Don’t Over-Toast The Bread

The bread is only grilled long enough to get a little color, char and crisp. You spread them with the creamy cheese mixture that contains one of my favorites, green onion. Cut these into little strips and serve this herbed Ricotta bruschetta up as appetizers at your next outdoor party. If you want to prepare ahead of time, you can make the spread in advance. Then you just need to grill the bread.

  • Rub both sides of each piece of bread with the garlic (using the cut end as a garlic ‘pencil’ to get that great garlicky flavor all over the bread).
  • Slather bread with the cheese mixture and serve.

Apple Maple Turkey Burger

I have to admit, I was pretty skeptical about making this apple maple turkey burger. Sure, I’ve had a few turkey burgers in my time, but I can’t remember any of them. None of them really wowed me, to be honest. On the other hand, I can remember lots of the beef burgers I’ve had. A lot of them wowed me. I was pretty sure this wasn’t going to be a very memorable burger either. And I was wrong. Very wrong. I was wowed!

The apple sauce and maple syrup really make this apple maple turkey burger fantastic. It is moist and tender and oh so flavorful. It is topped with apple wood-smoked  burger and a great sauce that I am going to use on regular beef burgers too.  So much so that I made these twice in two days.

I like to use a burger press when I make burgers. It, in combination with some patty papers, enables me to crank out a whole bunch of equally-sized burger patties in no time at all with little cleanup.

Instructions

  • Combine the sauce ingredients and set aside.
  • Take 4 of the pieces of bacon and place into a chopper or blender and process until all large pieces are ground.
  • Combine the ground bacon, turkey, applesauce, poultry seasoning, syrup, and salt and pepper in a large bowl. Use your hands to get it mixed well. Form into 4 equally sized patties.
  • Fire up your grill for direct and indirect cooking.
  • Brush one side of the patties with olive oil and place over direct heat. Brush tops with oil.
  • Grill until lightly charred. Flip and grill another 3-4 minutes.
  • Remove to indirect heat and continue cooking until internal temperature reaches 170 F.
  • Lightly toast the buns.
  • Serve patties on toasted buns slathered with the sauce, topped with your favorite toppings and the remaining bacon slices.

Notes

These burgers can also be made using ground chicken.

Creamy Mushroom Burger

Thick, creamy mushroom burger goodness awaits you! Oh, and there’s the added bonus of a little crunch from some French fried onions too! Now, you could up and ‘cheat’ and just warm up some canned cream of mushroom soup and make these burgers, but believe me, making the creamy mushroom sauce is very easy, and it tastes soooo much better than anything you’d ever get out of a can.

This creamy mushroom burger almost like having a mushroom stroganoff on a bun. It’s messy. Like a good burger should be. It’s gonna drip every time you take a bit. That’s a good thing. You’re gonna get sauce all over your mouth. You’re supposed to.

I like to save a little piece of the bun for the very end. It makes for the perfect tool for sopping up all those drippings that made it onto the plate.

For the mushroom topping

For the burgers

  • 1 pound ground beef
  • 4 slices cheddar smoked is best!
  • 4 hamburger buns
  • 1 tablespoon Dijon mustard
  • 1 tablespoon mayonnaise
  • 1 cup fried onions

Instructions

For the mushroom topping

  • Heat 2 tablespoons of oil in a saute pan.
  • Add the shallots, garlic and mushrooms until lightly golden, 3-4 minutes.
  • Add remaining oil and a splash of balsamic vinegar.
  • Whisk in the beef broth and onion powder.
  • Reduce heat to a simmer and continue simmering until the sauce thickens, about 5 minutes.
  • Remove pan from heat and stir in the cream cheese,
  • Season with salt and pepper.

For the burgers

  • Form beef into patties. Season with salt and pepper and grill until done.
  • Top patties with cheese.
  • Lightly toast the buns.
  • Stir together the mustard and mayonnaise and slather it onto the bun halves.
  • Assemble burgers by topping buns with patties and a large spoonful of the mushroom topping.
  • Sprinkle with fried onions and serve.

Notes

The sauce is also great on grilled chicken.

Buffalo Wing Dipping Sauce

Blue cheese, although great, can be a little strong to us. So, we were a little skeptical about all the blue cheesiness that was in this recipe for a Buffalo wing dipping sauce. Well, the sauce is fantastic. No more Ranch dipping sauce for us. This is the only sauce we’ll ever need or make.

