Roasted Green Pepper Mayonnaise

I’ve had BLT sandwiches on my mind for days now, since I saw some really nice, big tomatoes at the market. I finally got the time to make them. I wanted a little something special beyond just the usual mayonnaise, so I made up a small batch of this simple roasted green pepper mayonnaise. It doesn’t take long to make. It adds a nice grilled flavor to the sandwich.

I also used this roasted green pepper mayonnaise on roasted chicken sandwiches, which came out fantastic too. If you don’t want to roast a pepper, you can use roasted red peppers in a jar, available at your local grocery store (ours has them by the Italian foods and also by the olives).

I almost always use Blue Plate mayonnaise in the dishes I make. I think it is the best around. If you can’t find it locally you can pick it up online for a fair price.

Good on a club sandwich, too!

  • Roast the pepper over direct heat on a grill or in an oven (I prefer to crank up the heat on my gas grill and place the pepper directly over the hottest part of the grill. I rotate it every few minutes until it is very charred on all sides).
  • Let the pepper cool then seed it and chop it very fine.
  • Add to the mayonnaise and combine well.

Notes

Store in the fridge. Stir before using.

Strawberry Cheesecake Salad

Wow, this strawberry cheesecake salad is good. It’s sort of like a salad but you’ll want this for dessert… so it is a dessert salad!

I made this using lighter ingredients than the original recipe. It would be perfect for a picnic or family get-together. It’s like having a banana split… Oh! Great idea! Maybe add a little drizzle of chocolate syrup and top it with a maraschino cherry!

I am going to make this salad again soon. I might try a few variations, like using blueberries and blueberry yogurt… or even chocolate chips and chocolate pudding! The possibilities are endless. But this strawberry cheesecake salad is great just as it is. It is absolutely perfect with in-season ripe strawberries.

  • Whisk together.
  • Cover and refrigerate for 1 hour.
  • When you are ready to serve, slice the strawberries and bananas.

  • Serve garnished with additional fresh sliced strawberries.

Chili Dog Sauce

This is my go-to hot dog chili dog sauce. I let it slow cook for a while to get good and tender. And I also make a huge batch and freeze some for later. I have to have sauce on my dogs.

This chili dog sauce is also outstanding over burgers, topped with cheese and chopped onion.

A Great Cookbook Find

I found this in The Real Chili Cookbook: America’s 100 All-Time Favorite Recipes. I found a copy at the Exit 76 Antique Mall for $3.50. Besides this recipe, I’ve made 5 or 6 of the chili recipes from the book and all have been fantastic. It’s one of the best finds I’ve made! As far as I’m concerned I more than got my money’s worth just with this chili sauce!

  • Brown the ground beef and drain.
  • Add onion and garlic and cook another 5 minutes.
  • Add remaining ingredients and stir.
  • Simmer until thickened, about 20 minutes. If the sauce gets too thin add a bit of water.
  • Note: You can also cover and slow-cook this sauce for a few hours if you wish. It comes out nice and tender. Cook it less for a chili sauce with a little more bite from the beef.
  • Update: I made this great sauce again over the weekend. Our grocery store was out of premium enchilada sauce, so I used a “lesser” brand. I ended up adding a good amount of hot chile powder to the mix, but it still came out fantastic.

Notes

Add a little diced jalapeno for a little kick.

Smashburger Sauce

Sadly, it has been a while since we’ve been to a Smashburger. My mouth waters just thinking about our last visit. I searched around the web and found the recipe for the sauce they use on their burgers, and just had to make it. I made up a batch of Smashburger sauce for grilled burgers last night and it was outstandingly good. And it was just as good for dipping French fries (in my case, sweet potato fries).

The Perfect Burger Sauce?

There are two variations of this smashburger sauce on the web, one that uses dill pickle juice and one that uses lemon (which is probably more true to the actual sauce in the restaurant). I didn’t have a lemon on hand, so I went with the pickle juice and it was great. I’ll try lemon next time, but if you don’t have a lemon, just go with pickle juice and you’ll be very happy!

Cheater Crispy Chicken Po Boy

Whenever I make a big batch of Chez John’s Kaw-Cajun Comeback sauce, I go into po boy mode. I love a good po boy. But, sometimes I am in a bit of a rush, so I just warm up some pre-cooked crispy chicken tenders, add a few more ingredients, and before you know it I’m enjoying a great cheater crispy chicken po boy!

So, why’s this great sandwich a “cheater”? Well, because I used pre-cooked chicken. A real po boy would’ve been cooked on the fly. I didn’t have the time for that. So I made a cheater crispy chicken po boy instead.

