Can’t find daikon? You can make this pineapple mango daikon salad with jicama instead.

To make the pineapple halve I started with a fresh, perfectly ripe pineapple. I use a pineapple corer to remove the core. I found a great inexpensive corer over on Amazon. Then I cut off the rind and cut the pineapple in halves. It’s a quick way to make a ‘bowl’ for this or any fresh fruit-based salad.

  • 1 lime zested and juiced
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 1 jalapeno seeded and finely diced
  • kosher salt
  • freshly ground black pepper
  • 2 mangos peeled and chopped
  • 1 large daikon radish peeled and grated
  • 1 bunch cilantro chopped
  • 1 pineapple peeled, cored, halved, each half then cut into 3 equal rounds (like little ‘boats’). Note: Wait until the above ingredients have chilled 30 minutes before cutting the pineapple.

Instructions

  • Whisk together the lime juice and zest, vinegar, honey, jalapeno, and salt and pepper to taste in a large bowl.
  • Add in the chopped mango, daikon and cilantro.
  • Stir and refrigerate for 30 minutes.
  • To serve, spoon mango mixture into the pineapple boats.

Notes

Best served immediately.

Grilled Corn Disks with Honey Butter

July 4th marks the beginning of corn season here in Indiana. It’s when the best corn starts to become available at our local farmer’s markets. Nothing beats fresh sweet corn (especially if it’s from My Dad’s Sweet Corn)… unless you have something even sweeter to put on it. These grilled corn disks with honey butter are easy to make and look and taste great.

Great. Now I’m Addicted To Corn Disks.

If you want to add more kick the honey butter on these grilled corn disks with honey butter, add a pinch or two of cayenne pepper and throw a few jalapeno rings in with them. Either way, they’re highly addicting. I eat them like popcorn. Weird, you cut corn into little disks and all of a sudden I can eat twice as much corn as I normally would. They are definitely delicious.

I recommend that you use a grill basket when making this dish. It makes cooking easier. And cleanup is easier too!

For a little kick, I also like to make my grilled corn with ancho chili butter.

Deluxe Creole Pasta Salad

Our post on a peas and pasta salad has been the most popular post on Life’s A Tomato for a long, long time. We make it often. Well, I was reading through Paul Kirk’s Championship Barbecue: Barbecue Your Way to Greatness With 575 Lip-Smackin’ Recipes from the Baron of Barbecue when I came across this recipe for Creole pasta salad. I knew it would be a hit. It has everything in it that we love, from crunchy celery, to salty olives, to a great buttermilk dressing. I made a few minor changes to the recipe and made up a big batch. Oh, how it was sooo good. It was even better the next day after the olives got happier in the dressing, giving the entire salad a nice lightly salty olive flavor.

Don’t Fear The Leftovers

If the salad gets a little dry the next day, stir in a little extra buttermilk or mayonnaise. And then give it a good stir.

Paul Kirk’s book is amazing. I can’t recommend it enough. It has recipes for everything from sauces, to meats, to wonderful salads like this one.

I almost always use Blue Plate mayonnaise in the dishes I make. I think it is the best around. If you can’t find it locally you can pick it up online for a fair price.

Grilled Hawaiian Hot Dogs

I love Hawaiian pizza, so it wasn’t too much of a stretch to put some of the same ingredients on top of a grilled hot dog. Grilled (I made them on my trusty Weber grill) Hawaiian hot dogs are a combination of sweet and heat, my favorite. You don’t need anything else on these. No sauce or anything like that. The juicy pineapple takes care of that.

Buffalo ABTs

I’m not sure when this idea hit me. I was probably sleeping, dreaming away… In my dream I dreamed of Buffalo wings. A big batch of tasty, hot Buffalo wings. And then, I started dreaming of ABTs (bacon-wrapped stuffed jalapenos)… tasty, cheesy… with just a little heat. Then POW! I woke up and thought Buffalo ABTs (also known as atomic buffalo turds)!

So I made them.

