I love using cocktail sauce for dipping boiled or grilled shrimp. When I don’t make my own I grab a bottle or two of cocktail sauce at the store. But there are times when you want something different. A different flavor than cocktail sauce, something fruity. Something without horseradish.

Bring On The Shrimp

This mango-basil dipping sauce is different. It has a fantastic tropical flavor, making it perfect for shrimp.

You can make other variations of this great mango-basil dipping sauce simply by substituting other fruits for the mango, such as papaya or pineapple. If you want a little kick to your sauce, add a bit of hot sauce (preferably something fruity, like a habanero sauce) or even some red pepper flakes. You can use different flavored hot sauces too, to come up with totally new versions of this dipping sauce. Cholula, one of my favorite hot sauces, makes this 5-pack that has all sorts of different flavored sauces.

These little sauce dipping cups are great for serving this sauce. They’re easy to clean up, too. And they’re also great for dipping nuggets, tenders or even chicken wings.

For the shrimp, I made a batch of copycat Bubba Gump shrimp on my Char-Broil Big Easy.

Creamy Deliciousness

This sauce is nice and creamy smooth. Not too thick so you don’t get a big gloppy mess on whatever you’re dippin’. It’s a little thin for burgers, but so tasty, so if you want to make a batch for burgers (and you will want to), leave out some if not all of the vegetable oil.

This Delta Dippin’ sauce is a copycat of a sauce by the same name that was available at Popeye’s, but it was discontinued back in 2011 (it was a regional thing). I wouldn’t have taken it off the menu, that’s for sure!

I almost always use Blue Plate mayonnaise in the dishes I make. I think it is the best around. If you can’t find it locally you can pick it up online for a fair price.

Bourbon Street Pulled Pork Sandwiches

There’s nothing I love more than pulled pork, made on my Weber Smokey Mountain Smoker, mixed with a fantastic homemade sauce. My favorite sauce, for everything from chicken wings to pulled pork to burgers is my Bourbon Street sauce. For topping the perfect pulled pork sandwich I add either coleslaw or sliced onion and dill pickle. Either one gives the Bourbon Street pulled pork sandwiches a great crunchy, and the vinegar helps tone down a bit of the sweetness in the sauce. Every bite is perfect.

Sauce It Now Or Later

You can sauce the pork before mounding it high on the buns for these Bourbon Street pulled pork sandwiches. Or you can add the pork first, then pour the sauce over the top. Or heck, don’t put any sauce on, serve it on the side and dip your sandwich in it! When I am eating out I prefer to add the sauce myself. I order it ‘dry’, and ask for the sauce on the side. That way I can add as little or as much as I want. I’d rather be the one that makes the decision instead of someone in the kitchen. No offense to the fine folks in the kitchen! It’s a personal preference thing.

Bourbon Street Sauce

There’s no doubt in our house that this Bourbon Street sauce has quickly become our favorite sauce. We used the first batch of sauce on chicken wings, and they were absolutely fantastic. A bit of sweet, a bit of heat, a hint of bourbon, and a ton of flavor. The very next time I slathered some Bourbon Street sauce on grilled burgers (and on the bacon I put on the burgers). They were just as insanely good as the wings.

Habanero Sauce

My wife and I tried planting a garden a few years ago. We had all the usual things, like lettuce, and corn, and tomatoes. Well, even with a fence around it, the deer, rabbit, raccoon and possum had an absolute field day eating all of our produce. We ended up with maybe half a head of lettuce and a small head of cabbage in the end. It was a total loss.

We still plant a garden, but it’s now in pots, and it consists solely of peppers. Pimento, jalapeno, Cajun, and habaneros. No animals bother them at all. Victory!

Habanero Sauce

A Great Sauce On Anything

I decided to make a simple sauce of the habaneros this year. This makes for a perfect hot sauce by itself, and it also is a great way to add flavor to other sauces.

I keep my sauce in these squeeze bottles. It’s fun squirting sauce out. I can get artsy with it. No one needs to know that.

This habanero sauce has a great fruity flavor to it. I added mango, but you could use just about any fruit, such as papaya or even pineapple. I found it to be not overly hot at all, but it’ll still wake you up and tingle your lips and tongue.

Ingredients

  • ½ teaspoon vegetable oil
  • 2 cloves garlic chopped
  • 1 cup carrot chopped
  • 1 sweet onion chopped
  • 2 cups water
  • 10 habanero peppers more or less depending on how much heat you want, seeded and chopped. Optional: Roast or smoke the peppers before seeding and chopping
  • 3 tablespoons lime juice
  • 3 tablespoons white vinegar
  • 1 teaspoon kosher salt
  • 1 mango skinned, chopped

Instructions

  • Heat oil in a medium saucepan over medium-high heat.
  • Add the garlic and saute for 2 minutes.
  • Add the carrot, onion, and water.
  • Bring to a boil, then reduce to a simmer and continue simmering until the carrots are soft.
  • Remove from heat and add the habaneros, lime juice, vinegar, salt, and mango.
  • Let cool slightly then transfer to a blender (or blend in the pan using an immersion blender).
  • Puree until the sauce reaches the desired texture.
  • Keep refrigerated until ready to use.