This sauce has a great bite from the blue cheese with just a little heat. Nice and cool for hot wings. Don’t skimp and use a cheap blue cheese dressing. Get the real stuff. And if you’re worried it might be too blue cheesy, substitute Gorgonzola cheese.

Patty Melt

I recently bought a Weber Cast Iron Griddle for my gas grill. I absolutely love cooking with it. It is just like cooking on a flat top grill. It gets amazingly hot, which is exactly what I need to cook a patty melt. I like a little crust on my patty melt burgers, but with tender juicy insides. And the bread has to be grilled just until it has a little crunch and can stand up to the patty and onions.

Make Them Outside. Or Inside.

You can also make these on your stovetop. You’ll want to use a large skillet, preferably cast iron. Or better, use a Griddler from Cuisinart. I really like cooking them outside. As much as I do love burgers cooked over charcoal, I’m a huge fan of cooking them on a griddle too. They always come out fantastic. And the griddle makes it so easy to make a great patty melt like this one.

  • Melt 1 tablespoon of butter in a large skillet (or on a griddle) over medium heat.
  • Add onions and cook until the onions are soft and golden, stirring often, 20-30 minutes. Remove onions.
  • Place beef into a large bowl along with salt and pepper, to taste, and the Worcestershire sauce. Mix well.
  • Form meat into 4 4 ounce patties.
  • Melt 2 more tablespoons of butter in the skillet. Add the beef patties and cook on both sides until done. Remove meat and any scraps.
  • Melt 1 more tablespoon of butter in the skillet. Working in batches, brown the bread on one side, while melting cheese on the topside of each slice. Add more butter as needed.
  • Assemble patty melts by placing burgers on bread and top with onions and remaining bread slice.

Notes

Thicker bread holds up better to these messy delicious sandwiches.

Southern Green Beans

There’s no way to go wrong with these southern green beans. Sure, they’re decadent. They’re supposed to be. They’re sweet, smoky, and tender (and with a little kick if you opt to add a bit of red pepper flake). They aren’t meant to be super-duper healthy. You start out with a lot and you end up with very little. Or none.

Bean Heaven In A Bowl

These are what baby green beans want to be when they grow up. They want to be surrounded by tasty, smoky bacon. They want to be covered in a delicious broth. And they don’t mind a pinch or two of hot pepper to spice things up a bit. Packed with flavor, I love these southern green beans.

I like to use my good ole trusty Dutch oven to make these beans and pretty much darned near anything like it on my stovetop. It’s nice and big and sturdy. That extra weight helps it maintain and distribute heat perfectly. As an added bonus, it’s actually pretty easy to clean up too!

  • Add the bacon and cook until done (but not crisped).
  • Remove to a paper towel-lined plate.
  • Remove all but two tablespoons of the bacon drippings.
  • Add the beans and stir to coat.
  • Cook for about a minute.
  • Add the bacon back to the pot, along with the broth, garlic powder, salt and pepper, and red pepper (if desired).
  • Bring to a boil, then reduce heat to a simmer and continue simmering until the beans are tender, about 30 minutes.
  • Add butter and stir until melted.

Notes

Serve immediately.

Homemade Hamburger Buns

I was really happy with how these homemade hamburger buns came out. They weren’t as thick as store-bought buns, but they were very soft and tasty. And they made the house smell great while they were baking. I’m not normally very successful at baking. I’m missing whatever gene you need to have to consistently turn out great breads. But I was very pleased with these buns.

Homemade Hamburger Buns

You can use this same recipe for making homemade hamburger buns to make excellent slider buns. You might have to cut the bake time just a little as I suspect the smaller buns would bake a bit quicker. And hey, change things up a bit! You can make your buns round or square. Or in my case, somewhere in between. I was ecstatic that I was finally able to make my own buns. And not only that, I made fantastic buns!

  • Place the milk and butter in a small pan.
  • Heat until butter is melted.
  • Remove from heat and let cool to 110° F.
  • Stir in the yeast and let stand for 10 minutes.
  • Combine the flour, sugar and salt in a mixer bowl fitted with a dough hook.
  • With the mixer running on low, pour in the milk mixture.
  • Knead until the dough forms a ball. Add more flour if the mixture is too moist.
  • Increase mixer speed to medium-low and let the dough knead for 5 minutes or until it is smooth and elastic.
  • Cover with plastic wrap and let rise until doubled in a warm place.
  • Lightly flour a work surface.
  • Roll out the dough until it is a 10" x 7 1/2 " rectangle.
  • Cut into 2 1/2" squares if making full-sized buns, or 1 1/2" squares for sliders.
  • Transfer dough squares (you can actually form them into rounds if you want) to a baking sheet lined with parchment paper.
  • Cover with plastic wrap and let rise in a warm place for another 30 minutes.
  • Preheat oven to 400 F.
  • Whisk egg together with 1 teaspoon warm water and brush on top of the dough squares.
  • Sprinkle with sesame seeds or poppy seeds, if desired.
  • Bake until buns are golden brown, about 15 minutes.
  • Let cool completely.

