Sonoran Hot Dogs

I’ve been known to put baked beans on my hot dogs. Kind of like a handheld version of beans and weenies. These Sonoran hot dogs take that idea to a different level, adding the kick of hot sauce, fresh tomato and onion, and using pinto beans instead of baked beans. The result is a nice combination of flavors and textures, from the bite of the mustard to the soft beans to (one of my favorite on hot dogs) the mayonnaise.

Sonoran Hot Dogs

A Wonderful Taste Combination

Authentic Sonoran dogs are served on Bolillo rolls. I couldn’t find any Bolillo rolls near us, but these dogs still come out great on large hot dog buns. Little ole buns aren’t able to handle these toppings. Get some big buns and load them up.

Even more authentic versions of Sonoran dogs use bacon-wrapped hot dogs, along with other fantastic southwestern ingredients. Now there’s an idea worth trying!

I used one of my favorite hot sauces, Louisiana Hot Sauce, on these dogs. It’s not over-the-top hot. It’s spicy, but it’s about great flavor. That’s what a good hot sauce does. It doesn’t make you cry, it makes you happy!

Adobo Ribeye Steak with Fried Poblano Strips

As much as I grill (pretty much twice a day), I actually don’t cook that much steak. My wife’s not much into steak, and I’m usually more of a beef burger or pork kinda guy. But, that doesn’t mean I don’t appreciate a really great grilled steak. In fact, I think I look forward to a steak more now that I don’t eat them on a regular basis. It’s like a reward. And in this case, a big reward. I loved making (and devouring) this adobo ribeye steak with fried poblano strips.

Adobo Ribeye Steak with Fried Poblano Strips

Choose a Great Cut of Meat

I found a lovely marbled thick ribeye on sale at the local grocery and used it for this dish. It came out so tender, and juicy and flavorful, with a nice rich color. It is one of those steaks that I’ll look back at and remember and smile… and drool.

Fantastic Flavors

The marinade on this steak has tremendous flavor, thanks to the chipotle peppers and adobo sauce. The smoked jalapenos add such a great spicy kick. This marinade would be great (and is, because I tried it later) on chicken breasts or pork tenderloin (for sliders). I made chicken sandwiches from the breasts that I marinaded and grilled.

Adobo Chicken with Fried Poblano Strips

I served the steak and chicken sandwiches topped with a few fried poblano rings. They added a nice crunch, and kicked up the subtle heat with a bit more heat. Perfect.

Hot Dogs with Spicy Sauce and Grilled Onions

Simple and delicious. Like a grilled dog should be. Serve these hot dogs with spicy sauce and grilled onions at your next backyard get-together and people will wonder why they’ve just been squeezing mustard onto their dogs for all these years. The sauce is simple yet delicious. It packs just the right amount of spicy kick to let you know it’s there without scaring people off.

Hot Dogs with Spicy Sauce and Grilled Onions

Crazy Good Hot Dogs

I used one of my favorite hot sauces, Louisiana Hot Sauce, to kick these hot dogs with spicy sauce and grilled onions up a bit. Louisiana hot sauce has some heat and spice, but it isn’t overpowering at all. And it’s not overly vinegary like some hot sauces. For the BBQ sauce I used a spicy version for a nice extra kick. You could go light on both and still have a great hot dog.

Grilled Maple Bacon Donuts

You have the grill fired up (for me that’s usually my Weber). You just finished off a great dinner consisting of burgers, grilled corn-on-the-cob, a wedge salad, and some ice cold watermelon. It’s time for dessert. It’s time for some grilled maple bacon donuts! Just toss a few glazed donuts on a hot grill for 1 or so minutes per side. Just long enough to get them warm and get some pretty grill marks. Then, top them with a little maple syrup. Just enough to get that wonderful maple flavor. And of course, you want a bit of crunchy, smoky bacon. Now you’re ready to eat!

Grilled Maple Bacon Donuts

Dessert Elevated

I used maple syrup oh my grilled maple bacon donuts, but you know these treats would be just as great with chocolate or fudge syrup and chopped toasted nuts. Or anything, really. NOTHING is as good as a grilled glazed donut. Nothing. Well, maybe you could use a bear claw. Or an eclair. Oh man, an eclair! Ok, that’s what I’m making next!

Grilled Corn Disks with Honey Butter

July 4th marks the beginning of corn season here in Indiana. It’s when the best corn starts to become available at our local farmer’s markets. Nothing beats fresh sweet corn (especially if it’s from My Dad’s Sweet Corn)… unless you have something even sweeter to put on it. These grilled corn disks with honey butter are easy to make and look and taste great.

Grilled Corn Disks with Honey Butter

Great. Now I’m Addicted To Corn Disks.

If you want to add more kick the honey butter on these grilled corn disks with honey butter, add a pinch or two of cayenne pepper and throw a few jalapeno rings in with them. Either way, they’re highly addicting. I eat them like popcorn. Weird, you cut corn into little disks and all of a sudden I can eat twice as much corn as I normally would. They are definitely delicious.

I recommend that you use a grill basket when making this dish. It makes cooking easier. And cleanup is easier too!

Buffalo ABTs

I’m not sure when this idea hit me. I was probably sleeping, dreaming away… In my dream I dreamed of Buffalo wings. A big batch of tasty, hot Buffalo wings. And then, I started dreaming of ABTs (bacon-wrapped stuffed jalapenos)… tasty, cheesy… with just a little heat. Then POW! I woke up and thought Buffalo ABTs (also known as atomic buffalo turds)!

