Slow Cooker Sloppy Joes

I have been a huge fan of anything Sloppy Joe since I was a kid. Back then I thought there was only one way to make Sloppy Joes: open a can, warm the sauce, slop it on a bun. Well, times have changed and so has my Sloppy Joes. These slow cooker Sloppy Joes put that canned stuff to shame. Rich flavorful tomato sauce with a little kick. I loved the combination of ground beef with breakfast sausage. Different. Perfect. And all so easy to make using a slow cooker.

Add Some Crunchy Contrast

I topped my slow cooker Sloppy Joes with a tangy vinegar-based Delta coleslaw. I liked the crunchy contrast. The vinegar in the slaw complimented the vinegar in the meat sauce. I think a creamy coleslaw would have made the sandwiches too creamy. I never thought I’d say that but like I said, my Sloppy Joe game has risen to a whole new level now.

Instructions

  • Crumble the beef and sausage into a Dutch oven over medium-high heat and cook until just starting to brown.
  • Add the onion and bell pepper and continue cooking until the meats are done. Drain any excess fat.
  • Transfer meat mixture to a slow cooker on low heat.
  • Stir in all of the remaining ingredients except for the buns.
  • Cook on low for 4 hours, stirring occasionally. Add more water, a little at a time, if the mixture gets too thin.
  • Serve over toasted buns.

Notes

Also great served open-faced on toasted Texas toast.

Roasted Turkey Wings on the Char-Broil Big Easy

Note: This recipe was developed using the Char-Broil Big Easy Oil-Less Fryer. If you are cooking using the Char-Broil Smoker-Roaster Grill you should cook with the lid open and the temperature set to High. You might also need to adjust the cooking time.

If you have a family member (or heck, if it’s you!) that loves dark meat, I highly recommend making roasted turkey wings on the Char-Broil Big Easy. They take no time at all and come out crispy and delicious. There’s no special preparation required. Just a little oil and salt and pepper. Sure, you can substitute your favorite poultry rub for the salt and pepper if you want but don’t use anything with sugar in it. The high heat of the Big Easy may cause the sugar to burn.

The Best Turkey Broth

You can often find turkey wings on sale right before or after Thanksgiving. I grab as many as I can and roast them up for making turkey broth. The broth makes for the absolutely best turkey gravy you can imagine. Seriously, I make it by the gallon.

Of course, you can just eat these at wings, too! They’re fantastic!

It’s always a good idea to keep a few spare grease trays on hand for your Char-Broil Big Easy.

Instructions

  • Fire up your Big Easy.
  • Lightly brush the wings with oil. I found it easier to just pour the oil on my hands and then rub them on the wings.
  • Season well. Don’t be shy.
  • Add wings to the Big Easy basket and transfer to the cooker. Cook for approximately 10 minutes/pound or until wings are at least 165 F.
  • Remove and let cool slightly before serving.

Notes

Note: Depending on the size, you can fit 3-4 turkey wings in the Big Easy at once. Add a Bunk Bed basket to double that amount.

Thai Sweet Chili Dressing

It was salad week here. Every few weeks or so, we have salads every night of the week. It’s a nice fresh change sometimes from a lot of grilled foods but that doesn’t mean that it’s a week of sadness. I mix it up by using a large variety of ingredients. And I always make at least one homemade salad dressing. Like this wonderful Thai sweet chili dressing. The dressing is a wonderful combination of tropical flavors, a little heat and a lot of Asian inspiration.

There’s A Lot Of Greatness In This Dressing

Your salad doesn’t have to be Asian in nature to enjoy this Thai sweet chili dressing. It’s great no matter what you toss onto the plate.

I’m a huge fan of coconut milk and I was happy to see that this recipe has plenty of it. And fish sauce. Now, fish sauce is one strong smelling sauce. But don’t fear it. It really makes this dressing amazing. If you’re not sure about it, add a little, taste, and add more if you want. I use an expensive, quality fish sauce. I learned early on that you get what you pay for, specially when it comes to fish sauce.

Buffalo Ranch Pretzel Bites

The reason I made such a big batch of these Buffalo Ranch pretzel bites isn’t because I needed a huge amount for a family get-together. Sure, I needed some, but not a ton. Nope, I made a big batch because I wanted more for myself. Sorry, but it’s true. I was being selfish, but for a good reason. I love them. Crunchy, and a bit buttery, they taste a bit like spicy Buffalo wings dipped in Ranch dressing.

Mississippi Mud Cheesy Potatoes

I’m lucky in that I usually love darn near everything I make. These Mississippi Mud cheesy potatoes are definitely no exception. In fact, love may be an understatement. My wife and I both devoured them. You just can’t beat the tender potatoes, ooey gooey cheese, crunchy smoky bacon, and green onions. It’s a lot like having a loaded baked potato, and yep, you guessed it, I love loaded baked potatoes too.

