Grilled Philly Cheese-Steak

Wow, is about all I can say about this grilled Philly cheese-steak. Is it the same as or as great as the ones you can get at Pat’s or Geno’s in Philadelphia? Well, almost, and even better in its own way. And even better when done outside on the grill.

I fired up my ancient Weber Silver B gas grill with a griddle insert. If you don’t have a griddle insert for your grill get one. Weber makes them for just about every size grill they sell (and I have one for pretty much every grill I have). Check with your grill manufacturer. Chances are they have a griddle for your grill too. It’s worth every penny for everything from steak sandwiches to smash burgers to pancakes. Everything tastes better when cooked outdoors.

Grilled Philly Cheese Steak

Thin Beef Means Great Results

The key to this great grilled Philly cheese-steak sandwich is the super-thinly sliced ribeye steak. So tender, meaty tasty. It was really perfect. If you want to up your cheese steak even more try my deluxe version, made with beef tenderloin.

  • Place the steak into the freezer for 30 minutes or so until firm.
  • Slice super thin (I used a meat slicer on the thinnest setting).
  • Heat your grill or skillet over medium heat.
  • Add the butter and melt. Stir in the dry mustard.
  • Add the onion, pepper and mushrooms.
  • Saute until tender.
  • Season the beef well with the steak seasoning and add to the griddle or skillet.
  • Cook until the desired doneness is achieved (about 1 minute – do not overcook!), tossing once or twice.
  • Place the French bread onto a large piece of foil.
  • Layer the sandwich with steak, veggies and as much cheese as you want.
  • Wrap up the sandwich and place back onto the grill or into the oven under the broiler for 2-3 minutes or until the cheese has melted.
  • Cut into desired portions and serve.

Notes

You can make these great sandwiches on the grill using a griddle like I did, or just use a skillet on the grill or stovetop.

Grilled Cajun Ribeye

I was watching a new show on the Cooking Channel the other day about steaks. Who can pass up a show on cooking big ole hunks of beef over an open flame? The show, Steak Out with Kix Brooks, is hosted by Kix Brooks (duh!), of Brooks and Dunn country music fame. He travels around the country checking out popular steak joints. Steak after glorious steak. Like this one, from a very popular place, Chicago Cut Steakhouse. This is my take on the Chicago Cut’s grilled Cajun ribeye steak.

Grilled Cajun Ribeye

Perfect Steak With A Kick

To be fair, they use a massive, 24-ounce dry-aged steak that would put this one to shame, but mine turned out great too. The flavor is fantastic. A little heat (I used a spicy Cajun seasoning), and a whole lot of tender juicy meat.

Grilled Cajun Ribeye 2

One Nice Steak

The grilled Cajun ribeye steak looked amazing as it got happy in the marinade. Great color, thanks to the paprika and cayenne in the spice mix. My homemade mix since lets me adjust the flavors (in my case, hotter) to my own tastes.

I fired up my little Weber Smokey Joe using my mini charcoal chimney. In about 45 minutes I was enjoying a tremendous steak with a great open-flame char and flavor.

For the steak

Instructions

  • Lay the steak out on a cutting board.
  • Take a fork and stab the steak everywhere, all over, on both sides. Don't be shy. Stab it. A lot. Every inch of it.
  • Sprinkle the steak with the Cajun seasoning and stab some more. Get the seasoning down into every little hole.
  • Place the steak into a resealable container.
  • Add the onion and garlic, then add enough oil to just cover the steak.
  • Seal and let marinate for at least 24 hours.
  • Fire up your grill for direct cooking. You are going to cook the steak high and fast.
  • While you are waiting for the grill to warm up, place the steak onto a cookie rack to drain the oil. Flip it at least once to get any oil off that may pool on the top.
  • Place the steak over the hottest part of the grill and cook it quickly, turning once, to your desired temperature. Keep an eye on it as flare-ups will occur from any remaining oil.
  • Remove and let rest 5 minutes before serving.

Notes

I recommend using thicker cuts for this technique. High heat will overcook a thin steak very quickly.

Fire-Eater Mexican Corn

This is my take on grilled Mexican corn. Normally, you season the corn-on-the-cob with cayenne pepper. But I prefer something with a little more flavor but still has some heat. Steven Raichlen’s rub is the perfect mix for this Fire-Eater Mexican corn. The rub adds just the right amount of spiciness to corn. It’s also great on wings, and steak, and just about everything else!

Fire-Eater Mexican Corn

I’m Hooked On Spicy Corn

This Fire-Eater Mexican corn could easily wind up being my favorite way to cook fresh corn-on-the-cob. Creamy butter and cheese with a nice spicy kick. Very, very good and so easy! If you don’t have Cotija cheese, substitute queso blanco or crumbled feta.

Get yourself a good set of grill tools for this corn and anything else you grill. You won’t regret the extra few bucks they cost over the cheap ones that you’re going to have to replace in a few years. I have had several sets of Weber grill tools for decades and have yet to replace a single one.

