Grilled Taco Hot Dogs

I kinda made these grilled taco hot dogs up on the fly. I was hankerin’ for some crunchy tacos. And I was hankerin’ for some grilled dogs. So, I married the two and well, the rest is history. Of course you can put whatever you want on these. I opted to go with what we usually put on our tacos. That means shredded lettuce. Pinto beans. Chopped onion. A little chopped tomato. And of course, shredded cheese. Oh and a few black olives too!

The Taco Meat Is Optional

There are two ways you could do these hot dogs. If you’re making taco meat for these tacos, just grill the dogs like you normally would. But, if you want to leave out the taco meat, sprinkle your dogs with taco seasoning first before grilling to give them a bit of taco flavor.

A little spicy Taco Bell ranch dressing gave these tacos a bit more kick.

Instructions

  • Cook the taco meat if you are using it.
  • Warm the shells per the package instructions.
  • If you are not using taco meat, sprinkle the dogs with taco seasoning.
  • Grill the dogs as desired.
  • Assemble the tacos by adding the meats (taco and dogs) followed by the toppings.
  • Drizzle with salad dressing if desired and serve.

Notes

Add a few splashes of taco or hot sauce too!

French bread pizzas like this southwest grilled chicken are also an excellent way to use up leftover or getting-ready-to-expire vegetables. I had some sliced onion and green bell pepper on hand from a dish the other night, so I threw them in. And I had a few jalapenos that definitely needed to be used up. So I seeded them, sliced them and added them in too! Just about anything will do as long as it’s not super wet and makes the pizza soggy!

Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound chicken breasts boneless, skinless, split horizontally then cut into thin strips
  • ½ medium sweet onion sliced
  • ½ medium bell pepper sliced
  • 1 tablespoon chili powder
  • ½ teaspoon kosher salt
  • 1 loaf French bread split horizontally
  • 1 cup pizza sauce
  • 1 cup shredded cheese I used an Italian blend

Instructions

  • Toss the chicken, onion, pepper, chili powder and salt in a medium bowl until combined.
  • If cooking on the grill, preheat grill to high and add chicken mixture. Cook, stirring, until the chicken is done and the vegetables are tender. (A grill basket will help keep you from losing any veggies between the grates.)
  • If cooking indoors, heat a large skillet over medium-high heat and add the chicken mixture. Cook, stirring, until the chicken is done and the vegetables are tender.
  • Place the bread on the grill over indirect heat for a few minutes until it starts to get crispy. If using the oven, place the bread under the broiler for a minute or two until crispy. Remove.
  • Spread sauce over both cut sides of the bread.
  • Add cooked chicken mixture.
  • Top with cheese.
  • Place back on the grill over indirect heat until the cheese is melted and the bread is crispy.
  • Or, place on a baking sheet under the oven broiler until the cheese is melted and the bread is crispy.

Notes

Slice and serve immediately.

Very Different And Very Good

You can make this pizza on a traditional crust. Or you can do like we did and use French bread. If you want a bit of heat, mix a little red pepper flake into the chicken mixture before spreading it into the bread. A bit different but fantastically different, we really enjoyed this New Orleans French bread pizza.

I highly recommend that you shred or grate your own cheese at home. Don’t buy the pre-shredded or pre-grated stuff. It has stuff added to it to keep it from sticking together. That ‘stuff’ affects how the cheese melts. Shred it yourself and use the good stuff.

Instructions

  • Preheat oven to 450 F.
  • Place bread in the oven for a few minutes until it gets just a bit crispy. Remove.
  • Heat oil in a large skillet.
  • Add the chicken and garlic cook for 3-5 minutes or until chicken is no longer pink. Do not overcook as the chicken will cook more in the oven.
  • Remove from heat.
  • Stir in the artichokes, peppers, olives, oregano and pepper and 1/2 cup of the cheese.
  • Spoon mixture onto the bread halves and sprinkle with remaining cheese.
  • Place in oven and bake 8-10 minutes or until bread is nice and crispy and the cheese is melted.
  • Place under the broiler for 1 minute to lightly brown the cheese if desired.

Notes

Also great with Swiss or mozzarella cheese.

