Hot Grinder Sandwich

I make a lot of sandwiches. I try to mix up the ingredients to keep them from getting “old”. From the bread to the meats, to the cheeses and condiments. I ran across this great approach for a hot grinder sandwich on the Pork Be Inspired site. I had to make it. It’s now my go-to way of preparing a sandwich. You can make it the “classic” way, on a loaf of French or Italian bread, but it also comes out great on ciabatta or any other good bread.

Instructions

  • Heat oven to 350 F.
  • Heat oil in a medium skillet over medium-high heat;
  • Add the green bell pepper and sauté until just starting to turn tender, about 4 minutes.
  • Remove from heat and stir in the dried onion, oregano, and red pepper, if desired.
  • Add ham and tomato to bottom half of the bread.
  • Add pepper rings, and drizzle with the remaining oil from the skillet.
  • Add cheese and top half of bread.
  • Wrap loaf in foil and place in oven for 15 minutes or until warmed through and the cheese is melted.
  • Serve.

Notes

Add a few dill pickle slices too!

Who doesn’t love a bologna sandwich? Well, this takes the old classic to a whole new level. You’ll find it hard to believe that you’re eating bologna. You’ll think that you’re at a fru-fru fancy dining place. Crispy, fried sandwich meat with spicy BBQ sauce served on a bun with creamy tangy slaw. You need fried BBQ bologna sandwiches right now! And actually, I do too!

These Are Not Boring Sandwiches

These fried BBQ bologna sandwiches are so good that we made them twice this week already. Although I grew up eating my share of bologna sandwiches (on white bread with mayo and maybe a squirt or two of yellow mustard), I never had fried bologna until I moved to the mid-west. Dang, all those years missing out on such awesomeness! I probably wouldn’t put slaw on my sandwiches as a kid, though. In fact, I wouldn’t have anything to do with slaw in my younger years. Now, it’s a totally different story. I love slaw. I can’t get enough of it as a side, on sandwiches, or wherever!

If I’m reaching for a bottled BBQ sauce, I often go for Sweet Baby Ray’s.

  • Brush all sides of the bologna with the BBQ sauce and sprinkle with the rub.
  • Place in a large resealable container for 4 hours.
  • Heat oil in a large skillet over medium-high heat.
  • Working in batches, remove bologna from container and shake off any excess sauce.
  • Fry in oil until browned on both sides.
  • Remove to a plate.
  • Toast buns if desired.
  • Top bun bottoms with fried bologna, followed by slaw and bun tops.

Notes

Use spicy BBQ sauce for a nice kicked-up sandwich!

Muffuletta Sandwich

I so love the flavors of a muffuletta sandwich. Great meats, great cheese, and Italian olive salad. Warmed just slightly until the bread is soft and the cheese is ooey-gooey. I could eat muffulettas all day long. Which brings me to my gripe. Why doesn’t every single sandwich shop sell muffulettas? I mean, seriously, it’s the best sandwich there is. Oh sure, you can get your roasted turkey with avocado, and maybe a ham on rye, but really… Just jump to the chase and enjoy the best sandwich ever devised. The muffuletta.

Well Worth The Time

I used my homemade Italian olive salad in this muffuletta sandwich. It takes a day to make the salad, but it is very much worth the time. If you don’t want to make your own olive salad, pick up a big jar of olive salad at your grocery store or order some online. Olive salad isn’t cheap, but that’s for a reason. It’s packed with lots of great stuff!

Ingredients

  • 1 loaf Italian bread cut in half horizontally (can substitute French bread)
  • 3 cups olive salad
  • 4 ounces mozzarella sliced thin
  • 6 ounces capicola sliced thin
  • 4 ounces salami sliced thin
  • 4 ounces mortadella sliced thin
  • 2 ounces sandwich pepperoni sliced thin
  • 4 ounces provolone sliced thin

Instructions

  • Preheat oven to 375° F.
  • Spread the olive salad on each half of the bread, 1 1/2 cups per side.
  • Next, place sliced mozzarella over the salad on the bottom piece of bread.
  • Top with the meats.
  • Place provolone on top piece of bread and place on top of bottom, to make a sandwich.
  • Wrap tightly in foil and heat 20 minutes.

Notes

Mortadella can be hard to find. You can substitute bologna.