Mason Jar Salad

We often have a salad with our dinner. Sometimes, you want to mix it up a little. Make it  look a little different. These Mason jar salads did just that. Great greens, juicy explode-in-your-mouth tomatoes, and a few croutons, all topped with homemade dressings. It might be just a salad. But put it in a jar and everyone ‘oooohs’ and ‘aaaaahs’. Just like they do for my classic wedge salads.

You can put anything you want into these salads. As long as it’ll fit through the jar opening. I used jelly Mason jars since they are big around the base. They also have a large mouth, making it easier to get to the salad.

For dressings, I like to make jars of my homemade Catalina dressing or homemade Italian dressing.

  • Cut the bottom off the lettuce.
  • Then, cut it into 2" (depending on how deep your jars are) pieces.
  • Insert the pieces into the jars then top with your desired toppings and serve.

You can make these ahead of time and keep in the fridge until ready to serve.

BBQ Hobo Packets

I’ve made a few variations on hobo packets. They’re easy to make, tasty, and make for easy cleanup. This BBQ hobo packets version uses BBQ sauce and has quickly become one of my favorites. Cheesy goodness, with potatoes and onion, all cooked with sausage in a BBQ sauce. All of the ingredients get all steamy happy inside the packet while they cook and the flavors melds perfectly.

BBQ Hobo Packets

These BBQ hobo packets have quickly become one of my favorites.

Ingredients

  • 8 small red potatoes
  • 2 teaspoons vegetable oil divided
  • ½ sweet onion cut into thin wedges
  • ½ pound smoked sausage cut into bite-sized pieces (or chicken tenderloins)
  • 3 tablespoons your favorite BBQ sauce spicy works best
  • â…“ cup shredded cheese

Instructions

  • Bring a small pot of water to a boil. Add potatoes and boil until just starting to get tender, 15-20 minutes. Remove from water and let cool slightly then cut into wedges.
  • Spread out foil pieces and drizzle with 1 teaspoon of oil each.
  • Add the remaining ingredients, splitting them between the two pieces of foil, drizzling with however much BBQ sauce you prefer (a tablespoon or so each should be enough). Also add half of the potatoes to each.
  • Seal foil into tight packets and place on a grill over indirect heat for about 10-15 minutes or until the onion has started to soften.
  • Remove from grill and open to let cool before serving.

Notes

If you aren’t careful the bottoms of the packets can get very hot. Let them cool before serving!

Marinated Hot Dogs

Well, who would’ve thought about marinating hot dogs? Sure, I marinate pork, chicken and beef all of the time. But it never occurred to me to make marinated hot dogs. Mini Ice Cream Sandwiches

Something so simple… something so good! I made these mini ice cream sandwiches for July 4th. They only take a few minutes to throw together (plus add in some freezer time). They disappear in seconds.

I used smaller chocolate chip cookies. Of course, you could use bigger cookies and make these not-so-mini ice cream sandwiches.

Next time I’ll try a different ice cream. Probably mint chocolate chip. And I might dip them in chocolate shell. Oh man, that’s a great idea! I wish I had some chocolate shell in the house!

If you’re making these for a crowd, I’d make a number of different variations so everyone can get one that they like. Chocolate. Vanilla. Strawberry. Etc.

Also make some homemade red velvet Klondike bars. They’re a bit more trouble but oh so worth it!

  • Let the ice cream soften just a bit.
  • Spread the nuts out on a large plate.
  • Scoop ice cream on a cookie bottom. You want enough so that it just sticks out around the edges when you press the other cookie down on top of it. If you have to, run a knife along the edges to smooth them a little.
  • Roll the edges in the nuts, pressing down slightly.
  • Wrap in small pieces of foil or plastic wrap and return to the freezer for 10-15 minutes to harden.

Notes

Add a few chocolate chips to the nuts for more yumminess!

Sriracha Slaw

I love a slaw with some kick. Sure, I’ll enjoy a big ole bowl of sweet slaw too, but for my money you can’t beat a Sriracha slaw that brings a little heat. This is not your usual boring creamy slaw. Nor is it your usual vinegary slaw either. There’s more than a bit of spiciness in it. There’s lots of flavor too!

Nicely Spicy

Sriracha sauce is a wonderful thing. Though it is a little spicy, it’s not a burn-the-cover-off-your-tongue hot. It’s pleasant really. It adds a little something, something you don’t find in a regular hot sauce. It is fantastic in this Sriracha slaw. Heck, I’d have to rename this dish if there weren’t Sriracha in it!
