Cherry Doctor Pepper Pulled Pork

Everyone ranted and raved about this Cherry Doctor Pepper pulled pork. It was so incredibly tender and juicy, it melted in their mouths. I have smoked a lot of pork, but I can honestly say this was at least as good as the best I’ve ever made. It does not have a strong cherry flavor, just a hint. The Dr. Pepper adds a nice flavor and a lot of moisture. The overnight rub is also important. As simple as this recipe and smoke is, the end result is amazing. That’s the best kind of BBQ. Nothing complicated, just great eats.

If you’re sitting in your lawn chair enjoying a BBQ sandwich and it takes more than 3 minutes to tell the story about what ingredients you used and how you smoked it, it’s too complicated. At least that’s my thinking. Spend your time with your friends, not in the kitchen or over the smoker. Of course, you can also make this pork the day ahead. Ditto the sauce.

Cherry Dr Pepper Pulled Pork

To Foil Or Not To Foil

I opted to foil the pork at the end of the cook. This is not something I normally do, as the pork tends to not get much of a thick ‘bark’. But the Cherry Doctor Pepper pulled pork really came out fantastic anyways. You can skip the foiling if you wish, but expect a longer cook time.

Don’t forget to make a big batch of Cherry Doctor Pepper BBQ sauce to go with the pork. I served ours up on toasted onion buns, with the sauce and fresh-made slaw on the side. It was the perfect dinner basket!

  • Place each butt on a large piece of aluminum foil. Squirt all sides of each with yellow mustard. Do not be shy with it.
  • Sprinkle all sides with the rub. Again, don’t be shy with it.
  • Sprinkle a bit of brown sugar on all sides and rub in. This step is optional if you are using a sweet rub.
  • Pour a bit of Dr. Pepper into a spray bottle and lightly spritz all sides of the pork.
  • Tightly wrap the meat in the foil and place on large sheet pans in the fridge overnight.
  • Fire up your smoker or grill for cooking 225 F to 250 F. Add a bit of fruit wood once it is fully lit.
  • While waiting for the smoker to come up to temperature, inject each butt with more Dr. Pepper. Again, don’t be shy with it.
  • Place pork onto the smoker fat-side up.
  • Mist the pork with additional Dr. Pepper every two hours. Cook 1 to 1 1/2 hours per pound or until the pork reaches 175 F when tested in multiple places with an instant-read thermometer.
  • Remove pork from the smoker and place into aluminum half pans. Add 1 cup of Cherry Dr. Pepper to each pan. Cover with foil and return to smoker until meat temperature reaches 205 F.
  • Drain any fat and excess liquid from the pans and uncover and cook a bit longer, until temperature returns to 205 F.
  • Remove butts and cover in foil and let rest 30-45 minutes.
  • Shred pork as desired and serve with the BBQ sauce on the side.

Buffalo Hot Dogs

Wow, I was blown away by these Buffalo hot dogs. They’re crazy easy to make, but they have a little wing-like kick (thanks to plenty of Frank’s RedHot sauce) and the blue cheese absolutely go great with hot grilled all-beef hot dogs. Wing sauce on a hot dog is a great thing. Skip the ketchup.

Grilled Strawberry Shortcake with Lemon Cream

My goodness, what a great dessert this grilled strawberry shortcake with lemon cream is. Grilled pound cake is a delicious thing. Top it with a homemade lemon cream and grilled strawberries and you have something truly special. I made the fantastic lemon cream sauce by hand, as stated in the recipe, but you could shortcut it and just whip some lemon zest and vanilla extract in with some store bought whipped topping.

Grilled Strawberry Shortcake Lemon Cream

Keep An Eye On Them

The pound cake doesn’t take long to get grill marks and a light little crunch along the edges, so don’t leave it unattended on the grill (I use my Weber grill). You want grilled strawberry shortcake with lemon cream, not burnt. A few more seconds and I would’ve let mine go too far. I did want a bit of a bite to the cake when I bit into it. I think it’s a nice contrast to the cream. And that grill adds a nice flavor, too.

All the great flavor of the famous McDonald’s Big Mac, in a smaller package. These grilled Big Mac sliders are the perfect bites for a party. And actually, they’re great for dinner too. Grilled Scalloped Potatoes

Nothing beats cooking on the grill (I used my Weber charcoal grill). Great flavors and easy cleanup. Like this awesome grilled scalloped potatoes dish. Super cheesy, mushroom-y and buttery. Made in a foil packet, you won’t have to worry about a mess. Just sit down and enjoy a fantastic side dish!

Grilled Scalloped Potatoes

Make Room! Potatoes Coming Through!

