Bacon-Wrapped Hot Dogs with Fire-Eater Dog Sauce

How do you make a great hot dog better? Yes, you wrap it in bacon. Crispy, yummy bacon. But you’re not done yet. Then you add a good helping of a thick, sweet-heat sauce that makes mustard and ketchup boring. These bacon-wrapped hot dogs with Fire-Eater dog sauce are a great way to change up your everyday dogs. You can add more of your favorite toppings if you like, but don’t bury that great bacon flavor.

Make Extra Sauce. You’ll Need It.

The Fire-Eater dog sauce is also perfect on hamburgers and fries, so make an extra big batch and keep it on hand in the fridge. To make a great smoky version use a hickory BBQ sauce. For an even spicier version use a hot BBQ sauce and add a few splashes of your favorite hot sauce. Bacon-wrapped hot dogs with Fire-Eater dog sauce are good no matter what.

Remember that if you have to refrigerate any leftover sauce, let it sit out on the counter for at least 30 minutes before using. Or warm it up a bit on the stovetop. You don’t want to ‘shock’ hot, just-cooked wings with a cold sauce.

For the hot dogs

  • 6 hot dogs
  • 6 slices bacon
  • 6 hot dog buns

For the Fire-Eater dog sauce

Instructions

For the hot dogs

  • Wrap the hot dogs in the bacon.
  • Fire up your grill for indirect cooking.
  • Place bacon-wrapped dogs on the grill over indirect heat.
  • Cook for 20 minutes, rotating often, until the bacon is cooked and starting to crisp.
  • Remove and let cool slightly to let the bacon finish crisping.
  • Serve on buns and drizzle with Fire-Eater dog sauce.

For the Fire-Eater dog sauce

  • Combine all ingredients in a medium sauce pan.
  • Bring to a simmer.
  • Remove from heat and let cool until thickened.

Notes

Add your favorite toppings, like relish or onions or even kraut!

Southwestern BBQ Sauce

The simple addition of a few chipotles in adobo sauce to what is normally just a great regular-ole tomato-based BBQ sauce really makes for a totally different, utterly fantastic sauce for ribs, chicken, pulled pork… you name it. Chipotles (smoke-dried jalapenos) are one of my favorite things. I love the combination of heat and smokiness. They’re perfect for things like this southwestern BBQ sauce.

Smoky Spicy Deliciousness

I rubbed down a rack of St. Louis-style ribs with homemade Cajun seasoning. Then I smoked it for 6 hours until the meat was nice and tender.  I then brushed on some of this great southwestern BBQ sauce let the ribs smoke for another 15 minutes, just long enough to set the sauce up just a bit. It’s not a thin sauce, and it’s not a thick sauce. I’d call it just the right consistency for things like ribs. You know you’re going to get messy eating them, but there’s no reason to drown in the sauce or to have it all just roll off the ribs and down your arms.

I like to keep my sandwich sauces in squirt bottles. It’s fun to squirt sauces onto sandwiches or well, just about anything.

Instructions

  • Heat the oil in a medium saucepan over medium-high heat.
  • Add the onions and saute until starting to soften, about 5 minutes.
  • Add the garlic and the chipotles and cook for 1 minute.
  • Deglaze the pan with the vinegar and lime juice.
  • Reduce heat and simmer until the liquid is reduced by half.
  • Add the adobo sauce, tomato sauce, molasses, mustard, bay leaves and salt.
  • Increase heat and bring to a boil then reduce to a simmer and continue simmering, stirring often, for 15-20 minutes or until the sauce is the desired thickness.
  • Remove from heat and let cool slightly before straining through a fine-mesh strainer.

Notes

Store sauce in the fridge. Stir before serving.

Peach BBQ Sauce

I was wandering around the produce section at the grocery store when I came across a really nice basket of fresh-picked ripe peaches. I knew exactly what I was going to make with them. Peach BBQ sauce, the perfect sauce for a rack of St. Louis-style smoked ribs. Although I’d be partial to using this tasty sauce on anything, it really complements anything pork the best. Pulled pork of course would be another great way to use this delicious sauce.

Just The Right Amount Of Peachiness

This sauce isn’t too ‘peachy’. You can taste the fresh peaches, sure, but they don’t over-power the sauce. The peaches add a nice sweetness too. For me, this is the ideal fruit-based sauce. You really don’t want it to be too over-powering, but you want to taste that fruity flavor no matter what fruit you are using. It’s still a barbecue sauce in the end and not a peach sauce!

