Oh man, what great wings these creamy Buffalo wings were. They disappeared in no time at all. They’re a simple take on the traditional Buffalo wing, with the same great spicy heat, but with a creamier sauce. Flat-out delicious and definitely finger-licking fantastic.

Creamy Buffalo Wings

I cooked the wings on my Vortex insert, which I use on my Weber Performer grill. The Vortex concentrates the heat from the charcoal into a circle, which you then surround with the wings. The chicken wings cook up super tasty and crisp in just over 30 minutes. I let them cool only slightly then tossed them with the creamy Buffalo wing sauce. And then I went to town on them. It was almost embarrassing, but you’ll understand once you try them.

I store my homemade sauces in squeeze bottles. If refrigerated, I set them out thirty minutes to an hour before using so they come to room temperature. You don’t want to put cold sauce on hot food!

My wife and I recently spent a few days in lovely Pittsburgh, Pennsylvania while attending a conference. I made sure I had my ‘to-eat’ list down before leaving, because one thing you can be sure of finding in Pittsburgh: good food. At the top of my list was dry chicken wings. No, not dry like ‘ewww, this meat is dry’. Dry as in the wings aren’t tossed in sauce after being cooked. Instead they are dusted with seasoning. The end result is almost like roasted chicken, but with much more pronounced flavors. Now that we are back home, I had to make some of the favorites that I devoured in Pittsburgh, like these Old Bay wings, which are just flat-out incredible.

Vortex Chicken Wings

If you follow our blog at all you know that I cook up a LOT of chicken wings. Sometimes I make them in the fryer, sometimes on the charcoal grill, sometimes on the gas grill, sometimes on the smoker, and often on the Char-Broil Big Easy. I even have a free eCookbook full of wing recipes. But now, I have Vortex chicken wings and life has gotten even better.

Vortex Chicken Wings

I am always on a quest for the next best wing cooking idea. Recently, I discovered the best way for making crispy wings on the Char-Broil Big Easy, which came out fantastic. But, I was still looking for the best way to get crispy wings on my charcoal grill. That’s when I discovered the Vortex and Vortex chicken wings are amazing. The Vortex is an insert for your grill that lets you concentrate the charcoal heat, making for an incredibly hot fire. As you can see below, the wings ring the Vortex, getting super hot and, in just a while, crispy. And it couldn’t get any easier.

I couldn’t be more happy with my Vortex purchase. I purchased the small-sized model, which works fantastic on my old 18″ Weber kettle and 22″ Weber Performer grills. But, a larger model is available for the 22″-26″ cookers.

The Vortex isn’t just for high-heat cooking of wings. Check out the Vortex web site for tons of other ways you can cook using the insert. Love Buffalo wings? Making them is easy using the Vortex.

Note: Since posting this, I’ve made wings on my Vortex hundreds of times. I’ve found that rotating the lid isn’t so critical (specially when cooking on a smaller grill such as the Jumbo Joe). For a little smoky flavor, throw a nice chunk of your favor wood (I like hickory or cherry) over the Vortex about 5 minutes before you put your wings on.

Make some potato wedges using your Vortex and you’ve got a great lunch! Or dinner….

Vortex Chicken Wings

  • 3-4 pounds chicken wings flats and drumettes
  • ¼ cup vegetable oil
  • ¼ cup Cajun seasoning or your favorite rub
  • Your favorite wing sauce and dipping sauce.

Instructions

  • Place the wings into a large resealable container or baggie.
  • Add the oil and seasoning. Seal and shake to coat well.
  • Refrigerate for 3 hours.
  • Place the Vortex into the center of your grill. Open the bottom vents on your grill by 1/3, while keeping the top vent open completely.
  • Light a charcoal chimney full of charcoal. Alternatively, you can fill your Vortex with charcoal and light them inside the unit.
  • Let the charcoal get fully ashed over.
  • Add the chicken as shown in the picture above. For the flats have the skin side up, and for the drumettes keep the meaty part away from the fire.
  • Close the grill and cook for 15 minutes.
  • Rotate the lid 90 degrees and cook for another 15 minutes.
  • Flip the wings. Rotate another 90 degrees and cook 15 more minutes.
  • Check if the wings are as crispy as you like. If not, rotate another 90 degrees and cook another 15 minutes.
  • Transfer wings to a bowl and toss with the wing sauce.
  • Serve with dipping sauce.

Wicked Sticky Wings on the Char-Broil Big Easy

Note: This recipe was developed using the Char-Broil Big Easy Oil-Less Fryer. If you are cooking using the Char-Broil Smoker-Roaster Grill you should cook with the lid open and the temperature set to High. You might also need to adjust the cooking time.

Warning: The term ‘sticky’ is a tremendous understatement when it comes to describing these Wicked Sticky wings made on the Char-Broil Big Easy. Think sticky molasses, and then think stickier. Don’t spill the sauce (like someone I know might have done) or you will be cleaning counter tops and sinks and what-not for days. Trust me. Now, on to the wings…

I went simple with the dipping sauce for these wings. Just straight-out-of-the-bottle chilled Ranch dressing. Nothing fancy, just something to offset the kick of the sauce just a bit.

Crispy Wings on the Char-Broil Big Easy

I have cooked a LOT of chicken wings on my Char-Broil Big Easy. It’s my favorite way to cook wings, other than deep frying. The Big Easy cooks wings so easily and quickly. I usually finish off the wings over a hot grill to get a bit of a crunch on the skin. Well, no more. Crispy wings on the Char-Broil Big Easy are fantastic!

