New Jersey Italian Hot Dogs

Wow, what great hot dogs these New Jersey Italian hot dogs are. Fried potatoes and sausages and onions… well, you already know they’ll be good before even trying them. Italian seasoning adds great savory flavor. And last, a fantastic kick from Creole mustard (my favorite). I’m not sure just how Italian Creole mustard is but it works!

Nothing Fancy, Just Delicious!

I used Ball Park’s new Park’s Finest Signature Seasoned beef franks and found them to have a great complementary flavor. They have a really nice seasoning, very much like a smoked sausage. I think good bratwurst would also be great for these New Jersey Italian hot dogs. But regular good ole beef hot dogs ain’t so bad either!

Ingredients

  • 2 tablespoons olive oil
  • 2 large russet potatoes peeled and cut into 1/2″ squares
  • 1 medium green bell pepper sliced into strips
  • 1 medium sweet onion sliced into strips
  • kosher salt
  • ground black pepper
  • ½ teaspoon Italian seasoning
  • 4 hot dogs
  • 4 hot dog buns you'll need buns that are larger than the usual hot dog bun. Bratwurst buns works great too!
  • Creole mustard or whole grain

Instructions

  • Heat oil in a large skillet over high heat.
  • Add potatoes. Spread them out evenly and let cook 2-3 minutes. Do not stir, you want them to brown.
  • Flip the potatoes and again cook 2-3 minutes, undisturbed. Remove.
  • Add the pepper and onion strips to the skillet.
  • Season with salt and pepper and cook, undisturbed, for 2-3 minutes. Flip and cook 2-3 more minutes without stirring.
  • Add the potatoes back to the skillet along with the Italian seasoning.
  • Stir, reduce heat to medium, cover and let cook 8-10 minutes or until the potatoes are softened.
  • Meanwhile, grill or cook your hot dogs and toast your buns, if desired.
  • Slather the buns with the mustard.
  • Add the dogs and top with the potato mixture.

Notes

Cut a long narrow slit in your dogs before cooking to give the toppings a great place to go!

Brownie Waffles

Oh my goodness. What’s not to like? Brownie waffles. Yep, a waffle made with brownie mix. I topped this yummy creation with vanilla ice cream, a bit of whipped cream, and of course, a Maraschino cherry. With a generous drizzle of chocolate sauce. These take only minutes to make yet they are a fantastic dessert that not only tastes great it looks awesome.

Embellish And Get Happier

You can add a whole list of things to these. Roasted pecans or even peanuts would be a fantastic addition! Neapolitan ice cream would taste great and look cool (the dish could use a little color, right?). Go with caramel sauce instead of the chocolate sauce that I went with.

I use my trusty waffle maker to make this dish. There’s nothing fancy about it. It has one adjustment on it. And it’s easy to use. That’s all I need. I can’t feed a big crowd in record time with it, but it’s the perfect size for 2-4 people.

Instructions

  • Make the brownie mix as the box indicates, adding an additional egg.
  • Heat your waffle iron.
  • Working in batches, spray your iron with non-stick spray.
  • Add 1/4-1/2 cup (according to your waffle maker's instructions) of the batter and close the iron.
  • Cook until done.
  • Serve warm topped with your favorite toppings!

Pepper Jack Cheese-Stuffed Smoked Bologna

I wish I could remember exactly where I came across this idea for pepper jack cheese-stuffed smoked bologna. I’m pretty sure it came from Smokin’ with Myron Mixon: Backyard ‘Cue Made Simple from the Winningest Man in Barbecue. But, I could be wrong. Regardless, I love smoked bologna, but this approach takes the idea to a new level. The addition of cheese inside the bologna chub adds a nice flavor and well, it looks cool. I then rubbed the chub with yellow mustard and then sprinkled it with our favorite spicy rub and smoked it for 3 1/2 hours on my Weber Smokey Mountain Charcoal Smoker. Lastly, I brushed it with my favorite store-bought BBQ sauce.

How To Stuff The Chub

To get the cheese into the chub, I used a piece of clean PVC pipe. I used about a 1 1/2″ round pipe, but I’ll probably go with a large one next time, maybe 2″ or 2 1/2″. I felt like a little more cheese would’ve been a good thing. You just carefully shove the pipe down through the center of the chub while it is standing on end. Then you cut off about 2″ from each end of the piece of bologna that is in the pipe and use one piece to plug one end of the hole. Fill the hole with cheese and then plug the remaining end. You’re ready to roll!

