Copycat Longhorn Steakhouse Wild West Shrimp

These little copycats of the Longhorn Steakhouse Wild West shrimp were incredible. The Prairie Dust mix had a great flavor and kick to it. And Peppadew peppers? I could eat them out of the jar. Sure, I “cheated” and used frozen precooked shrimp, but that makes these all the easier to make, perfect for feeding a small crowd in a hurry.

Copycat Subway Bread

I made a copycat version of Subway’s Italian BMT sandwich early last year. And it was good, mighty good… But, I used a loaf of French bread I picked up at my local grocery store. Not that there’s anything wrong with that, it just has been nagging at me ever since. It just wasn’t quite like the real Subway bread. But this copycat Subway bread is. And it makes all the difference in the world. Every sandwich I made with this bread was to die for. Perfect.

I should add that I can’t bake. I’ve had numerous failures. Many more failures than successes. But, I don’t give up. This recipe for a copycat Subway bread is actually very easy, though not quite fool-proof. Even if you’re a bad baker like I am you can pull it off.

Ingredients

Instructions

  • Place warm water, yeast, sugar, salt and olive oil into the bowl of a mixer with a dough hook and let stand for 5 minutes until well bloomed.
  • Add 1 cup of all-purpose flour and mix for 3-5 minutes until combined.
  • Add 1 more cup of flour and mix until combined.
  • Continue adding flour 1/4 cup at a time until the dough is nice and soft, about 8 minutes. It should not stick to the sides of the bowl, but will stick a bit to the bottom. If it crumbles and falls apart, it is too dry, so add water (a teaspoon at a time) with the mixer running until the consistency is correct.
  • Lightly flour a work surface. Knead the dough until it is smooth and soft. This took me 5 or so minutes. It’s a workout, too, but worth it. Don’t give up!
  • Wipe out the mixer bowl and wipe with a paper towel that has been very lightly oiled.
  • Shape the dough into a ball and return to the mixer bowl. Cover with wrap and let rise in a warm place for one half to one hour or until it has doubled in size.
  • Line a baking sheet pan (or two) with parchment paper.
  • Dump the dough onto your lightly floured surface and divide into 4 equally sized pieces.
  • Shape (roll) each dough piece until it is a 9″ long loaf that is roughly the same thickness all over. Mine came out about 1 1/2″ – 2″ thick.
  • Transfer dough to the baking sheet, keeping them 2″ apart. I needed two pans.
  • Cover with plastic wrap that has been sprayed lightly with non-stick spray.
  • Place in a warm place and let rise until doubled, about an hour.
  • Meanwhile, preheat your oven to 350 F.
  • When loaves have doubled, remove plastic wrap and bake for 25 minutes.
  • When loaves are done, remove from the oven and immediately rub the tops with the stick of butter. You don’t need much, but you do want to rub the entire top of the loaf. This will give the loaves the perfect crust and texture.
  • Cover with a clean towel and let cool for 30 minutes.
  • Slice as desired and enjoy!

Notes

This bread also makes for great garlic bread!

Ever since my wife and I went to Pittsburgh a few years ago and had lunch at Primanti Brothers, I have been jonesin’ bad for another one of their sandwiches. Good sandwich meat, warm fries, and the best part, fantastic slaw. Time to make a copycat Primanti Brothers sandwich, by golly!

One Great Sandwich

Some folk complain about these sandwiches getting a bit soggy. I’ve never had one last long enough for that to happen, but if you drain the slaw really well you shouldn’t have a problem. That’s the beauty of making a copycat Primanti Brothers sandwich at home. You can tweak it to your liking. But I gotta say. Make it like it’s written and you’ll enjoy the heck out of this sandwich. I sure did.

I almost always use Blue Plate mayonnaise in the dishes I make. I think it is the best around. If you can’t find it locally you can pick it up online for a fair price.

Before you dive into your sandwich, serve up a batch of Primanti Brother’s Terror Tots.

