Big Dogs Big Flavor

I used large all-beef dinner dogs to make this grilled San Antonio hot dog. Bigger dogs make for more flavor. And they cover the buns from end-to-end, side-to-side. My goodness, how I get sad when I see tiny wieners on a big ole bun. Your first four bites are nothing but bun! We aren’t having buns! We’re having hot dogs on buns! And while we’re on the subject of sadness, why is it so hard to find a package of hot dogs that matches the number of buns in a package? Can we get some coordination on that? 8 dogs? 8 buns!

Grilled Cincinnati Hot Dog

Ah, hot dogs. One of my favorite things. And you can put almost anything on them. Lately, I’ve been making more traditional hot dogs, such as the Boston hot dog, or the Chicago dog. Like the others, this grilled Cincinnati hot dog is very tasty, and very easy.

Real Cincinnati Chili Is Required

The key to a great grilled Cincinnati hot dog is to use real Cincinnati chili, which has a hint of cinnamon. I used some chili I picked up from Skyline Chili. If you don’t have a Skyline Chili near you, check the canned chili section of your local grocery store as Skyline also sells a canned version of their famous chili but you can also make my slow cooker Cincinnati chili.

Grilled Boston Hot Dogs

Ya know, I love hot dogs. Any way, any time. After recently making some grilled Chicago dogs and Seattle Dogs, I decided I had to make grilled Boston hot dogs next. They’re super easy, and very, very tasty. These are not some wimpy, skimpy-on-the-toppings hot dogs. So don’t grab some wimpy el cheapo hot dog buns to serve them on. Grab those big deli ones. The strong ones. You’ll need them!

The Perfect Combination

You can’t beat the combination of hot dog relish, baked beans, chopped onions, mustard, and ketchup. There’s an explosion of flavor in every bite, but they’re still simple dogs. You could easily throw all of the ingredients into a small cooler and head to the local park and grill up a quick tasty lunch.

I used Hebrew National’s jumbo beef franks for these grilled Boston hot dogs. They have great flavor.

Seattle-Style Hot Dogs

Mmmmmm. Oh my goodness. Where have I been that I didn’t know that slathering cream cheese on a hot dog is just about the best thing ever? This simple approach to Seattle-style hot dogs is a fantastic way to jazz up your ‘usual’ hot dog.

Fancy. And Good.

I used pickled pepper rings, but you can substitute jalapenos instead for a little kick. To make your Seattle-style hot dogs look a bit out-of-the-ordinary, cut a ‘+’ pattern in the ends before tossing them onto the grill. The ends will separate and give the dogs a different look. You can also cut them into spirals and amaze everyone (plus they hold ingredients better!).

These are delicious hot dogs with a great twist that everyone will enjoy.

  • Fire up your grill for direct cooking.

  • Place over direct heat and cook until softened. Remove.

The Chicago Dog

Whenever I go out for a gourmet dog at DJ’s Hot Dog Company (sadly now closed), I always grab the Chicago Dog. I love the crunchy vegetables, celery salt, and of course, the neon pickle relish. Now, thanks to Russell van Kraayenburg’s new book, Haute Dogs, I am able to make an equally fantastic version of this classic hot dog (and many others) at home. I recently received a copy of Haute Dogs. It is chock full of hot dog ideas, along with other great recipes for things like fantastic relishes and yummy sauces. When I ran across this simple approach for sandwich roll hot dogs I just had to make them. Sure, they’re nothing fancy, but they look great!

If you can find foot-long hot dogs then you just need one dog per sandwich roll hot dog. Otherwise, just use two hot dogs for each roll. And don’t be shy when squirting the mustard and ketchup inside the rolls. No one will be expecting it.

I know it looks like a kinda crazy idea. But they are different and kinda cool, too. Everyone will be talking about them, that’s for sure!

  • Cut a “tunnel” the length of the rolls that is just large enough to accommodate the hot dogs. I used a jalapeno corer to do this, but a thin sharp knife will also work.
  • Squirt mustard and ketchup into the tunnel.

This is my go-to hot dog chili dog sauce. I let it slow cook for a while to get good and tender. And I also make a huge batch and freeze some for later. I have to have sauce on my dogs.

A Great Cookbook Find

I found this in The Real Chili Cookbook: America’s 100 All-Time Favorite Recipes. I found a copy at the Exit 76 Antique Mall for $3.50. Besides this recipe, I’ve made 5 or 6 of the chili recipes from the book and all have been fantastic. It’s one of the best finds I’ve made! As far as I’m concerned I more than got my money’s worth just with this chili sauce!

  • Brown the ground beef and drain.
  • Add onion and garlic and cook another 5 minutes.
  • Add remaining ingredients and stir.
  • Simmer until thickened, about 20 minutes. If the sauce gets too thin add a bit of water.
  • Note: You can also cover and slow-cook this sauce for a few hours if you wish. It comes out nice and tender. Cook it less for a chili sauce with a little more bite from the beef.
  • Update: I made this great sauce again over the weekend. Our grocery store was out of premium enchilada sauce, so I used a “lesser” brand. I ended up adding a good amount of hot chile powder to the mix, but it still came out fantastic.

Add a little diced jalapeno for a little kick.

Grilled Chicago Hot Dog

This is my take on a grilled Chicago hot dog. Now, don’t email me telling me I’ve broken some cardinal rule by grilling these (on my Weber grill!). I’ve had “real” Chicago dogs and love them. But if it’s not -45 F outside, I’m going to fire up a grill when I make some hot dogs. Nothing beats that great grill flavor. It just can’t be reproduced indoors. And that grill flavor comes thru in every bite. So yeah, these aren’t the true Windy City classic. But boy oh boy is it ever delicious!

Memphis-Style BBQ Hot Dogs

Nothing beats a good ole hot dog off the grill. And there’s no need to just heap on the mustard or relish and call it done. You can throw just about anything that’s in your fridge on a dog (including mayo!). These Memphis-Style BBQ hot dogs have that great down-south flavor from smoky bacon and barbecue sauce, topped with gooey cheese, and kicked up with green onions and jalapeno slices.

Choose A Good BBQ Sauce

I used a spicy BBQ sauce on these Memphis-style BBQ hot dogs. You can go with sweet or smoky, or whatever suits your fancy. To stick to the Memphis theme you’ll want a smoky sauce, preferably with hints of hickory. To really stick with that theme, you’d want to serve the sauce on the side as many Memphis BBQ joints do.