New Jersey Italian Hot Dogs

Wow, what great hot dogs these New Jersey Italian hot dogs are. Fried potatoes and sausages and onions… well, you already know they’ll be good before even trying them. Italian seasoning adds great savory flavor. And last, a fantastic kick from Creole mustard (my favorite). I’m not sure just how Italian Creole mustard is but it works!

I used Ball Park’s new Park’s Finest Signature Seasoned beef franks and found them to have a great complementary flavor. They have a really nice seasoning, very much like a smoked sausage. I think good bratwurst would also be great for these New Jersey Italian hot dogs. But regular good ole beef hot dogs ain’t so bad either!

  • 2 tablespoons olive oil
  • 2 large russet potatoes peeled and cut into 1/2″ squares
  • 1 medium green bell pepper sliced into strips
  • 1 medium sweet onion sliced into strips
  • kosher salt
  • ground black pepper
  • ½ teaspoon Italian seasoning
  • 4 hot dogs
  • 4 hot dog buns you'll need buns that are larger than the usual hot dog bun. Bratwurst buns works great too!
  • Creole mustard or whole grain

Instructions

  • Heat oil in a large skillet over high heat.
  • Add potatoes. Spread them out evenly and let cook 2-3 minutes. Do not stir, you want them to brown.
  • Flip the potatoes and again cook 2-3 minutes, undisturbed. Remove.
  • Add the pepper and onion strips to the skillet.
  • Season with salt and pepper and cook, undisturbed, for 2-3 minutes. Flip and cook 2-3 more minutes without stirring.
  • Add the potatoes back to the skillet along with the Italian seasoning.
  • Stir, reduce heat to medium, cover and let cook 8-10 minutes or until the potatoes are softened.
  • Meanwhile, grill or cook your hot dogs and toast your buns, if desired.
  • Slather the buns with the mustard.
  • Add the dogs and top with the potato mixture.

Notes

Cut a long narrow slit in your dogs before cooking to give the toppings a great place to go!

Big Daddy’s Sloppy Joe Sandwich

Every once-in-a-while I get a hankerin’ for a big ole messy Sloppy Joe sandwich. I ate them often as a child. My tastes have changed since then, so the versions of Sloppy Joes I eat now are quite different. But, they are still super yummy, and just as importantly, messy. They don’t call them Sloppy for no reason, ya know? Big Daddy’s Sloppy Joe sandwich is the grown-up version of my childhood favorite.

Bold Flavors In Every Bite

The original version of this recipe for a Big Daddy’s Sloppy Joe sandwich came from Aaron McCargo Jr. He’s one of my all-time favorite chefs on the Food Network. Chef McCargo always created food with bold flavors, which is why I liked him. If you find a recipe of his I suggest you make it because it’s guaranteed to be delicious.

I like to use my good ole trusty Dutch oven to make this soup and pretty much darned near anything like it on my stovetop. It’s nice and big and sturdy. That extra weight helps it maintain and distribute heat perfectly. As an added bonus, it’s actually pretty easy to clean up too!

Sonoran Hot Dogs

I’ve been known to put baked beans on my hot dogs. Kind of like a handheld version of beans and weenies. These Sonoran hot dogs take that idea to a different level, adding the kick of hot sauce, fresh tomato and onion, and using pinto beans instead of baked beans. The result is a nice combination of flavors and textures, from the bite of the mustard to the soft beans to (one of my favorite on hot dogs) the mayonnaise.

A Wonderful Taste Combination

Authentic Sonoran dogs are served on Bolillo rolls. I couldn’t find any Bolillo rolls near us, but these dogs still come out great on large hot dog buns. Little ole buns aren’t able to handle these toppings. Get some big buns and load them up.

Even more authentic versions of Sonoran dogs use bacon-wrapped hot dogs, along with other fantastic southwestern ingredients. Now there’s an idea worth trying!

I used one of my favorite hot sauces, Louisiana Hot Sauce, on these dogs. It’s not over-the-top hot. It’s spicy, but it’s about great flavor. That’s what a good hot sauce does. It doesn’t make you cry, it makes you happy!

Fiesta Shrimp Tacos

I usually make most of our meals from scratch, but sometimes I just don’t have the time. I scrounged around in the freezer and found a box of pre-cooked popcorn shrimp. Then I took a gander around the SeaPak website and came across this contest-winning recipe for great fiesta shrimp tacos. I had everything on hand except an avocado. I made a quick trip to the grocery store and I was set.