Ingredients

For the sandwich (makes 1 sandwich)

  • 1 splash vegetable oil
  • 4-6 slices sandwich meat thin slices of your favorite
  • 2 slices Italian bread thick
  • 2 slices provolone cheese
  • mayonnaise
  • 1 handful French fries cooked, warm
  • 1/4-1/2 cup coleslaw see below
  • 2 slices tomato

For the coleslaw (makes enough for 4-6 sandwiches)

  • Bring the vinegar and oil to a slow boil in a small sauce pan over medium heat.
  • Add the sugar and stir to dissolve.
  • Remove from heat and let cool completely.
  • Place slaw mix and onion into a resealable container.
  • Add in the vinegar mix and stir well.
  • Season with salt and pepper.
  • Refrigerate for 1 hour.

For the sandwich (makes 1 sandwich)

  • Heat oil in a small skillet over medium heat.
  • Add the sandwich meat and heat for 1 minute.
  • Flip the meat over, top with cheese, cover, and heat until the cheese melts.
  • Slather one side of each slice of bread with mayonnaise. Add meat and cheese.
  • Add fries, tomato, and slaw. Top with other slice of bread.
  • Enjoy.

Notes

Serve with even more fries on the side.

Copycat Hooters Fried Pickles

I can’t remember when it was that we discovered deep-fried pickles. A few years ago, I think. They’ve quickly become a favorite appetizer for us. We enjoy the crunchiness. And that great pickle pucker. They’re simple and yummy, just like this homemade version of a copycat Hooters fried pickles. Make sure you make a double batch because they’ll disappear in no time.

Serve these little delicious bites with your favorite dipping sauce. For us, that’s Ranch salad dressing. A good Ranch. No point in going through the trouble of making the crazy good pickles only to serve them with mediocre dressing.

Season ‘Em Up Your Way

Although I just sprinkled these copycat Hooters fried pickles with sea salt, you can get adventurous and use Cajun seasoning, fresh ground black pepper, or even Italian seasonings.

These fried pickles are the perfect side dish for my copycat of Hooter’s Asian chicken wings.

I get out my big deep fryer when it’s time to fry a large batch of food. It comes to temperature quickly and it maintains that temperature perfectly. It has a built-in oil filter and storage unit so I can re-use the oil several times.

  • Preheat 2″ of oil to 350 F in a deep fryer or Dutch oven.
  • Dry the pickles as much as possible.
  • In a shallow bowl, beat together the buttermilk, egg and hot sauce.
  • Combine the remaining ingredients in another shallow bowl.
  • Working in batches, stir pickles in egg mixture until well coated.
  • Shake off any excess and then toss the pickles into the flour mixture, coating well.
  • Fry for 3-5 minutes or until golden brown.
  • Transfer to a paper towel-lined plate to drain for 1-2 minutes.
  • Serve hot.

Notes

Serve with your favorite dipping sauce.

Grilled Big Mac Sliders

All the great flavor of the famous McDonald’s Big Mac, in a smaller package. These grilled Big Mac sliders are the perfect bites for a party. And actually, they’re great for dinner too. If you’d rather make the bigger version, I have made them too. I love Big Macs off the grill. That flame char really adds a lot of flavor to the burgers.

A Burger Press Makes It Easier

I use my Weber slider presses to make a big batch of grilled Big Mac sliders quickly. They come out uniform and shaped perfectly. I can crank out a massive batch of sliders in no time, that’s for sure! Sadly, that particular press is no longer available, but this one from Cuisinart makes all sizes of patties! It sure is a time-saver!

I use this nifty little ole burger press to make these burgers. It’s the best thing ever for stuffing burgers with just about anything you can think of!

  • 2 pounds ground beef
  • kosher salt
  • ground black pepper
  • 4 slices American cheese cut into 1/4ths
  • 8 slider bun tops and bottoms plus 8 more slider bun bottoms

  • ¼ cup onion diced
  • dill pickle chips
  • 2 cups lettuce shredded

Instructions

For the special sauce

  • Combine all ingredients.
  • Refrigerate until ready to use.