Now I can get delicious, tender, moist, crunchy wings on the Big Easy without grilling them afterwards. These crispy wings are fantastic. I won’t do wings any other way again, and that includes deep frying. This is it, the way to do wings.

Buffalo Wings on the Char-Broil Big Easy

Dry Skin Means Crispy Skin

The key to getting the wings crispy is to dry out the skin so that takes on a good crunch under the high heat of the Big Easy. If you don’t have a Big Easy, you should get one. Until then, you can also make these crispy wings in the oven.

I used my Wingin’ator 3000 basket when I cooked up these wings so that I can cook more at once than I could with the basket that comes with the Big Easy. You can also pick up a bunk bed basket (see the link below) that doubles the amount of room you’ll have for cooking wings. You don’t want to crowd the wings into the cooker or they won’t cook evenly.

It’s always a good idea to keep a few spare grease trays on hand for your Char-Broil Big Easy.

Ingredients

  • 4 pounds chicken wings separated
  • 2 tablespoons baking powder
  • ¾ teaspoon kosher salt
  • Your favorite wing sauce and dipping sauce

Instructions

  • Rinse the wings and pat them very dry with paper towels.
  • Place on a sheet pan or plate and cover with more paper towels. Refrigerate for 2 hours to further dry out the skin.
  • Preheat oven to 250 F.
  • Transfer wings to a resealable baggie or container. Add in the baking powder and salt. Seal, and shake or toss to coat well.
  • Spray a baking rack with the non-stick spray and put it over a baking sheet that is lined with foil.
  • Place wings onto rack but do not crowd them.
  • Bake for 30 minutes. While baking, fire up your Big Easy.

Finishing in the Big Easy

  • Transfer wings to the Big Easy and cook another 10-20 minutes or until done.

Finishing in the oven (optional)

  • Increase the oven temperature to 425 F and continue baking for another 20 or so minutes or until done.

Serving

  • Toss wings in your favorite sauce and serve with your favorite dipping sauce.

Notes

You can only fit so many wings on a Big Easy, so I’ve included instructions on how to also finish the wings in the oven.

Cravin’ Cajun Chicken Wings

I usually make my own sauce when it comes to Cajun-flavored chicken wings. But, for something new I grabbed a bottle of Cravin’ Cajun Wing Sauce from Louisiana Fish Fry Products. Our local grocery store has a number of Cajun-seasoned items. Thankfully. Cravin’ Cajun wing sauce has a nice hot sauce kick to it, sort of like a traditional wing sauce, but with some great southern spice.

So I just made up a batch of wings my usual way, cooking them on the Char-Broil Big Easy for a bit. You can also make them on a grill, smoker, in the oven or in a deep fryer. Then I tossed them in some Cravin’ Cajun sauce and served them with Ranch dipping sauce. Easy. Great.

Want a really great way to cook up a huge batch of kickin’ good chicken nuggets? Just heat your favorite frozen pre-cooked nuggets as the package says, then put them in a large bowl. Pour on the Cravin’ Cajun sauce and toss to coat. Perfect for a huge party and down-right absolutely delicious!

I’m a big fan of Cajun-flavored or Cajun-inspired wings. Try my Cajun honey lime, Cajun wings with dipping sauce, and my Cajun Bay (a fantastic mix of Cajun and Old Bay seasonings!) wings.

Almost-Fried Smoked Chicken Wings

These are my wife’s favorite chicken wings. Me, I’m happy enough with just cooking them up on my Char-Broil The Big Easy TRU-Infrared Oil-less Turkey Fryer using the Wingin’ator 3000 modification. But, that being said, I also love these crunchy almost-fried smoked chicken wings that require no frying at all. They have a tremendous smoky flavor, and a nice crunch. They are tender and juicy and can be made on a smoker (I use a Weber Smokey Mountain 18-1/2-Inch Charcoal Smoker) or over indirect heat on a charcoal or gas grill.

Almost-Fried Smoked Chicken Wings

A Simple Sauce Is All You Need

For the sauce I just threw a bunch of extras in with some BBQ sauce. It had a nice kick, but wasn’t crazy hot. It’s perfect for my almost-fried smoked chicken wings.

For the wings

  • Place wings into a large resealable container. Sprinkle with 1 tablespoon of rub. Seal and shake to coat. Refrigerate for 1 hour.
  • Fire up your smoker for 250 F smoking and add a few chunks of light wood, such as apple or hickory.
  • In a medium bowl, whisk the eggs, milk and 1 tablespoon of the rub.
  • In another medium bowl, combine the flour and corn meal and 2 tablespoons of the rub.
  • Working in batches, dip the wings into the egg mixture. Shake off the excess.
  • Then roll the wings in the flour mixture. Shake off any excess.
  • Transfer wings to the smoker.
  • Cook for 30 minutes at 250 F.
  • Very gently flip the wings and cook another 30 minutes.
  • Continue flipping (very gently!) every 30 minutes until the wings are done, about 2 hours.

For the dipping sauce

  • Warm the sauce in a medium sauce pan.
  • Whisk in the remaining ingredients. Adjust seasoning to taste.
  • Serve warm for dipping.

Notes

Serve with your favorite dipping sauce on the side, if desired.

I love chicken wings. Any flavor, any time, but in particular, I love wings with some kick. Not over-the-top, kick-me-in-the-gut hot, but just spicy enough to wake you up. These Cajun chicken wings with dipping sauce bring the heat thanks to Louisiana hot sauce.

  • Place the cream cheese, dressing and hot sauce into medium bowl.
  • Microwave for 1-2 minutes until melted.
  • Whisk mixture until creamy smooth.
  • Fold in the blue cheese.

Notes

The dipping sauce is also great using Ranch dressing.