Shot Glass Sliders

One of the latest fads is beer can burgers. They’re hollowed-out burgers stuffed with whatever you like, normally wrapped in bacon. Sort of like open-faced Juicy Lucy burgers. The BBQ Pit Boys do them up right as they do a lot of things. I decided to make my own twist on them. And since I prefer sliders over full-sized burgers, I went with a smaller version, my shot glass sliders.

I stuffed these lil bad boys with sauteed mushrooms and onions, then topped them with cheddar. They were flat-out delicious. The perfect little bites!

For the burgers

Instructions

For the stuffing

  • Melt the butter with the oil in a medium skillet over medium heat.
  • Add the remaining ingredients and cook, stirring often, for 20 minutes or until the mushrooms are golden and the onions are softened. Remove from heat.

For the burgers

  • Fire up your grill for indirect cooking.
  • Divide the beef into 6 2 1/2 ounce meatballs. Pack tightly so they stay together.
  • Take a shot glass and push it down into the middle of each ball, wrapping the meat around the outsides of the glass. Don’t press down so far that you puncture through the bottom – you’ll want about 1/3″ of meat all around. Push the glass down gently onto a flat surface to flatten the bottom.
  • Season the patties with salt and pepper and place onto the grill over indirect heat.
  • Grill until the meat is almost at the desired doneness, 45 minutes or longer.
  • Spoon in the mushroom topping and add the cheese.
  • Continue cooking until the cheese is melted.
  • Toast buns as desired.
  • Top buns with the sliders and serve.

Notes

You can use any stuffing you like, even just lots of cheese!

Grilled Hash Brown Patties

Hash browns are my favorite when it comes to precooked potatoes. Give me crunchy potatoes and I’m a happy guy. Please, don’t get mad at me because they weren’t made from scratch. This is an indulgence that I don’t readily admit to. A friend of mine recently told me about grilled hash brown patties. The idea was so simple and brilliant that I had to smack myself and say “doh”!

Grilled Hash Brown Patties

A Blank Potato Canvas

You can find the patties in your grocer’s freezer section, right by the other frozen potatoes. And you can top them with whatever you like, from just ketchup, to my favorites, cheddar and green onion and bacon and cheddar. I treat them like loaded baked potatoes. And they only take minutes to make.

These potatoes are the perfect as sides for the next time you fire up your grill. I tossed them onto my Weber and in minutes these grilled hash brown patties were done. They’re much easier than cooking regular ole hash browns. You know, the lose shredded potatoes one. I love those too, but they are definitely more work. Especially because I like potatoes golden brown and crunchy. Not like potato chip crunchy, but just some crunchy parts around the edges. A little texture to contrast the creamy potato.

A Little Help

I usually just put the patties directly on my grill. Without anything else to help them cook along. But sometimes I will add a pat of butter or a squirt of oil. Totally optional, but they can help get a little more crunch. Up to you. You can cook them without it, too.

Get yourself a good set of grill tools for these hash browns and anything else you grill. You won’t regret the extra few bucks they cost over the cheap ones that you’re going to have to replace in a few years. I have had several sets of Weber tools for decades and have yet to replace a single one.

Grill-Roasted Herb Potatoes

It’s getting hot out. That’s when I try to cook every meal outside, from appetizers to desserts and everything in between. I’m always on the lookout for a good tasty side dish that I can throw on the grill. Like these grill-roasted herb potatoes. They have a great herb flavor. But to really make them great, they’re cooked with (and topped with) French-fried onions. The added crunch and onion flavor really makes the potatoes shine. If you’re grilling a good thick steak, this is the side you’re looking for to complete your meat-and-potatoes meal.

Grill-Roasted Herb Potatoes

There’s No Shortage Of Flavor Here!

You could substitute any herb you have on hand for the thyme, such as rosemary or dill and these grill-roasted herb potatoes will still be fantastic. For me, thyme is a nice gentle-tasting herb to use. It’s not too overpowering yet I’m definitely still going to taste it.

And though the fried onions could be omitted, they add a great onion flavor along with a nice crunch to compliment the creamy soft potatoes.

Louisiana Burgers

These Louisiana burgers are absolutely incredible. They are the best burgers I’ve ever had. Wonderful grilled seasoned beef, kick’n pepper jack cheese, a creamy remoulade, crunchy red onion and my favorite, spicy homemade Tasso that just melts in your mouth. All on homemade buns. Without the tasso these are great burgers. With it, they are amazing.

Louisiana Burgers

Every bite of these Louisiana burgers is fully of fantastic flavor. If you don’t want to go through the ‘trouble’ of making tasso, I strongly encourage you to find some. Even if you have to drive to Louisiana. It’s special. The flavors are very concentrated so you won’t need much. It’s salty, spicy and lightly smoky. Perfect on a grilled burger.