This recipe for grilled scalloped potatoes doubles easily, just make sure you have space on your grill for the extra packets. If you don’t, that’s ok. Just cook them in batches. The potatoes will stay warm in the packets as you cook the remaining ones.

If you don’t want to use foil packets you can cook these in disposable aluminum pans. Just cover them tightly with foil when you cook them. You might also want to spray them with a bit of non-stick spray before cooking.

I use a mandolin to cut my potatoes thin. When I first started cooking I was afraid that I’d lop off a finger with a mandolin. Practice makes perfect and I still have all of my digits! You can use a knife instead of course, but try to keep the slices a consistent thickness so that the potatoes cook evenly.

A Word Of Caution

When you’re all done and ready to serve your potatoes, don’t go all crazy with a spatula or spoon digging them out of the foil. Don’t get in a rush and dive in and poke a hole through the bottom of the packet. Things go back from then on. And the last thing you want is for foil pieces to get in your potatoes. If you have some ‘stickage’ at the bottom of the packs, you might be better off just lightly scraping the contents off and onto a serving platter. Then toss the foil never to worry about it again!

Grilled Sausage with Potatoes and Green Beans

I’m a big fan of grilled packet dishes. Anything from simple sides to entire meals can be made quite easily in an aluminum foil packet. They don’t always look fru-fru, but they always taste great, like this grilled sausage with potatoes and green beans. The beauty of this packet meal (and really any packet meal) is that as everything cooks together the flavors all blend together. The sausage seasons the potatoes and beans. The potatoes get some of that bean love. In the end, its a packet of food happiness!

Grilled Sausage with Potatoes and Green Beans

Nothing Boring Here.

This meal-in-a-packet idea really has great flavor. The sausage, beans, potatoes and onion all steam and cook up together, creating a nice broth. Grilled sausage with potatoes and green beans isn’t anything fancy, but it’ll fill you up and it tastes great. And it’s easy. Very easy.

I sprinkled this with smoked black pepper for a little added flavor. The pepper is not crunchy or overwhelmingly strong, it just adds a nice little smoky taste as it cooks down inside the steamy packet.

Grilled Cincinnati Hot Dog

Ah, hot dogs. One of my favorite things. And you can put almost anything on them. Lately, I’ve been making more traditional hot dogs, such as the Boston hot dog, or the Chicago dog. Like the others, this grilled Cincinnati hot dog is very tasty, and very easy.

Grilled Cincinnati Hot Dog

Real Cincinnati Chili Is Required

The key to a great grilled Cincinnati hot dog is to use real Cincinnati chili, which has a hint of cinnamon. I used some chili I picked up from Skyline Chili. If you don’t have a Skyline Chili near you, check the canned chili section of your local grocery store as Skyline also sells a canned version of their famous chili but you can also make my slow cooker Cincinnati chili.

Grilled Boston Hot Dogs

Ya know, I love hot dogs. Any way, any time. After recently making some grilled Chicago dogs and Seattle Dogs, I decided I had to make grilled Boston hot dogs next. They’re super easy, and very, very tasty. These are not some wimpy, skimpy-on-the-toppings hot dogs. So don’t grab some wimpy el cheapo hot dog buns to serve them on. Grab those big deli ones. The strong ones. You’ll need them!

Grilled Boston Hot Dogs

The Perfect Combination

You can’t beat the combination of hot dog relish, baked beans, chopped onions, mustard, and ketchup. There’s an explosion of flavor in every bite, but they’re still simple dogs. You could easily throw all of the ingredients into a small cooler and head to the local park and grill up a quick tasty lunch.

Great Party Bites

You can make a whole lot of these without making a big fuss. They’re a great way to fee everyone while you’re off grilling the main dish.

For little kick, substitute Sriracha sauce for the chili sauce. Any good thick sauce will work just great on these glazed kielbasa bites. Thinner sauces will not adhere well enough to stay around long enough to add flavor. Thicker is better.

The Chicago Dog

Whenever I go out for a gourmet dog at DJ’s Hot Dog Company (sadly now closed), I always grab the Chicago Dog. I love the crunchy vegetables, celery salt, and of course, the neon pickle relish. Now, thanks to Russell van Kraayenburg’s new book, Haute Dogs, I am able to make an equally fantastic version of this classic hot dog (and many others) at home. If you’re into hot dogs like I am, you’ll enjoy the many recipes in the book.

The Chicago Dog

It’s Like Having A Tasty Dog Salad

Make sure you make more than one of these Chicago dogs because you can’t just eat one. I always think ‘fresh’ when I have one of these dogs. There’s lots going on in every bite. Fresh things. I feel good about eating a hot dog. Kinda odd, but that’s how it is. They just make me happy!