Spice ‘Em Up

The only possible change (and really, it’s a stretch perhaps) I would make to these Mississippi Mud cheesy potatoes would be to add a roasted jalapeno or two. Actually, that’s not a stretch at all. Or maybe a pinch or two of smoked paprika or chipotle powder. Yeah, I’m going that for sure now! It’s not that this dish NEEDS some spicy kick to it. It’s that I like things with a little heat more than things without it. So why not add just a bit? Me, I figure anything I would add to a bake potato, I can add here too!

I almost always use Blue Plate mayonnaise in the dishes I make. I think it is the best around. If you can’t find it locally you can pick it up online for a fair price.

  • 10 cups Russet potatoes diced (about 5 medium potatoes)

It’s the sauce. The wonderful sauce. I could not stop slurping it up. Hey, no one else was here. I can slurp all I want. And I did. Oh yes, of course this chicken and smoked sausage etouffee has great chicken, spicy andouille and a number of other flavors. But man, it’s the sauce that I could not get enough of. This is comfort food at its absolute best.

Lots Of Stuff. But It’s Still Easy To Make.

Chicken and smoked sausage etouffee is one of those recipes that might be a bit intimidating because of the number of ingredients. But it’s actually very easy. And it’s definitely well worth the time and effort. This is one of my favorite things to make, cold day or not.

I like to use my good ole trusty Dutch oven to make this soup and pretty much darned near anything like it on my stovetop. It’s nice and big and sturdy. That extra weight helps it maintain and distribute heat perfectly. As an added bonus, it’s actually pretty easy to clean up too!

  • Heat a tablespoon of oil in a large Dutch oven over medium heat. Add the andouille and brown on all sides. Remove to a paper towel-lined plate.
  • Season the chicken thighs with salt and pepper and add to the pot. Brown on both sides, about 15 minutes. Remove to a paper towel-lined plate.
  • Add the butter and melt. Whisk in the flour and cook 10-12 minutes or until brown.
  • Add onion, celery, bell pepper and garlic to a food processor. Pulse a few times to roughly chop then add to the Dutch oven with the roux. Stir and cook for about 5 minutes to cook out some of the liquid.
  • Add the beer and deglaze the pot. Make sure to scrape up the yummy bits that may have stuck to the bottom.
  • Add the chicken stock, bay leaves, paprika and cayenne. Stir.
  • Add in the chicken pieces and simmer for 1 hour or until the chicken has started to fall off the bones.
  • Carefully remove the chicken to a cutting board and pull the meat from the bones. Shred and return to the pot.
  • Slice the andouille and add back to the pot. Warm thoroughly.
  • Serve over warm cooked rice garnished with chopped parsley and green onions.

Notes

You can substitute boneless, skinless thighs instead.

Chicken Noodle Soup

It doesn’t even have to be a cold day to enjoy a big ole bowl of this delicious, warming chicken noodle soup. It does help, though. This soup hit the spot, starting with an absolutely divine-tasting broth. Tender, flavorful chicken and a surprise… chickpeas… round out a big bowl of happiness. This is not that stuff you get in a can. Not even the expensive canned soup can hold a candle to this bowl of tasty goodness. And that’s why I keep making it. It’s a household favorite of ours.

Chicken Noodle Soup

Instructions

  • Heat oil in a large Dutch oven or pot over medium-high heat.
  • Add the onions, celery, and carrots. Add salt to taste and cook until the vegetables start to soften, 8-10 minutes.
  • Add the garlic, red pepper, and thyme and cook for 2 more minutes.
  • Add the chicken and enough water to just cover the chicken.
  • Add the bay leaf. Bring the mix to a boil then reduce to simmer. Continue simmering for 30 minutes.
  • Scrape off any accumulated foam. Add the juice of the lemon plus the lemon halves, along with the cinnamon and nutmeg. Stir and add salt and pepper to taste. Simmer for another hour.
  • Cook the pasta per package instructions.
  • Remove the chicken from the pot and let cool slightly before pulling the meat from the bones. Chop or shred as desired and return the meat to the pot.
  • Remove the bay leaves and the lemon halves and add the chick peas. Warm through.
  • To serve, divide pasta between four bowls and top with the soup. Garnish with cilantro and serve.

Notes

You can substitute boneless, skinless thighs or even chicken legs.

I’ll make the bold prediction right now: some day there’ll be a section in the Louvre just for pictures of poultry cooked on the Big Easy. Ok, so that’s not going to happen but it should because each and every time, turkey or chicken on the Big Easy comes out perfect. This Cajun Creole chicken on the Char-Broil Big Easy is a great example of just how easy it is too.

How good is it?

Crunchy skin, moist tender meat. Every bite chock full of flavor with just a slight spiciness. This is great chicken right here.

The Better Basket

I used the new Better Basket by Char-Broil. You can see my write-up on it by clicking here. The basket folds down upon itself, making getting whole birds in and out super easy. You can also fit larger poultry in the cooker using the basket. And it stores easier since it collapses down to almost nothing.