I like to store my sauces in squeeze bottles. Then I can squirt it onto whatever I’m serving. I admit, the kid comes out of me and I get a little crazy with it. Patterns, designs, you name it. I get ‘artsy’ with it.

Ingredients

For the sauce

For the peach nectar (may make more than you need for the sauce)

  • 4-6 peaches ripe (you need to end up with about 2 cups of sliced peaches in the end)
  • Water

Instructions

For the peach nectar

  • Bring a pot with enough water in it to cover the peaches to a boil.
  • Add the peaches and boil just 2-3 minutes until the skin is softened.
  • Remove peaches and place in an ice bath to cool.
  • Peel the peaches. Remove the pit and slice.
  • Place 2 cups of peaches along with 1 cup of water into a blender or food processor.
  • Liquefy until smooth.
  • Store any unused nectar in the fridge.

For the sauce

  • Melt the butter in a large saucepan.
  • Add garlic and shallot and saute for 3 minutes.
  • Add salt, pepper and rub. Stir.
  • Stir in the ketchup, peach nectar, vinegar, mustard, Worcestershire sauce and lemon juice.
  • Bring to a boil then reduce heat to a simmer and let simmer until thick, about 30 minutes.

Notes

Shake or stir the sauce before using. Store leftover sauce in the fridge.

Sriracha BBQ Sauce

I spotted pork ribs on sale the other day. That can only mean one thing: St. Louis-style ribs. I smoked them 3-2-1 style, which results in great tender ribs that are packed with flavor by themselves. I like to sauce my ribs just before I pull them off of the smoker, giving the sauce a bit of time to set up. I wanted a spicy sauce, but not too spicy. This Sriracha BBQ sauce is the perfect combination of heat with just a bit of sweet. But definitely not too much sweetness.

I used ketchup in this Sriracha BBQ sauce, but you can substitute tomato sauce for a slightly different texture that is a bit thinner. Either way you can’t go wrong with it. It’s great no matter where you use BBQ sauce, from great 3-2-1 ribs to grilled chicken. I also enjoy it on top of hot-off-the-grill hamburgers.

Strawberry Chipotle BBQ Sauce

Three of my favorite things on one plate. First, smoked 3-2-1 St. Louis-style ribs. Sauced with a BBQ sauce that combines two of my other favorites: strawberries and chipotles. That great sweet berry flavor with a hint of smoky spiciness. Strawberries are in season here, and I just love using them in everything from a strawberry poppy seed salad dressing to this BBQ sauce. The strawberry flavor isn’t strong, it’s there enough for you to notice. Same goes for the chipotle. You get the smoky and you get the kick. But both are nicely balanced and not overwhelming.

I cannot wait to use this strawberry chipotle BBQ sauce on smoked pulled pork. Though I think the sauce would be great on anything smoked or grilled, I feel nothing can touch its greatness on pork. There’s something about strawberry and pork. Delicious! This is a really great twist on a traditional BBQ sauce!

  • In a large saucepan over medium-high heat, heat olive oil.
  • Add in onion and saute for about 5 minutes.
  • Add in garlic and saute for 60 seconds.
  • Stir in strawberries, chipotles, ketchup, brown sugar, Worcestershire sauce, ground mustard, salt, and pepper. Bring to a boil.
  • Reduce heat to medium-low and simmer for 5 minutes.
  • Use an immersion blender to puree the sauce or transfer to a blender. Puree until smooth.
  • Return to heat and simmer another 10 minutes.
  • Cool completely and store in an airtight container.

Notes

Refrigerate up to 5 days.

Chili Sauce for Chicken Fingers

I admit, not every meal I cook is from scratch. I’d say maybe 99% of them are home-cooked. But for that other 1% I’m a sucker for something pre-cooked, and often it’s pre-cooked chicken fingers (I use Tyson’s Crispy Chicken Strips, actually). I can’t help it. I like them. To make myself feel better about eating them I make my own sauce for dipping. This chili sauce is easy to make, which fits in well with the I-don’t-have-time-to-cook-dinner theme, and it goes great with chicken fingers.

