Cedar Planked Cajun Mashed Potatoes

I doubt I’ll ever make mashed potatoes the ‘old way’ again after making cedar planked Cajun mashed potatoes. Mashed potatoes on cedar planks on a hot grill are incredible. The cedar flavor (and aroma) is not overwhelming, but it adds a wonderful new dimension to mashed potatoes. Add some Cajun butter and you have what is unquestionably the tastiest side dish you can possibly imagine. Did I mention that these potatoes also pack a little kick from the pepper jack cheese, smoked pepper and Cajun seasoning? Just the right amount of kick. My goodness were these every amazing!

Cedar Planked Cajun Mashed Potatoes

I served these cedar planked Cajun mashed potatoes alongside a delicious prime rib. I cooked it on my Char-Broil Big Easy oil-less fryer. It was the perfect meal.

I cooked the potatoes on my just-refurbished 15 year-old Weber gas grill, but any grill will do as long as you can fit the cedar plank onto it!

For the mashed potatoes

  • Bring a large pot of salted water to a boil. Add the potatoes and boil until tender, about 20 minutes. Drain well then return the potatoes to the pot.
  • Add the remaining ingredients and mash the potatoes using a hand masher or mixer.
  • Place potatoes into a resealable container in the fridge for 1 hour to set.
  • Meanwhile, soak a cedar plank in water.
  • Fire up your smoker for indirect cooking.
  • When the potatoes have set, remove the plank from the water. Add the potatoes in a pile the full length of the plank.
  • Make small indentations in the top of the potatoes and add small spoonfuls of the Cajun butter.
  • Place plank onto the grill and grill 20 minutes or until the potatoes have turned golden brown and are heated through.
  • Serve hot.

For the Cajun butter

  • Combine all ingredients.

Cajun Grilled Baby Veggies

I consider these Cajun grilled baby veggies to be the perfect side dish. They take absolutely no time to throw together and they taste fantastic. Just about any vegetable can be used, just make sure that all of them are roughly the same size so they cook evenly. I needed something light and fresh to go with my just-grilled sliders. I figured, small burgers, small veggies!

  • Fire up your grill for direct cooking.
  • Bring a large pot of lightly salted water to a boil.

  • Add the remaining vegetables except for the mushrooms and boil another minute.

Cedar-Planked Beef Sliders

Grilling salmon on cedar planks is a pretty common thing. I’m not sure why I never thought about cooking burgers on them too, though. Bobby Flay thought about it. That means I had to make them too. These cedar-planked beef sliders were amazingly good.

I use this nifty little ole burger press to make these burgers. It’s the best thing ever for stuffing burgers with just about anything you can think of!

Grilled New Potato Packet

This grilled new potato packet is the perfect side to make on the grill. Like any packet dish, you just toss a few ingredients onto a piece of thick foil, seal it, and toss it on the grill (I used my Weber) until done. The potatoes in this packet come out very tasty thanks to sun-dried tomato dressing.

I think any vinaigrette-like dressing would be just fine for a grilled new potato packet. I wouldn’t use a creamy dressing, though. The packets get mighty hot as the potatoes cook. You want something that’ll hold up to that heat, flavoring the potatoes as they go. You definitely wouldn’t want to use something that would separate or burn.

  • 2 pounds red new potatoes use potatoes that are all about the same size, quartered or halved depending on size
  • 2 pounds white new potatoes use potatoes that are all about the same size, quartered or halved depending on size
  • 2 tablespoons water
  • 2 teaspoons olive oil
  • 2 cloves garlic minced (optional)
  • 3 tablespoons sun dried tomato vinaigrette
  • 2 tablespoons Parmesan cheese freshly grated
  • 1 tablespoon parsley chopped
  • dried red pepper flake to taste (optional)

Instructions

  • Heat your grill to medium heat. Or use high heat and set up your grill for indirect cooking.
  • Tear off a large piece of foil.
  • Place potatoes in the middle of the foil. Drizzle with the water and oil and add garlic if using.
  • Seal potatoes, but leave a slight gap at the top (you can just leave the packet open or cut a slit in it with a knife).
  • Place on grill and cook until the potatoes are tender, 20-30 minutes.
  • Open packets (be careful of the steam that will escape) and add the remaining ingredients. Toss lightly before serving.

Grilled Chicken Fajita Sandwiches

Boneless, skinless chicken breasts were on sale the other day so I backed up the truck and bought a few family packs. I decided to make some grilled chicken fajita sandwiches. I often make chicken sandwiches, but I like to butterfly the breasts first so they aren’t so thick. You get more flavor that way, you get more out of your chicken, and the texture is better I think. I don’t like biting through a 1″ thick piece of chicken breast. But that’s just me!

For these grilled chicken fajita sandwiches I first marinated the chicken for 2 hours then tossed it into the grill. Meanwhile, I made a simple (but fantastic) roasted poblano cream sauce for topping the sandwiches. The sauce itself is amazing (and perfect as a dip, or in baked potatoes) and it compliments the smoky grilled chicken flavor perfectly.