The Perfect Kick

And they were really, really good. So good that I made Buffalo ABTs several times in one week. Jalapenos lose a lot of their heat when slow cooked for an hour or two. They still have a little bite, but are more like a poblano than a hot pepper.

Use whatever heat level of Buffalo sauce you prefer. Me, I went with hot!

The stuffing for the Buffalo ABTs is fantastic, and also makes for a great dip for celery or chips. You can also chop up the entire ABT (jalapeno and all) and use in a grilled cheese sandwich.

  • 1 8 ounce cream cheese softened
  • 2-3 tablespoons Frank's RedHot sauce plus more for brushing
  • 3-4 tablespoons celery chopped
  • 1-2 tablespoons Blue cheese crumbled
  • 8 large jalapeños halved, seeded
  • 16 slices bacon about a pound

Instructions

  • Preheat your grill to 250 F for indirect cooking.
  • Combine the cheese, wing sauce, celery and blue cheese. Add more sauce, celery or blue cheese as desired.
  • Spoon cheese mixture into jalapeno halves.
  • Wrap each jalapeno half with a piece of bacon.
  • Brush bacon with more wing sauce.
  • Cook over indirect heat for 1 1/2 hours – 2 hours until the jalapenos have softened, the bacon is done (but not really crispy), and the cheese is nice and bubbly.

Notes

Serve with ranch or blue cheese dressing for dipping.

Grilled Hot Dogs with Hot Creole Blender Sauce

Grilled hot dogs with hot Creole blender sauce is the bomb. It’s mustardy and a bit hot (as you kinda figured). And there’s bacon. The bacon and sauce really compliment each other perfectly. The sauce would also make for a fantastic dipping sauce for corn dogs now that I think about it. Actually the sauce would be great anywhere you normally use mustard. Just use this sauce instead.

Creole Mustard For The Win

I used Zatarain’s Creole Mustard to make the sauce for these grilled hot dogs with hot Creole blender sauce. It is my favorite mustard by far. I love it so much I have a subscription for it on Amazon. I can’t even think of what would happen if I ran out of it. So, I have to keep it on hand at all times! You can substitute a good grainy mustard too.

No Peppadews? No Problem

You’ll need peppadew peppers to make the sauce. If you can’t find peppadews, you can substitute roasted red peppers, with a bit of hot sauce added for kick. In a big pinch you can substitute some well-drained pimentos.

Notes

I like to make a shallow cut lengthwise down my dogs before cooking. The slit opens up a bit during cooking, allowing toppings to settle in so they don’t fall out when you take a bite!

French Onion Hot Dogs

Yeah, now we’re talking about some great hot dogs! Savory and sweet. All-beef dogs smothered in caramelized onions (well worth the 30 or so minutes they take to make), melted Swiss cheese, and topped with thyme. French onion hot dogs are amazingly tasty, and a taste unlike your standard yellow mustard dog. You’ll be very happy devouring one of these.

I used Vidalia onions for a little sweeter flavor, but any sweet or white onion will do on these French Onion hot dogs. Shallots would be great too, though you’re going to need a good handful or two of them. In a pinch, red onions will work just nicely also.

  • Heat enough oil to cover the bottom of a large skillet over medium-high heat.
  • Halve the onions and slice thin.
  • Add to skillet and stir to coat in oil.
  • Spread the onions out and let cook for 10 minutes.
  • Stir in the sugar and a few good pinches of salt.
  • Let the onions cook for about 30 minutes, making sure they don’t get dry (if they do, add a bit more oil). Do not stir them too much, the idea is get them good and browned and soft.
  • When the onions are just about done add a few splashes of balsamic vinegar, to taste. Stir.
  • Cook dogs as desired and lightly toast the buns if you wish.
  • Place dogs into buns.
  • Divide the onions and cheese between the dogs.
  • If you want the cheese to get good and melted, throw the dogs under the broiler for a minute.
  • Sprinkle tops with thyme and serve.

Notes

I liked to cut a shallow slit down the length of my dogs before cooking. They split open slightly, letting the toppings stay put when you take a bite!