For the burgers

  • Form ground beef into 16 2-ounce patties.
  • Season with salt and pepper.
  • Grill burgers until done.
  • Top with cheese.
  • Lightly toast the buns.
  • Assemble burgers by slathering bun bottoms with special sauce.
  • Add some onion and lettuce.
  • Top with a burger patty and dill pickles.
  • Add a bun bottom. Slather it with sauce and add onion, lettuce, a patty and more dill pickle.
  • Top with another burger bun top.
  • Skewer with a long bamboo skewer to hold in place.

Notes

These sliders disappear quickly. Make extras!

Copycat Zatarain’s Jambalaya

I don’t cook with very many store-bought mixes any more, but that doesn’t mean I don’t miss mixes such as Zatarain’s jambalaya. Not only quick and easy to make, Zatarain’s was yummy! So I had to make this copycat Zatarain’s jambalaya mix, and I found it to be just like the original! Thick, and a bit spicy, with smoked sausage and shrimp, it’ll warm your belly!

Ingredients

For the spice mix (makes 3 batches!)

For the jambalaya (makes 1 batch!)

  • 2 cups water
  • ½ cup green bell pepper chopped
  • 1 jar spice mix from above
  • 8 ounces tomato sauce
  • 1 pound smoked sausage cut into rounds
  • 1 pound 22-24 count shrimp peeled and deveined

Instructions

For the spice mix

  • Combine all ingredients and divide into 3 jars.
  • Seal and add printed instructions if giving as a gift.
  • Store up to 6 months.

For the jambalaya

  • Bring the water to boil in a large saucepan.
  • Add the bell pepper and the spice mix and stir.
  • Return to a boil, then reduce to a simmer. Cover and simmer for 15-25 minutes or until the rice is tender.
  • In another saucepan, combine the tomato sauce and sausage. Stir in the shrimp and cook until they turn pink.
  • Combine both pans and mix well. If the sauce is too thick, add a bit of water and stir.

Notes

Cherry Slurpee

Wow, it’s just like the cherry Slurpee I remember from when I was a young kid! Super cherry flavor and so refreshing. And of course, you get a wonderful red tongue as a bonus! I can’t tell you how much I enjoyed this trip back down memory lane. I was a kid again, if only for a little bit!

Oh, My Brain Hurts!

To really bring back the memories of having a cherry Slurpee as a child, I drank this fast enough to get a full-on brain freeze. I didn’t do it on purpose (who does?), but I wasn’t surprised that it happened!

This prompted me to look up brain freeze (aka an ice-cream headache) on Wikipedia: “Ice cream headaches” result from quickly eating or drinking very cold substances. It is commonly experienced when applying ice-cream (or similar) to the roof of the mouth (palate) or when swallowing it. Typically, the headache appears in about 10 seconds and lasts about 20 seconds. The term ice-cream headache has been in use since at least 31 January 1937.

Worth A Mess

I confess that I made a big ole mess in the kitchen when I made this copycat Panda Express SweetFire chicken. Apparently, I was cornstarch-dredging challenged that night, because I had cornstarch all over the place. It was well worth it, though. This dish is definitely worth any kind of mess you might make, too.

It might seem like there’s a lot of ingredients in this recipe. There are a few, for sure. But it’s actually pretty easy to make. The end result is the best reward you could ask for.