For the smoked bologna

  • Fire up your smoker for 250 F cooking. Add your desired cooking wood, but use only a little and don’t use anything overpowering.
  • Clean a section of PVC pipe (1 1/2″ – 2 1/2″ in diameter, at least a foot long). Stand the bologna chub on end and gently push the pipe down through the center of the chub. Pull out the pipe and remove the core of meat that gets inside of it.
  • Cut 2″ off each end of the core piece. Take one piece and plug the bottom of the hole.
  • Add as much cheese as you can fit and plug the remaining end with the other piece of the core.
  • Rub outside of chub with mustard and then sprinkle with a rub.
  • Put on smoker in an aluminum pan and smoke for 3 1/2 hours, rotating once after 1 hour.
  • Brush all sides of the bologna with the BBQ sauce and smoke another 30 minutes.
  • Remove chub from the smoker and let set at least 30 minutes. Don’t rush or the cheese will run out when you slice it.
  • Slice as desired.

For the sandwiches

  • Slather the bread slices with mustard, Top with bologna, onion, and lettuce.
  • Shake a few drops of hot sauce on top and serve.

Notes

Store leftover bologna in the fridge.

Crab Boil Popcorn

I’m a huge fan of crab boil seasoning, and in particular, Old Bay. I use it in a lot 0f things, not just crab boils. As a steak rub. Or on popcorn! Crab boil popcorn is a great snack. It combines fresh popped popcorn, crunchy oyster crackers, and of course, Old Bay seasoning. The result is perfectly-seasoned and perfectly yummy and I ate a whole lot of it!

If you don’t have oyster crackers, you can substitute goldfish crackers and keep the ‘nautical’ theme still going with this Crab Boil popcorn.

I pop my popcorn in a West Bend Stir Crazy Electric Popcorn Popper. It’s the easiest thing in the world for making a big batch of popcorn but it’s a classic and hard to find. There’s a newer model available on Amazon.

Easy Grilled Spicy Meatball Sandwiches

Nothing beats a tasty meatball sandwich. You can throw these easy grilled spicy meatball sandwiches together in just minutes. Although you could make this indoors, grilling the meatballs adds a nice charred flavor. Substitute mozzarella cheese and leave out the hot sauce for a less spicy version. I’m always making dishes with a bit of a kick so I like the addition of the hot sauce.

Ready In No Time

I used our homemade pizza and pasta sauce on these easy grilled spicy meatball sandwiches. I had a batch on hand after making some awesome pizzas the day before. You could of course use jarred sauce. And although homemade meatballs would be preferred, I needed a quick dish, so I used Johnsonville’s Italian-Style meatballs. You want to keep this dish easy so grabbing stuff out of the fridge and pantry is encouraged!

I recommend that you use a grill basket when making this dish, although I used skewers. It makes cooking easier and you don’t have to worry about anything falling through the grates. And cleanup is easier too!

  • 10 meatballs cooked, frozen, thawed
  • 2 sub rolls halved
  • ½ cup pizza sauce warmed
  • hot sauce to taste
  • pepper jack cheese shredded
  • 1 green onion sliced, for garnish (substitute pickled jalapenos for more kick!)

Instructions

  • Fire up your grill for direct cooking.
  • Carefully poke the meatballs onto the skewers and place on the grill.
  • Grill 2-3 minutes per side until lightly charred. Remove.
  • Toast buns as desired.
  • Warm the sauce, adding a bit of hot sauce, to taste. Stir.
  • To serve, place meatballs on buns. I kept the meatballs on the skewers.
  • Top with sauce and cheese.
  • Return sandwiches to grill to melt the cheese (or put them under the broiler for 1 minute).
  • Serve garnished with green onion.
  • Eat by gently squeezing the buns together while pulling out the skewers.

Can you make these without using skewers? Sure.

4-Bean Salad

I love a good bean salad. But, this isn’t a good bean salad… it’s an amazing bean salad. The pickle sauce is a tasty combination of sweet and vinegar. I could probably just sit down and drink a glass of it by itself. The sauce is what makes this 4-bean salad something special.

A Special Salad

If I’d leave out the peppadew peppers this would be an above-average salad, and I’d be happy to take it to any family picnic or get-together. But, with the peppadew peppers it becomes something that everyone will talk about. They bring just the right amount of heat. They’re my new most-favorite thing. Perfect on hamburgers, hot dogs, in salads, on sandwiches, you name it.