So I made them.

Buffalo ABTs

The Perfect Kick

And they were really, really good. So good that I made Buffalo ABTs several times in one week. Jalapenos lose a lot of their heat when slow cooked for an hour or two. They still have a little bite, but are more like a poblano than a hot pepper.

Grilled Hot Dogs with Hot Creole Blender Sauce

Grilled hot dogs with hot Creole blender sauce is the bomb. It’s mustardy and a bit hot (as you kinda figured). And there’s bacon. The bacon and sauce really compliment each other perfectly. The sauce would also make for a fantastic dipping sauce for corn dogs now that I think about it. Actually the sauce would be great anywhere you normally use mustard. Just use this sauce instead.

Creole Mustard For The Win

I used Zatarain’s Creole Mustard to make the sauce for these grilled hot dogs with hot Creole blender sauce. It is my favorite mustard by far. I love it so much I have a subscription for it on Amazon. I can’t even think of what would happen if I ran out of it. So, I have to keep it on hand at all times! You can substitute a good grainy mustard too.

No Peppadews? No Problem

You’ll need peppadew peppers to make the sauce. If you can’t find peppadews, you can substitute roasted red peppers, with a bit of hot sauce added for kick. In a big pinch you can substitute some well-drained pimentos.

Deli Hot Dogs

I wasn’t really skeptical about how these deli hot dogs would turn out. Well, maybe a bit. I wasn’t sure how the egg salad would taste on a hot-off-the-grill all-beef dog.

Well, my worries were unfounded because the combination is wonderful. I used well-chilled egg salad, which contrasted perfectly with the hot grilled hot dog. The black pepper is a must. It gives just a little ‘bite’ to contrast the creaminess of the egg salad. Sure, I’ve had many a hot dog with egg salad on the side. And I never made the leap and actually put it ON my hot dog. Well, not only does this approach save on plastic forks at a picnic, it’s delicious!

Deli Hot Dogs

Dill-licious

I topped the deli hot dogs with dill pickle relish. I have a thing about dill pickles and relish. They have to be COLD. I love that crunch and I want it cold. Like almost icy cold. The vinegar and the crunch are great contrasts to a hot, beefy hot dog. I like to load up on the relish.

Mr. Potato Head

I actually met someone once that didn’t like egg salad. I don’t remember his name. Well, I figured, we probably aren’t going to be life-long friends. We’re starting out wrong already. Ok, I’m kidding. But if you don’t like egg salad, there’s no reason you can’t use potato salad instead. I probably wouldn’t grab the stuff with huge chunks of potato in it. Little bite-sized ones would be perfect. You still gotta fit the hot dog in your mouth!

Stick ‘Em

I like to cut a slit lengthwise down my hot dog before I cook it. It opens the hot dog up a bit. When I put it on the bun (cut-side up), it gives the toppings (no matter what they are) a great place to go. And stay. You can also use a hot dog cutter.

Bacon-Wrapped Sriracha Onion Rings

These bacon-wrapped Sriracha onion rings are absolutely crazy good. The Sriracha caramelizes a bit as the bacon crisps over a sweet Vidalia onion, leaving you with a fantastic sweet heat. I’m a huge fan of Vidalias, always snatching up as many as I can while they are in season. And who doesn’t like Sriracha and bacon? It’s like having everything you ever dreamed of in one bite.

Bacon-Wrapped Sriracha Onion Rings

Easy. And Delicious.

There are a few variations of these bacon-wrapped sriracha onion rings out on the web. I settled on this one because it’s pretty straightforward. I’ve seen some recipes that like to sprinkle the rings in brown sugar before cooking. I’m pretty sure you’ll end up with a sticky mess on the grill if you do.

You can also make these in an oven. Just place the rings onto baking racks over baking sheets that are lined with aluminum foil and bake at 350 F (keeping an eye on them as they cook).

The key to these is to cut your onion rings thick (at least 1/2″), and use good, well-shaped thin sliced bacon. I use Indiana Kitchen brand bacon because the slices are generally all nice and rectangular. You don’t want a skinny piece of bacon that’ll shrink up and fall off your onion ring!Keep the leftover inner onion rings and make a fantastic Vidalia onion dip.

  • Squeeze some Sriracha into a bowl that’s just big enough to fit an onion ring.
  • Place the ring into the sauce. Using your fingers, spread the sauce all over the ring. Flip the onion and repeat. Get it coated, but not drenched.
  • Wrap bacon around the rings. Don’t wrap too tightly since the bacon will shrink. Don’t wrap it too loose or it’ll fall off.
  • Brush (or just use your fingers) more Sriracha on the outside of the bacon.
  • Place the rings on your grill over indirect heat.
  • Grill the rings until the bacon just starts to crisp. Gently flip them (I used a grill spatula) and cook another 10-15 minutes. Remove to a baking sheet and let firm up a bit.
  • Serve with dipping sauce.

For the dipping sauce

  • Whisk together all ingredients except the milk.
  • If the mixture is too thick, add a splash of milk, whisk, and add more as needed if it is still too thick.

Notes

It takes a while to get the bacon just perfect on these, but it’s a fun and tasty treat and worth the trouble!