Instructions

  • Place chicken pieces in a large resealable baggie or container and add the flour along with salt and pepper to taste. Seal and shake to coat.
  • Place beaten eggs in a shallow bowl.
  • Place 1 cup of the cornstarch into another shallow bowl.
  • Heat oil in a large skillet or wok.
  • Working in batches, remove chicken pieces from the baggie and shake off the excess flour.
  • Dip into egg and coat, shaking off excess.
  • Next, dip into cornstarch and coat, shaking off the excess.
  • Fry until golden and crispy on all sides. Remove to a paper towel-lined plate. Finish cooking remaining chicken.
  • Combine the 4 tablespoons of water and remaining 3 tablespoons of cornstarch in a cup or glass.
  • In a small pan, combine the red pepper flakes, garlic, sugar, and vinegar. Bring to a boil then reduce the heat. Whisk in the cornstarch mixture and keep warm.
  • Add a little more oil to the skillet or wok and add the bell pepper and onion and cook for 3 minutes.
  • Add the pineapple and cook another minute.
  • Add the sauce mixture in and stir.
  • Add the cooked chicken and gently stir to coat and combine.
  • Serve over rice or noodles, if desired, and garnished with green onions.

Notes

You can substitute chicken tenderloins for the breasts.

I used my copycat of Subway’s sub bread to keep it authentic and yummy! This sandwich was just as much fun to make as it was to eat. And the best part is that I got to customize it just like I want it. For me that means extra. Extra meat. Extra cheese.

Chez John taught me the trick about rolling up the meats before putting them on the sandwich. Not only does it look awesome, it makes it look like there’s a lot more meat! Try it. People will think you went the extra mile when you made this copycat Subway Italian BMT Sandwich. Granted, your meat doesn’t come rolled when you hit up the chain restaurant for a sandwich. Maybe it should! Or maybe you can smile and ask the sandwich professional to roll it for you. Just make sure you say ‘please’ and ‘thank you’! It’s worth a shot!

As you can see in the comment section below, someone pointed out that I did not use the exact meats and cheeses available at Subway. That’s quite true, I was looking for a bit of my own twist on the sandwich. If you want to stick to the real deal, use the meats and cheeses below as you wish: Genoa salami, spicy pepperoni, Black Forest ham, pepper jack, provolone, smoked cheddar and white American.

Copycat Arby’s Beef-n-Cheddar with Curly Fries

Although I don’t eat fast food any more (or at least, it’s been years since I have), that doesn’t mean I don’t get a hankerin’ for it every now and then. Here lately I’ve been jonesin’ for a sandwich from Arby’s. In no time I was enjoying a copycat Arby’s Beef-n-Cheddar sandwich with a side of curly fries. It was just like I went to the fast food restaurant. Only better because I made it. And making it yourself is so much more rewarding than getting food from a drive-thru or having a GrubHub driver deliver it! At least, that’s my thinking!

This copycat Arby’s Beef-n-cheddar with curly fries did the classic sandwich justice. And the fries were right on the money too. My cravin’ was satisfied (for now)! And the best part? I can pile as much meat and cheese on my sandwich as I want. Heck, I can add more cheese too. And extra Arby’s sauce! And while I’m at it, I want more curly fries too!

Copycat Arby’s Beef-n-Cheddar with Curly Fries

This copycat Arby’s Beef-n-cheddar did the the classic sandwich justice. And the fries were right on the money too. My cravin’ was satisfied (for now)!

For the beef-n-cheddar sandwich

For the curly fries

Instructions

  • Make the Arby’s sauce by combining the ketchup, water, salt, and garlic and onion powders.
  • Warm the buns in the oven.
  • Heat a large skillet over medium heat. Add the roast beef, cover, and turn heat to low.
  • Meanwhile, place the cheese in a bowl with the milk. Microwave in 20 second intervals, stirring, until the cheese melts and becomes a creamy sauce.
  • Slather the buns with the Arby’s sauce. Top with the roast beef and cheese sauce.

For the curly fries

  • Bake fries per package instructions.
  • Combine the seasonings.
  • Remove the fries from the oven and place in a large bowl. Sprinkle with seasoning and toss to coat.

Notes

You can buy Arby’s curly fries in many grocery stores. They’re actually quite tasty and are a great alternative to these homemade fries.