Notes

Stir well before using.

Copycat Bull’s Eye Barbecue Sauce

I have to admit, I shy away from bottled BBQ sauces. I do make an exception and occasionally I’ll pick up a bottle or two at the store. But, if you like making your own sauces, a store-bought sauce can make a great starting point. Or you can do like I did and make a copycat version of a pre-made sauce, like this Bull’s Eye barbecue sauce.

Perfect On Ribs

I smoked a few racks of St. Louis-style ribs that were rubbed down first overnight with a copycat of Famous Dave’s rib rub. With only 30 minutes left in the smoke session I slathered the ribs with this great sauce. That extra 30 minutes lets the sauce set up on the ribs.

Thick. Like You Want It.

This sauce is perfectly thick, great for ribs. It has a little sweetness, a little tang, just a hint of heat, and a little smokiness. Don’t like liquid smoke? Leave it out and still enjoy a great sauce that’ll keep in the fridge for weeks, if you have any left. Or substitute smoked salt (and leave out the kosher salt) and still enjoy that great smoky flavor.

I like to keep my leftover sauces in squeeze bottles. Thicker ones like this one do mean I have to cut a bit off the top of the nozzles so it squeezes out easily.

This sauce is also great on pulled pork or grilled chicken.

Mongolian Grill Stir-Fry Sauce

My favorite thing to make with a wok (and of course you can make it indoors with a wok on the stovetop) is stir-fry, and in particular, stir-fry with a Mongolian Grill stir-fry sauce. Just cook anything you want, like beef, chicken, shrimp, pork. Add some veggies. And just as everything is about done, add some of this magical sauce. Let it get warm then serve. That’s it!

The Perfect Sauce For A Stir-Fry

I love making a stir-fry on my Weber charcoal grill using this Mongolian Grill stir-fry sauce. The grill is big and easy to light. Weber has come out with their Gourmet BBQ System, which fits several of Weber’s grills, but mainly the 22 1/2″ charcoal grills. The system lets you cook with anything from a wok to a pizza stone. I love it.

I make a double (or even more) batch of this sauce and keep it in the fridge. If you prep all the meats ahead of time, you can have an easy-to-make dinner in no time. Or I can use it to make a crazy good side dish in minutes.

Sriracha Horseradish Sauce

I made a fantastic prime rib on my Char-Broil Big Easy the other day. I needed a rockin’ good horseradish sauce to go with it. One with some serious kick besides just a horseradish kick. And this Sriracha horseradish sauce is it. This is perfect for dipping prime rib. Or a French dip sandwich.

Nicely Spicy

It has some ‘tang’ to it, for sure, and that great Sriracha heat. The horseradish is there for sure. But it’s not overpowering at all. That’s a good thing. For me, a little horseradish goes a long, long ways. I found the amount in this sriracha horseradish sauce to be perfect for my tastes.

I also made a great homemade au jus for the prime rib. The entire dinner was absolutely fantastic. I still dream about it.

This Sriracha horseradish sauce would also go absolutely great with my copycat Arby’s Beef-n-Cheddar sandwich.

This is my go-to simple sweet and sour sauce. Perfect on our sweet and sour meatball sliders. We also use this sauce on our appetizer meatballs and chicken with rice. And stir-fried shrimp with rice. Well, any time you need sweet and sour sauce, this is the perfect homemade solution!

Great On Everything

This sweet and sour sauce is also a favorite for dipping our homemade chicken nuggets. Or store-bought nuggets for that matter! If no one is looking I might sneak in a few pinches of red pepper flake to counter the sweetness just a bit. The sauce is also good drizzled over grilled or roasted shrimp.

If you aren’t a fan of cornstarch as a thickener, just substitute tapioca powder.

  • Place corn starch and 2 ounces of water into a small bowl and whisk until combined completely.
  • Place remaining ingredients (don’t forget to add the remaining 6 ounces of water) into a medium sauce pan over medium heat. Whisk to combine.
  • Bring sauce to a slow boil and let boil for 1 minute.
  • Reduce heat to a simmer and slowly whisk in the corn starch mixture. Be careful because the mixture will tend to rise (and almost double in volume), so don’t add the corn starch too quickly.
  • Continue whisking, cooking 5 minutes, until thickened.

Notes

Stir before suing. Store leftover sauce in the fridge until ready to use.

I was searching for a new tomato-based sauce that I could use on (whole or ground) Italian sausage sandwiches. It was a cold day, so I wanted something that would cook all day, making the house smell great. I like that. Eight or so hours of great smells, culminating in a fantastic sandwich topped with slow cooker marinara sauce. That’s a great way to beat the weather.

This slow cooker marinara sauce is a great all-around marinara sauce. Double the recipe and keep some in the freezer. It’s great to have on hand for those nights when you need a simple meal. Great on pasta, sandwiches, pizza, you name it.

Add a bit of dried red pepper flake for a little kick, if you want.