Notes

Cut in half just before serving.

We slathered some of this great sweet-n-spicy BBQ sauce onto some grilled chicken breasts last night for dinner. It made for some great eats, that’s for sure! I made sure to make extra, too. The leftover chicken (drenched in more sauce) will go onto pizzas and quesadillas. This sauce is also excellent as a dipping sauce for grilled smoked sausage!

This recipe makes about 2 quarts, enough for 16 bone-in chicken breasts… or thereabouts!

Firecracker Chicken

Hot, but not overpowering. Cholula hot sauce is often referred to as the Flavorful Fire, and this firecracker chicken recipe really proves it. It is the only hot sauce in our house besides a bottle of habanero sauce (over 600,000 Scoville units). The habanero sauce is used sparingly and is there to bring heat and only heat. Cholula, on the other hand, brings a little bite and fantastic spicy flavors.

For the chicken

For the sauce (I ended up doubling the amounts shown. The sauce is outstanding. More is better.)

Instructions

  • Preheat oven to 325 F.
  • Spray a 9″ x 13″ baking dish with non-stick spray.
  • Put cornstarch, salt and pepper into a large resealable baggie. Seal and shake to combine.
  • Add chicken to the baggie and seal and shake to coat well.
  • Put beaten eggs into a small pie plate or bowl.
  • Heat some of the oil in a large skillet over high heat.
  • Working in batches, shake some of the excess corn starch off the chicken then place into the eggs. Rotate to coat, shake off the excess, and place into the hot skillet.
  • Cook chicken 1-2 minutes per side until golden. You are not trying to cook the chicken completely, just get a nice color and bite.
  • Remove chicken to the baking dish, spreading it out in one layer.
  • Continue until all of the chicken is browned, adding more oil if necessary.
  • Whisk together all of the sauce ingredients and pour over the chicken.
  • Bake for 45 minutes to an hour, stirring and flipping the chicken every 15 minutes, until the chicken is done.
  • Serve over warmed rice garnished with green onions.

Notes

You can use chicken breasts instead of chicken tenderloins.

Pizza and Pasta Sauce

This is my go-to red sauce. I use it on everything from pizza, to pasta, to meatballs. I always make a double batch of my homemade pizza and pasta sauce and freeze some for later. It is packed with tomato flavor and has the perfect herb flavor. There’s a healthy dose of garlic and shallot to add that richness you want. I am a big fan of this sauce.

Depending on what you use this sauce for, you might want to puree it slightly in a blender. Or use a blender stick. We prefer our homemade pizza and pasta sauce a little thicker and chunky, even if we use it on pizzas. It’s not tomato juice. I want to not only taste the tomato I want to see it and bite into it!

  • ¼ cup olive oil
  • 3-5 cloves garlic chopped
  • 2-3 shallots chopped
  • 3 tablespoon fresh thyme chopped (or 1 tablespoon dried)
  • 3 tablespoon fresh marjoram chopped (or 1 tablespoon dried)
  • 1 cup dry white wine
  • 1 can diced tomatoes
  • 1 can chopped tomatoes
  • 1 small can tomato paste
  • 1 tablespoon sugar
  • 1 teaspoon dried red pepper flakes
  • 2 tablespoons fresh basil chopped (or 2 teaspoons dried)

Instructions

  • Heat oil over high heat.
  • Add garlic, shallots, thyme and marjoram and saute for 3 minutes.
  • Add wine and reduce by 1/2, about 3 minutes.
  • Add the two cans of tomatoes.
  • Simmer, stirring often, for 7 minutes.
  • Add 1/2 -3/4ths of the can of tomato paste, sugar, and hot pepper flakes.
  • Simmer an additional 7 minutes, stirring often.
  • Add salt and pepper to taste and add the basil, cook another 1 minute.

Notes

Refrigerate sauce until ready to use. It also freezes well.