Copycat Subway Italian BMT Sandwich

You don’t need to go out to have a great sandwich. This copycat of the Subway Italian BMT sandwich is outstandingly simply and good. Good meats, fresh toppings and a delicious dressing. I used my copycat of Subway’s sub bread to keep it authentic and yummy! This sandwich was just as much fun to make as it was to eat. And the best part is that I got to customize it just like I want it. For me that means extra. Extra meat. Extra cheese.

Chez John taught me the trick about rolling up the meats before putting them on the sandwich. Not only does it look awesome, it makes it look like there’s a lot more meat! Try it. People will think you went the extra mile when you made this copycat Subway Italian BMT Sandwich. Granted, your meat doesn’t come rolled when you hit up the chain restaurant for a sandwich. Maybe it should! Or maybe you can smile and ask the sandwich professional to roll it for you. Just make sure you say ‘please’ and ‘thank you’! It’s worth a shot!

For the sandwich

  • 1 loaf French bread
  • 1 ounce pepperoni sliced (use sandwich pepperoni)
  • 1 ounce prosciutto thinly sliced, see note
  • 1 ounce salami see note
  • 1 ounce capocollo see note

  • 4 slices provolone cheese see note
  • 1 tomato sliced thin
  • 3-4 leaves green leaf lettuce

  • Whisk together all ingredients.

For the sandwich

  • Slice the bread in half length-wise.
  • Drizzle both sides with the dressing.
  • Add the meats, cheeses, tomato, and lettuce.
  • Secure the bread with toothpicks and cut into four or six equally-sized sandwiches.

As you can see in the comment section below, someone pointed out that I did not use the exact meats and cheeses available at Subway. That’s quite true, I was looking for a bit of my own twist on the sandwich. If you want to stick to the real deal, use the meats and cheeses below as you wish: Genoa salami, spicy pepperoni, Black Forest ham, pepper jack, provolone, smoked cheddar and white American.

Ham Salad Sandwich

I was digging around in the freezer when I came across a container of leftover smoked ham. My first thought was to make your standard ham-and-cheese sandwiches, but after more pondering, I decided that a ham salad sandwich would be way better. And it was. So much better.

A Great Ham Salad For Wraps, Too

This ham salad was fantastic on a sandwich. It has a nice bit of a crunch, and a little kick from the Cajun seasoning (I used more than a dash). The salad is also great in a wrap. And even fantastic on crackers. Got a fru-fru fancy luncheon planned? Yep, finger sandwiches with this salad are bound to impress everyone.

I’m Boiled Egg Challenged

I absolutely stink (best word I could think of) when it comes to making boiled eggs. Hard or soft, doesn’t matter. I am egg challenged. So I picked up a little cheap egg cooker like the one below. This lil baby cranks out 6 eggs in about 15 minutes and they’re perfect each and every time! I don’t even feel bad any more that I just cannot make boiled eggs!

You can use precooked ham from your grocery instead of a home-smoked one, of course.

  • Pulse ham in a blender or food processor a few times to chop it further. Do not over-blend and create a paste.
  • Remove to a medium bowl.
  • Add the pickle to the blender or food processer and pulse a few times.
  • Remove to the bowl with the ham.
  • Add celery, onion, mustard, and mayonnaise.
  • Mix well.
  • Gently fold in the eggs.
  • Add Cajun seasoning and salt and pepper to taste.
  • Serve on a nice crusty bread or as a topping for crackers.

Notes

I like these sandwiches with dill pickle slices!

Kicked Up French Dip Sandwiches

I recently made a yummy pot roast sandwich. As soon as we finished off all of the pot roast I was already jonesin’ for more. Instead of making the same thing again, I made kicked up French dip sandwiches. What’s great about them? The addition of a tasty creamy horseradish sauce and caramelized onions. The result was over-the-top good. Super tender meat with great beefy flavor, wonderful onions, and a horseradish kick to boot.

A Better French Dip

I used to make more ‘normal’ French dip sandwiches. You know, thin sliced beef with an au jus for dipping. Not ‘kicked up French dip sandwiches’, but still good stuff. But now I’m addicted to shredded beef dip sandwiches with a wonderful horseradish sauce and caramelized onions.

I got the inspiration from my pot roast sandwich, which is actually my take on the same sandwich from the Hobnob Corner Restaurant in Nashville, Indiana. Their tremendously tender super-flavorful beef sandwiches are a big favorite of mine anytime I’m in town.