4-Bean Relish (Salad)

If you can’t find peppadews, use the hot and sweet cherry peppers you can find at Trader Joe’s. If you don’t have a Trader Joe’s nearby, you can substitute chopped roasted red pepper, but you’ll want to add a spicy hot sauce to add some kick. This 4-bean salad needs some kick.

I made a big ole batch of Hot Mess Cheeseburgers the other day, They were topped with a crazy good cheese mix that includes peppers and hot sauce among other great things. Those cheeseburgers got me to thinking that the same topping would be just as great on a wiener. The logical next thing to do was make Hot Mess hot dogs!

The toppings won’t slide off easily if you first cut a shallow slit down the length of the hot dogs. After cooking, the slit will open up, giving the toppings a place to go.

Big Daddy’s Sloppy Joe Sandwich

Every once-in-a-while I get a hankerin’ for a big ole messy Sloppy Joe sandwich. I ate them often as a child. My tastes have changed since then, so the versions of Sloppy Joes I eat now are quite different. But, they are still super yummy, and just as importantly, messy. They don’t call them Sloppy for no reason, ya know? Big Daddy’s Sloppy Joe sandwich is the grown-up version of my childhood favorite.

Bold Flavors In Every Bite

The original version of this recipe for a Big Daddy’s Sloppy Joe sandwich came from Aaron McCargo Jr. He’s one of my all-time favorite chefs on the Food Network. Chef McCargo always created food with bold flavors, which is why I liked him. If you find a recipe of his I suggest you make it because it’s guaranteed to be delicious.

I like to use my good ole trusty Dutch oven to make this soup and pretty much darned near anything like it on my stovetop. It’s nice and big and sturdy. That extra weight helps it maintain and distribute heat perfectly. As an added bonus, it’s actually pretty easy to clean up too!

Sonoran Hot Dogs

I’ve been known to put baked beans on my hot dogs. Kind of like a handheld version of beans and weenies. These Sonoran hot dogs take that idea to a different level, adding the kick of hot sauce, fresh tomato and onion, and using pinto beans instead of baked beans. The result is a nice combination of flavors and textures, from the bite of the mustard to the soft beans to (one of my favorite on hot dogs) the mayonnaise.

A Wonderful Taste Combination

Authentic Sonoran dogs are served on Bolillo rolls. I couldn’t find any Bolillo rolls near us, but these dogs still come out great on large hot dog buns. Little ole buns aren’t able to handle these toppings. Get some big buns and load them up.

Even more authentic versions of Sonoran dogs use bacon-wrapped hot dogs, along with other fantastic southwestern ingredients. Now there’s an idea worth trying!

I used one of my favorite hot sauces, Louisiana Hot Sauce, on these dogs. It’s not over-the-top hot. It’s spicy, but it’s about great flavor. That’s what a good hot sauce does. It doesn’t make you cry, it makes you happy!

Adobo Ribeye Steak with Fried Poblano Strips

As much as I grill (pretty much twice a day), I actually don’t cook that much steak. My wife’s not much into steak, and I’m usually more of a beef burger or pork kinda guy. But, that doesn’t mean I don’t appreciate a really great grilled steak. In fact, I think I look forward to a steak more now that I don’t eat them on a regular basis. It’s like a reward. And in this case, a big reward. I loved making (and devouring) this adobo ribeye steak with fried poblano strips.

Choose a Great Cut of Meat

I found a lovely marbled thick ribeye on sale at the local grocery and used it for this dish. It came out so tender, and juicy and flavorful, with a nice rich color. It is one of those steaks that I’ll look back at and remember and smile… and drool.

Fantastic Flavors

The marinade on this steak has tremendous flavor, thanks to the chipotle peppers and adobo sauce. The smoked jalapenos add such a great spicy kick. This marinade would be great (and is, because I tried it later) on chicken breasts or pork tenderloin (for sliders). I made chicken sandwiches from the breasts that I marinaded and grilled.

I served the steak and chicken sandwiches topped with a few fried poblano rings. They added a nice crunch, and kicked up the subtle heat with a bit more heat. Perfect.

Another of my favorite grilled steaks is steak asada or my Hoosier Mama Bloody Mary steak. They’re both very easy and very delicious.

Instructions

  • Whisk together the lime juice, garlic, oregano, cumin, chipotle and adobo.
  • Use a knife to poke a few holes into the steaks (or chicken) and place into a resealable baggie or container.
  • Add in the marinade, seal, and turn a few times to coat.
  • Refrigerate, turning occasionally, for 1-2 hours.
  • Fire up your grill for high heat direct cooking
  • Remove steaks from marinade and shake off excess.
