp.
  • Spread the cooking creme over the flatbreads and top with the chicken, pepper, and artichokes.
  • Sprinkle pizzas with the cheeses cook another 4-5 minutes or until the cheese has melted.
  • Remove from oven and sprinkle with the basil

Notes

You can use pre-cooked chicken and jarred roasted peppers if you wish. In that case, cook the flatbreads in the oven per package instructions.
If you can’t find the cooking creme, mix roasted garlic with softened cream cheese instead.

Pepperoni Pizza Mac and Cheese

I think the title pretty much says it all. Pepperoni Pizza Mac and Cheese. It’s all of your favorite things in one dish. Insanely gooey good stuff. Even without the pepperoni, this is crazy good macaroni and cheese. I didn’t use to think tomato and mac were a bad idea. A bad combination. But the tomato adds a nice flavor, a little juicy goodness, that’s not expected but needed!

  • Preheat oven to 350 F.
  • Spray a 9″ x 13″ baking dish with non-stick spray.
  • Cook pasta per package instructions. Drain well.
  • Heat oil in a large saucepan over medium heat.
  • Whisk in the flour, and continue whisking for 3 minutes.
  • Reduce heat to low.
  • While whisking, add in the milk. The mixture will thicken.
  • Add the oregano, basil and parsley and stir.
  • Cook for 5 minutes, stirring constantly.
  • Remove pan from heat and stir in the cottage cheese, Parmesan, and mozzarella until melted.
  • Stir in the pepperoni and tomato and season with salt and pepper, to taste.
  • Fold in the pasta.
  • Pour mixture into the baking dish and spread out evenly with a spatula.
  • Sprinkle top with the breadcrumbs.
  • Bake 20 minutes or until bubbling hot and browned on top.

Notes

You can also make this using elbow pasta.

Creole Pizza

This started out as an attempt to make Cajunlicious’ Cajun Calzones, but I failed at getting the calzones to seal correctly, so I went with Plan B – Creole pizza, and I have to say, these were darned tasty good! Tremendously flavorful and packing a nice spicy punch, each bite is fantastic. And different.

Andouille For The Pizza Win

Andouille sausage on a pizza is fantastic. It’s a nice change from your usual pepperoni or Italian sausage. The Creole meatball sauce is quite tasty, like a regular pizza sauce but with the addition of celery, bell pepper and a little Creole seasoning.

  • ½ teaspoon Creole seasoning

  • 1 Andouille sausage lightly browned, sliced thin

  • Preheat oven per dough instructions. Roll out dough on a lightly floured surface.
  • Stir the Creole seasoning and garlic powder into the butter and brush onto the dough.
  • Add the sauce and top with remaining ingredients.
  • Cook as the dough instructions say.

If you can’t find andouille you can substitute smoked sausage.