I could’ve used some Kaw-Cajun Comeback sauce on these burgers, but I went with a bottle of Louisiana Fish Fry Product’s remoulade sauce instead. It has a nice zesty taste that is also great on po boy sandwiches. You can find it in your grocer’s southern foods section.

Charlie Mac Hot Dog

This is another (fantastic) copycat of a hot dog that you can grab from the Dougie Dog food truck in Vancouver, Canada. Nope, I’ve never been there. But, I saw the Dougie Dog truck on a recent episode of Eat Street on the Cooking Channel and fell in love with their menu. They have some crazy great dogs. Like this Charlie Mac hot dog. This is one creative delicious idea for a hot dog.

It pays to watch out for recipe ideas in places you might not expect. When I go to a restaurant, sure, I’m thinking about my hungry self at the moment. But later, I’m thinking about what on the menu I might want to make at home!

Charlie Mac Dog

My Goodness This Is One Great Dog

Everything about this Charlie Mac hot dog screams yummy. And I didn’t skimp on the buns, either. I picked up some fresh-baked hot dog buns from my local bakery, Taylor’s Bakery. All I have to do is call the day ahead and place my order. The next morning I’m picking up the most soft and fantastic smelling buns ever.

Cookin’ Dogs

Hey, cook the dogs however you want, on whatever you want. Griddle. Grill. Stovetop. Boiled. Broiled. Steamed. Baked. I don’t care. I don’t mean that in a snobby way. I’m just saying you do you. I happen to like air-fried hot dogs. I get a crunchy skin. And I like that. And I can throw the buns in too if I want them toasted (and I do). I often like to cut a thin slit lengthwise down my hot dog before cooking it. That slit’ll open up a bit as the dog heats. When I put it on the bun, I put the hot dog slit face-up. It gives the toppings a wonderful place to go. And stay. They don’t pop out with each and every bite!

Grilled Twinkies

You can grill just about anything and it’ll come out great. I grilled donuts and they were fantastic. Twinkies are no exception to the rule. Grilled Twinkies take only minutes to cook, so they make for a very quick and easy dessert you can make after grilling burgers or hot dogs. The Twinkies get a bit of a nice crunchiness on the outside. They have a slight grill flavor to them. The insides stay creamy, delicious. As simple as they are, they are very good.

Grilled Twinkies

Grilled Twinkies taste just like toasted marshmallows. They’re surprisingly tasty and highly addicting.

My homemade Neapolitan ice cream teamed perfectly with the Twinkies. They were also great drizzled with a bit of chocolate syrup and topped with toasted chopped pecans. Yummy! For a slightly different variation, try cooking the Twinkies on cedar planks instead.

I grilled these Twinkies on my Weber Q 1200, a small portable grill that is also absolutely perfect for cooking at home for two. It heats up fast, and is more efficient than my big gas grill.

Pulled Pork BBQ

I have a few books that I consider to be essential to cooking just about anything on my smoker. Such as pulled pork BBQ. Smoke & Spice by Chery Alters and Bill Jamison is definitely one of them. It is full of recipes and approaches on all things smoking-related. I cannot recommend it enough.

Two of the recipes from the book that I use whenever I smoke a pork butt or shoulder are the ones for the Southern Sucor rub and the Southern mop. The two combined produce pork with tremendous flavor and a fantastic bark.

Pulled Pork BBQ

I Love My Smoker

I cook my pulled pork BBQ on my Weber Smokey Mountain smoker. It’s easy to fire up. It’s easy to keep running at a steady temperature. And it comes in 3 different sizes to fit anyone’s needs.

Most of the pulled pork I made this time went onto sandwiches, topped with a fantastic roasted poblano slaw. But, I kept a bit around for making an out-of-this-world good pulled pork poutine and a few pulled pork hot pockets.

I cook my pulled pork BBQ on my smoker. It’s easy to fire up, easy to keep running at a steady temperature, and comes in 3 different sizes to fit anyone’s needs.

Ingredients

  • 7-8 pound pork butt or shoulder

For the Southern Succor rub (modified only slightly from Smoke & Spice).

For the Southern sop (modified only slightly from Smoke & Spice)

Instructions

  • Fire up your smoker to cook at 225 F. Use a lighter wood, such as hickory, apple or cherry.
  • Trim any large pieces of fat off the pork. You don’t have to be real picky about it, just get any large chunks.
  • Combine the rub ingredients. Rub all but about 2 tablespoons of the rub all over the pork.
  • Place the pork onto the smoker and cook until the meat reaches 185 F.
  • Combine the sop ingredients in a small saucepan over medium heat. Stir until dissolved.
  • Keep warm until ready to use.
  • Once the meat hits 185 F brush the sop onto the meat. I used a big basting mop.
  • Keep sopping every 5 degrees until the meat hits 200 F at which point you can remove the pork from the smoker.
  • Wrap it in foil and let it rest at least 30 minutes before shredding.

Notes

Leftover pork freezes well too.