Since the basket doesn’t have rigid sides you have to get whatever you are cooking centered in the middle of the basket so that it doesn’t lean to one side. A little leaning is ok. A lot of leaning might not end well. I added my chicken then lifted the basket just a little to see if it was centered. I adjusted the chicken a bit and then I was ready to lift the basket completely and place it into the Big Easy. It may sound complicated but it’s not.Serve your Creole Cajun chicken with some Cajun corn-on-the-cob, also made on the Big Easy.

Spicy Red Onion Rings

Oh, all those years spent eating (and enjoying!) onion rings made from white or sweet onions. Not wasted years, but years of missed opportunities of eating spicy red onion rings. Spiced up with a fantastic kick not only from hot sauce but from that red onion bite, these rings are the things dreams are made of. The batter is perfect. No batter loss here, the coating sticks perfectly and comes out crazy crunchy. These are what rings should be.

Forget Those Other Onion Rings

Although there’s certainly nothing wrong with ketchup on spicy red onion rings, I prefer something a bit more ‘deep’ so I made an easy dipping sauce of mayo and a few other ingredients I had on hand. The dipping sauce is also great for dipping fries, potato chips, carrot sticks, you name it. And it’s also fantastic on burgers!

If I’m cooking for a crowd, I’ll break out my big deep fryer. But, if it’s just the two of us, I’ll fire up my Fry Daddy fryer. It’s the perfect size for both of us. It fries everything perfectly. And as an added bonus, it doesn’t use a lot of oil, which saves me money.

I get out my big deep fryer when it’s time to fry a large batch of food. It comes to temperature quickly and it maintains that temperature perfectly. It has a built-in oil filter and storage unit so I can re-use the oil several times.

This is yet another great recipe I found in Margaritaville: The Cookbook. It is absolutely full of great dishes!

Ingredients

For the dipping sauce

Instructions

  • Heat 2″ of oil to 350 F in a deep fryer or Dutch oven.
  • Whisk the buttermilk and hot sauce together in a pie plate.
  • In another pie plate, combine the flour, cornstarch and salt.
  • Working in batches, dip rings in buttermilk, then flour. Repeat.
  • Transfer to fryer in batches. Do not overcrowd. Fry for about 2 minutes, flip and fry another 2 minutes or until golden brown. Transfer to a paper towel-lined plate and sprinkle with salt.
  • Serve with dipping sauce.

For the dipping sauce

  • Whisk together all ingredients.

Notes

For a little extra spiciness, let the rings marinate in the buttermilk/hot sauce mixture for 1 hour before battering and frying.

Bloody Mary Buffalo Chicken using the Vortex

After making a big batch of crazy delicious Bloody Mary chicken wings I knew exactly what I needed to make next: Bloody Mary Buffalo Chicken, using a Vortex insert on my Weber charcoal grill. Crispy, crunchy, moist, tender, juicy. And spicy. Very spicy, if that’s how you want it! If no one told you that this chicken was made on a grill you’d swear it was done in a deep-fryer!

It’s So Easy!

Using the Vortex makes making seems-like-fried chicken an absolute breeze. It’s something I make often, and as often as I can! It’s amazing how many different ways you can make chicken like this. Often I’ll do traditional, like grandma’s fried chicken. Then sometimes I’ll come up with something totally different, like this Bloody Mary Buffalo Chicken using the Vortex.

Bloody Mary Buffalo Chicken using the Vortex

Ingredients

  • 8 chicken pieces I prefer skin-on chicken thighs
  • Vegetable oil
  • Fried chicken mix below
  • Bloody Mary Seasoning below
  • Bloody Mary Buffalo sauce below

For the fried chicken mix

For the Bloody Mary seasoning (makes enough for the chicken with some leftover for making Bloody Marys!)

For the Bloody Mary Buffalo sauce

Instructions

  • Fire up your Kettle grill with the Vortex loaded with charcoal. Don’t start cooking until the coals are all lit and starting to ash over.
  • Rinse the chicken and pat dry.
  • Place the fried chicken mix into a large baggie.
  • Lightly brush the chicken with vegetable oil.
  • Working in batches, place chicken pieces in the bag. Seal and shake. Shake off excess.
  • Transfer chicken to the grill along the edges, skin-side up.
  • Cover and cook for 45 minutes, turning the lid 90 degrees every 15 minutes.
  • After 45 minutes lightly brush the chicken with the Buffalo sauce. Don’t be shy. Note: If you are using pieces other than split chicken breasts, you’ll want to rotate the pieces at this time.
  • Cover and cook another 15 minutes or until the chicken hits 160 F. Feel free to brush with more Buffalo sauce, to taste.
  • Remove and let rest and come to 165 F before serving.

Notes

This recipe is also great using chicken breasts, legs or wings!