Ingredients

Caramelized onions

  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 3 small sweet onions sliced thin
  • 1 tablespoon sugar

Instructions

  • Heat oil in a large Dutch oven over high heat.
  • Add the beef and brown on all sides.
  • Reduce heat to medium-low.
  • Add broth, soup, and beer.
  • Simmer for 7-8 hours, turning occasionally, until meat is falling apart and tender.
  • Remove meat and let rest for 10 minutes before slicing or chopping.
  • Place chopped meat into a separate pot.
  • Add a ladleful or two of the broth sauce. Keep warm.
  • Warm the bread.
  • Slather both sides of the bread with the horseradish sauce.
  • Add meat and cheese. Top with the onions.
  • Serve with a bowl of strained broth for dipping.

Caramelized onions

  • Heat oil and butter in a large skillet over medium-high heat.
  • Add the onions and cook until they start to brown.
  • Reduce heat and continue to cook the onions until they are golden brown and caramelized, 10-15 minutes.

Notes

Serve with plenty of napkins.

Steakhouse Grinder

Put it between two slices of bread and I’ll eat it. That’s why we have sandwich night (and day) here often. Sometimes that means a little work. I was a little rushed for time one evening, so I made this version of a steakhouse grinder from Kraft. I was relatively skeptical how it would work out. Would the A-1 steak sauce be too overwhelming?

Well, no, is the answer! The A-1 complimented the vegetables perfectly, giving the sandwich a nice little twang that really, really worked for me. Melted cheese, sauteed onions and mushrooms to boot… you just can’t go wrong.

  • 1 tablespoon A-1 steak sauce or more
  • 1 medium onion cut into slices
  • 1 cup mushrooms sliced thin
  • deli meat
  • deli cheese sliced
  • 2 sub rolls
  • mayonnaise

Instructions

  • Preheat oven to 400 F.
  • Heat a skillet over medium heat and add the steak sauce, onion, and mushrooms. Stir well.
  • Saute until vegetables start to soften.
  • Lightly toast the bread in the oven.
  • Place meat and cheese on bottom buns and return to oven under broiler until cheese melts. Keep an eye on them or they’ll burn.
  • Spread bun tops with mayonnaise.
  • Top bottoms with meat and cheese mixture and serve.

Notes

The onion mixture is great on hamburgers, too.

40 Garlic Clove Chicken Sandwiches

I made a big ol’ batch of 40 garlic clove chicken the other day. It’s a garlic lover’s dream, for sure. Well, I had a bit of chicken leftover, and I thought… boy, this sure would be awesome on a sandwich. So I made 40 garlic clove chicken sandwiches. The Kaw-Cajun Comeback sauce (courtesy Chez John, RIP my friend) which is good on absolutely anything and everything, really works well with theses 40 garlic clove chicken sandwiches. Couple that with fresh crunchy bread and good toppings and you have a great sandwich.

Hamburger Po Boy

This hamburger po boy is one of my favorite things to eat.  It’s a little on the messy side, which is always a good thing. I think sandwiches are meant to be messy. And they have to drip down yummy drippings that you can sop up with your bread, or better, fries.

Crank It Up!

You can make this hamburger po boy a little more like a real po’boy by slathering the buns with some Kaw-Cajun Comeback sauce from Chez John. That stuff is like gold. It has a nice kick and it makes any sandwich amazing!

  • In a small bowl, combine the ketchup, relish, mustard and black pepper.
  • Stir in the soup mix.
  • Add to the ground beef along with the beef broth.

  • Slather the bread with the comeback sauce or mayo (both are optional).
  • Spoon the mixture over the bread and top with the cheese, onion, lettuce and tomato and serve.

Deluxe Italian Sausage Sandwiches

This is the first time I’ve had two of the almost-same dishes on my go-to list. I’ve made my original sandwiches for years. They’re crazy good, gooey, and messy – all criteria for good eating at game-time. My deluxe Italian sausage sandwiches version are very similar to my original version, but they use my Italian meat sauce recipe instead.

Messy. In A Very Good Way.

Like I said, these sandwiches are messy, so you know they are good. The more napkins you need, the better it is, I always say. The meat sauce is fantastic. I could eat it all day on anything. I make an extra big batch of the sauce and freeze it in portion-sized containers so I can easily defrost some for a quick sandwich. It’s also great over hamburger buns for an Italian Sloppy Joe.

I highly recommend that you shred or grate your own cheese at home. Don’t buy the pre-shredded or pre-grated stuff. It has stuff added to it to keep it from sticking together. That ‘stuff’ affects how the cheese melts. Shred it yourself and use the good stuff.