One Great Dipping Sauce

A little sweetness and a little fruitiness. Chili Sauce for chicken fingers is also perfect for dipping nuggets. Oh, that reminds me, check out my homemade chicken nuggets! It’s also fantastic for shrimp, boiled or deep fried. You can use thawed frozen mango and canned pineapple instead of fresh. That way you can make this sauce any time of the year.

These little sauce dipping cups are great for serving this sauce. They’re easy to clean up, too. And they’re also great for dipping nuggets, tenders or even chicken wings.

Sriracha Mustard Sauce

This is my go-to, bring-the-heat Sriracha mustard sauce. Although it is spicy (hey, there’s Sriracha in it), and a bit mustardy, it also has a great smoky flavor thanks to the smoked jalapenos (chipotles). I keep several cans of chipotles in adobo sauce on hand at all times. It’s great mixed in not only with this sauce, but I have been known to also add it to mayonnaise and ketchup.

Copycat Tony Roma’s Blue Ridge Smokies Sauce

This copycat Tony Roma’s Blue Ridge Smokies sauce is fantastic. It has some of your ‘standard’ BBQ sauce ingredients, such as ketchup and liquid smoke. That’s not what made it so special to me. It’s the red wine vinegar. The vinegar really adds a nice edge to the sauce. It’s like a nice combination of a KC BBQ sauce with a little North Carolina vinegar-based sauce. This is a great finger-licking sauce that screams ‘put me on a rack of smoked ribs’. So that’s what I did!

Copycat Tony Romas Blue Ridge Smokies Sauce

The Perfect Sauce For Ribs

My first experience at Tony Roma’s was in Salt Lake City, Utah, many, many years ago. I instantly fell in love with their ribs. Ribs, ribs, ribs. Tony Roma’s started my love of ribs and I now make them often at home on my own smoker. I rubbed a rack of ribs down with a copycat Famous Dave’s rib rub, let it get happy overnight, then tossed the ribs onto my Weber Smokey Mountain smoker for 6 hours. I then slathered on some copycat Tony Roma’s Blue Ridge Smokies sauce. The end result was tender, tasty, and finger-licking amazing.

If you don’t like liquid smoke, substitute smoked salt and leave out the Kosher salt instead.

You could put boring ketchup on your hamburger. Or maybe some mayonnaise. You could slather on some Thousand Island dressing. Or, you could just skip all that and go with big flavor instead. A Great Sauce For Everything

18000 Island Dressing isn’t just for burgers either. It’s great on sandwiches or our favorite, wraps. And hot dogs (if you haven’t tried mayonnaise-based sauces on your hot dogs you should, it’s a very welcome change from just using mustard). Anywhere you want bold flavor, it brings it.

These little sauce dipping cups are great for serving salad dressings. They keep me from over-dressing my salads, which is something I’m prone to do since I’m a dressing-aholic. They’re easy to clean up, too. And they’re also great for dipping nuggets, tenders or even chicken wings.

Roasted Cabbage Wedges with Onion Cajun Sauce

We have long loved roasted Brussels sprouts. Roasted sprouts are fantastic (as opposed to the boiled sprouts I hated as a kid). When I saw this idea for roasted cabbage wedges with onion Cajun sauce I immediately added it to my to-do list.

Brussels sprouts are often referred to as mini-cabbages. So using the same approach to roast cabbage as sprouts should be great, right? Yes! Yes! It’s fantastic! Absolutely great! Top them with an easy-to-make (you just whisk a few ingredients together!) mustardy sauce and they are truly fantastic!

Roasted Cabbage Wedges with Onion Cajun Sauce

A Different Way To Make Cabbage

No matter how you do it, you’ll love these roasted cabbage wedges with onion Cajun sauce. I like to cut the cabbage into 1/2″ – 3/4″ thick slices. A consistent thickness means that the pieces cook evenly all the way across. Versus if you cut them into wedges, where the thicker end won’t be as tender as the thinner one. That’s personal preference, and either way is fine. One advantage to cutting them into wedges is that they do have a different texture from one end to the other. Kinda of mixes things up.

Make sure you grip the cabbage tight as you slice it, though, or it’ll fall apart!

  • Meanwhile, prepare the sauce by melting the butter in a small saucepan.
  • Whisk in the remaining ingredients and season with salt and pepper.