Grilled Cheesy Hot Dogs with Spicy Onions

Well, you know I like a little heat with everything. It doesn’t have to be overpowering, just some heat. A little spiciness. I don’t do bland. These grilled cheesy hot dogs with spicy onions take no time at all and have just a little kick from the onions. Kick in onions? Well, they got some help from some smoky chipotles with a little of the kicked-up adobo sauce they come in. Chipotles are a great way to add heat to any dish without going too far with it.

On occasion, our local grocery store has foot long hot dogs and buns. For some reason, I really love foot long dogs. Sweet-and-Sour Meatball Skewers

Perfect as appetizers or even a main dish, these sweet-and-sour meatball skewers pack a lot of flavor into every bite. They grill up quick and disappear even quicker. I used Captain Jim’s Molten Orange Ambrosia (sadly, no longer in business. You’ll want to use a tropical-flavored hot sauce with orange, pineapple or coconut for example) hot sauce to give these meatballs an extra kick, but no so much as to completely hide the sweetness of the peppers and the jam. You’ll love the contrast between the tender juicy meatballs and the roasted slightly-crunchy peppers. That’s what really sets these apart from the classic boring meatballs.

Sweet-and-Sour Meatball Skewers

You can leave out the hot sauce if you are using a spicy BBQ sauce. But, if your BBQ sauce is on the sweet side, you’ll need some heat or this dish will be a bit on the sweet side. Or you can make these sweet-and-sour meatball skewers both ways. That way you’ll satisfy the sweet crowd. And the spicy crowd. Now that’s a win for sure!

  • In a small saucepan over medium heat, combine the jam, barbecue sauce and hot sauce to taste. Bring to a simmer, stirring occasionally.
  • Brush glaze onto the meatballs and peppers, put onto the grill, and let cook for 5 minutes.
  • Flip the skewers over, glaze, and cook another 5 minutes.
  • Glaze the skewers one last time and serve.

Anything on a stick is fun to eat. Especially if there are BBQ sauce and cheese involved. These spiral hot dogs are served with a queso dipping sauce that has the added bonus of being a fantastic dip for tortilla chips.

Adding Worcestershire sauce to BBQ sauce really adds a great flavor to these spiral hot dogs with queso sauce. People are expecting straight-up, normal BBQ sauce. Instead they get a nice surprise when they take that first bite. Try it at least once without the cheese. Then take that tasty dog and dunk it (deep) into that queso sauce and you’ve got a dog to remember. The spirals will help keep both the BBQ sauce and cheese sauce on the dogs. Not on the plate. That doesn’t do you any good. You want them in every bite!

For the queso sauce

  • ¼ pound Velveeta cut into 1/2-inch cubes
  • ¼ cup milk
  • ½ cup tomatoes chopped and seeded. Or substitute 1/2 cup canned petite diced tomatoes, drained
  • 1 tablespoon reserved barbecue and Worcestershire mix from above
  • Hot sauce to taste (optional)

Instructions

For the dogs

  • Combine the barbecue sauce and Worcestershire sauce. Reserve 1 tablespoon of the mixture for the queso sauce.
  • Place a hot dog on a flat surface.
  • Hold a knife at a 45 degree angle to the dog, and insert into the dog 1/8″. Rotate the dog slowly, making an incision as you go.
  • Repeat with remaining dogs.
  • Carefully thread dogs onto the skewers.
  • Place hot dogs over a hot grill. Cook for a few minutes then rotate.
  • Once the dogs are nearly done, with a nice char, brush with the barbecue sauce mix and grill a little longer.
  • Serve dogs with the queso sauce, for dipping.

For the queso sauce

  • Place Velveeta and milk into a small sauce pan over medium heat.
  • Stir often until the cheese has melted.
  • Reduce the heat and stir in the tomatoes, reserved barbecue and Worcestershire mix, and hot sauce, if desired.
  • Keep warm until ready to use.

Notes

Double the queso dip and have plenty left for dipping tortilla chips.