  • 18 ounces popcorn shrimp such as SeaPak® Popcorn Shrimp
  • 10 flour tortillas heated
  • 1 pound coleslaw mix
  • 8 ounces white cheddar cheese shredded

  • Serve with a lime wedge for squeezing over the taco.

Crazy Good Hot Dogs

You could go light on both and still have a great hot dog.

For the sauce

Instructions

  • To make the sauce, combine all ingredients except the beer in a medium saucepan over medium heat.
  • Add just enough beer to slightly thin the sauce.
  • Let sauce simmer while you cook the dogs, stirring occasionally. Add more beer if the sauce is too thick.
  • Grill the onions until just soft.
  • Grill the hot dogs and toast the buns.
  • Serve dogs on buns slathered with the sauce and topped with the onions.

Notes

I like to cut a thin shallow slit down the lengths of my hot dogs before cooking. The cut will open up as the dogs cook, giving the toppings a place to go.

Hot Mess Cheeseburgers

These crazy-good Hot Mess Cheeseburgers remind me a bit of one our favorites, pimento cheeseburgers. This kicked-up version comes from Chris over at Nibble Me This, a fantastic blog to follow. I highly recommend you pay Chris a visit. You’ll find other wonderful dishes like this one. We devoured this yummy burgers in no time. The cheese topping is fantastic. It’s definitely the star of the show!

I used a mix of whatever cheeses I had on hand to make Hot Mess cheeseburgers. You don’t have to get picky. No matter what you use these burgers will turn out fantastic. Lots of cheese, and a little heat.

I recently discovered McClure’s pickles, and they are just fantastic. You see some of their pickle spears in the pic. The spicy varieties have a really nice heat to them. They taste fresh, and homemade. Oh, and you have to try their dill pickle relish. It is unlike that mass-produced relish. Once you’ve had it, you’ll never go back, that’s for sure.

For the cheese topping

  • 1 cup cheeses shredded. We used sharp cheddar, Monterey Jack, Pepper Jack, and Mozzarella
  • 1 tablespoon chives chopped
  • 1 tablespoon garlic minced
  • 2 tablespoons red onion minced
  • 2 tablespoons pimentos drained, chopped
  • hot sauce to taste

Instructions

  • Fire up your grill for direct cooking.
  • Salt and pepper the beef and place the patties onto the grill.
  • Meanwhile, stir together all of the cheese mix ingredients.
  • Flip burgers once the first side has pretty grill marks.
  • When the patties are just about done (about 15 degrees below where you want them), top with the cheese mix.
  • Remove patties once the meat is done and the cheese is all ooey gooey.
  • Toast buns as desired.
  • Serve burgers topped with tomato, lettuce, onion, ketchup, mayo and mustard with a cold pickle spear on the side.

Notes

Add a little minced jalapeno to the cheese mixture for a nice kick!

Sweet-and-Sour Meatball Skewers

Perfect as appetizers or even a main dish, these sweet-and-sour meatball skewers pack a lot of flavor into every bite. They grill up quick and disappear even quicker. I used Captain Jim’s Molten Orange Ambrosia (sadly, no longer in business. You’ll want to use a tropical-flavored hot sauce with orange, pineapple or coconut for example) hot sauce to give these meatballs an extra kick, but no so much as to completely hide the sweetness of the peppers and the jam. You’ll love the contrast between the tender juicy meatballs and the roasted slightly-crunchy peppers. That’s what really sets these apart from the classic boring meatballs.

Sweet-and-Sour Meatball Skewers

You can leave out the hot sauce if you are using a spicy BBQ sauce. But, if your BBQ sauce is on the sweet side, you’ll need some heat or this dish will be a bit on the sweet side. Or you can make these sweet-and-sour meatball skewers both ways. That way you’ll satisfy the sweet crowd. And the spicy crowd. Now that’s a win for sure!

  • Thread meatballs and peppers onto skewers.
  • In a small saucepan over medium heat, combine the jam, barbecue sauce and hot sauce to taste. Bring to a simmer, stirring occasionally.
  • Brush glaze onto the meatballs and peppers, put onto the grill, and let cook for 5 minutes.
  • Flip the skewers over, glaze, and cook another 5 minutes.
  • Glaze the skewers one last time and serve.