  • Combine all of the marinade ingredients and pour into a resealable baggie or container.
  • Add the chicken, seal, and shake gently to coat.
  • Place in fridge for up to 2 hours, turning often.
  • Fire up the grill for direct and indirect cooking.
  • Shake off any excess chicken marinade and place over direct heat on the drill.
  • Grill for 3-4 minutes then turn 90 degrees and cook another 3-4 minutes.
  • Flip and cook 3-4 minutes then remove to indirect heat and cook until the chicken is done.
  • Toast buns as desired.
  • Assemble sandwiches by topping buns with chicken and a good amount of the cream sauce.

Usually, a quick grilled dinner at our house consists of some burgers or dogs, with a side and a salad. But sometimes, I like to throw together a just-as-easy meal-in-a-packet, like these grilled kielbasa dinner packets. Everything’s in there. Just assemble (you can put them together the night before) and toss onto a grill (I used my Weber grill) over medium heat until the vegetables are tender. Adding rosemary really takes this from a rather mundane dish to something a little more special. Next time, though, I’m adding chopped bell pepper or poblano for a little crunch.

  • 1 pound kielbasa cut into 1/2″ – 1″ thick slices
  • 4 medium red potatoes chopped into 1″ pieces
  • 1 medium yellow onion sliced
  • 1 large green bell pepper chopped (optional)

  • ground black pepper
  • 1 tablespoon fresh rosemary roughly chopped (or use 1 teaspoon dried rosemary, crushed)

Instructions

  • Fire up your grill for medium-heat (350 F) grilling.
  • Tear off a large sheet of foil.
  • Place sausage, potatoes, bell pepper (if using) and onion in center of foil.
  • Drizzle with oi and sprinkle with salt, pepper, and rosemary.
  • Fold up the edges of the packet and seal.
  • Place onto grill and cook 30 minutes or so until the potatoes are tender.
  • Be careful opening the packets as hot steam will get trapped inside.

Grilled Chicken Po Boy

The flavor from the marinade on this chicken is unbelievable. It makes for an absolutely awesome grilled chicken po boy, but the chicken would be just fine eaten by itself. Combine the tender, juicy flavorful chicken with some Kaw-Cajun Comeback sauce (or your favorite remoulade), fresh bread, lettuce, tomato and pickle and you have a sandwich you won’t soon forget.

  • Place remaining ingredients into a blender and blend for 15 seconds.
  • Place chicken into a resealable baggie or container. Add the marinade, Shake to coat and sea.

Grilled Taco Dogs

I kinda made these grilled taco dogs up on the fly. I was hankerin’ for some crunchy tacos. And I was hankerin’ for some grilled dogs. So, I married the two and well, the rest is history. Of course you can put whatever you want on these, but I opted to go with what we usually put on our tacos.

A little spicy Taco Bell ranch dressing gave these tacos a bit more kick.

There are two ways you could do the dogs. If you’re making taco meat (my slow cooker taco meat is awesome!) for with these tacos, just grill the dogs like you normally would. But, if you want to leave out the taco meat, sprinkle your dogs with taco seasoning first before grilling to give them a bit of taco flavor.

You have the grill fired up (for me that’s usually my Weber). You just finished off a great dinner consisting of burgers, grilled corn-on-the-cob, a wedge salad, and some ice cold watermelon. Just toss a few donuts on a hot grill for 1 or so minutes per side, just long enough to get them warm and get some pretty grill marks, and you’re ready to eat!

Grilled Strawberry Shortcake with Lemon Cream

My goodness, what a great dessert this grilled strawberry shortcake with lemon cream is. Grilled pound cake is a delicious thing. Top it with a homemade lemon cream and grilled strawberries and you have something truly special. I made the fantastic lemon cream sauce by hand, as stated in the recipe, but you could shortcut it and just whip some lemon zest and vanilla extract in with some store bought whipped topping.

The pound cake doesn’t take long to get grill marks and a light little crunch along the edges, so don’t leave it unattended on the grill (I use my Weber grill). You want grilled strawberry shortcake with lemon cream, not burnt.

For the lemon cream

Alternate lemon cream

  • 1 cup whipped cream Cool Whip works fine
  • ¼ teaspoon vanilla extract
  • ½ lemon zested

For the shortcake and glaze

For the lemon cream

  • Beat the cream, sugar, vanilla and lemon zest in a mixing bowl until soft peaks form.
  • Fold in the sour cream and whisk until thickened.
  • Put cream into a piping bag or 1 gallon resealable bag and refrigerate until ready to use.

For the shortcake and glaze

  • Grill the strawberries for about 3 minutes or until you just notice grill marks.
  • Whisk together the powdered sugar and lemon juice and brush over the strawberries.
  • Cut the strawberries in halves.
  • Grill the pound cake slices about 1 minute per side until grill marks appear.
  • Pipe or spoon some of the lemon cream mixture onto half of the pound cake slices.
  • Add strawberries, followed by the remaining cream mixture.
  • Top with another slice of pound cake and serve.
