Italian Sausage Sandwiches

These Italian sausage sandwiches are my go-to, big event, messy, eat-too-much-of-them sandwiches. I’ve always made them on-the-fly. I’d grab a little of this. And I’d  grab a little of that and throw it all into the pot. This year I decided to finally write them down. Because they rock.

Deliciously Messy

Eating these Italian sausage sandwiches requires paper towels. And maybe even bibs. I’ve always said that the messier the sandwich, the better. Same philosophy goes for burgers and hot dogs. If there’s not something dripping down your arms, in your lap or on your shirt, it’s not messy enough.

I highly recommend that you shred or grate your own cheese at home. Don’t buy the pre-shredded or pre-grated stuff. It has stuff added to it to keep it from sticking together. That ‘stuff’ affects how the cheese melts. Shred it yourself and use the good stuff.

Instructions

  • Heat the oil in a large Dutch oven or pot over medium-high heat.
  • Add the sausages and brown on all sides.
  • Remove to a plate.
  • Add in the peppers and onion and saute for 5 minutes.
  • Add the garlic and cook another minute.
  • Add the mushrooms and cook until just starting to get tender.
  • Add the tomato sauce and paste. Stir well.
  • Bring to a boil, then reduce to a simmer.
  • Add in the sugar, Italian seasoning, and hot sauce, to taste. Stir well.
  • Add the sausages and any juices back to the pot.
  • Cook, simmering for at least an hour.
  • Lightly toast the buns.
  • Serve sausages in buns topped with plenty of sauce, topped with cheese.
  • Place under the broiler for a minute or two to brown.

Notes

Serve with plenty of napkins!

French Dip Sandwiches

I love a good French dip sandwich on a cold day. Besides the tender meat, the key is a great au jus for dipping. And oooey, gooey melted cheese. Yum. I like to get my bread good and soggy. Yes, I over-dunk. Leave it in there for a while to soak up all that beefy flavor. Then let it drip all over the place. Remember my motto: the messier it is, the better it tastes. That applies to French dip sandwiches, burgers, hot dogs. Anything and everything. There has to be some juices dripping all over or it’s just not a proper sandwich. And there needs to be some cheese melting down from the sides of the sandwich, too.

Spice Up The Classic

I prefer pepperjack cheese on my French dips only because I like a little extra kick. I think provolone is a more traditional cheese. The meat is also great on French dip crescents, an excellent party treat.

Ingredients

  • 1 tablespoon Vegetable oil
  • 4 pound rump roast
  • 14 ounce beef broth
  • 10 ½ ounce French onion soup
  • 12 ounce beer use a full-flavored beer
  • 8 French rolls or a large Italian bread loaf
  • 2 tablespoons butter
  • Swiss cheese sliced

Instructions

  • Trim excess fat from the roast.
  • Heat oil in a large Dutch oven or pot.
  • Add the meat.
  • Brown on all sides.
  • Add broth, soup, and beer.
  • Cook on low for 7 hours.
  • Toast buns.
  • Thin slice the beef against the grain (or shred with a fork) and stack on bread.
  • Cover with cheese and melt under broiler.
  • Strain sauce and serve with sandwiches for dipping.

Notes

Substitute provolone, pepper jack… mozzarella, whichever cheese you prefer.

Ham and Cheese Grinder

I once worked near a W.G. Grinders, my favorite place for baked sandwiches at lunchtime. Sadly, W.G. Grinders no longer has any locations open in Indiana (there are a few in Ohio). They sure made great sandwiches. Now I have to make a ham and cheese grinder at home to satisfy my cravings. Although I sure liked the ones at the order-at-the-counter restaurant, these are not anything to sneeze at! In fact, they’re fantastic!

Ingredients

  • ½ stick unsalted butter melted
  • 1 teaspoon garlic powder more or less
  • 1 loaf French bread
  • ¾ pound deli ham sliced thin
  • ½ pound provolone cheese sliced thin
  • ½ teaspoon paprika

Instructions

  • Preheat oven to 350 F.
  • Combine the butter and garlic powder. Add more garlic powder, to taste, if needed.
  • Split the French bread lengthwise and lay open.
  • Brush both open sides with butter.
  • Transfer to a baking sheet.
  • Add ham and cheese, then sprinkle with the paprika.
  • Bake for 15 minutes or until the cheese is melted and the bread is crispy.

Notes

Also great topped with thin-slices of tomato, hot or cold!

Roasted Black Pepper Shrimp Po boy

I’ve never eaten a bad po boy, and this one is no exception. Roasted black pepper shrimp, Kaw-Cajun Comeback sauce… you just can’t go wrong! The shrimp are perfectly peppered. The Comeback sauce… man, what can’t I say about it… it’s just so great. It is spicy, creamy, and without a doubt the perfect sauce for any sandwich you will ever make. I can’t imagine a po boy without Kaw-Cajun Comeback sauce on it. Don’t be shy with it, either. The sign of a great po boy is one that drips all over the plate, your shirt, and down your arms. This roasted black pepper shrimp po boy checks all the ‘great sandwich’ checkboxes.

One Great Po Boy Sauce

I recommend keeping a bottle of Comeback sauce nearby when you eat this roasted black pepper shrimp po boy. Just in case a shrimp falls off the sandwich. Sure, you could poke it back in, but you can also squeeze a bit of Comeback sauce on it and enjoy the perfect shrimp.

Grilled Jamaican Jerk Chicken Sandwiches

Man oh man, these grilled Jamaican jerk chicken sandwiches disappeared fast. I used my preferred chicken meat, thighs, instead of breasts, but you can certainly use white meat instead. I would recommend butterflying the breasts or just cutting them thin (and to a consistent thickness so they cook evenly). No matter what you use, these sandwiches are nicely spiced, crazy tender and perfectly moist. I wouldn’t change a thing about them.

Any Good Jerk Marinade Will Do

I used some The Shizzle jerk marinade. It is my favorite. They also make a hot version that I love (it is called Voodoo Hot for a reason!). Their marinade is what makes these grilled Jamaican jerk chicken sandwiches soooo good. Any good store-bought jerk marinade will work just fine in this recipe. You could make your own too, of course!

Instructions

  • Let the chicken marinade for at least 4 hours (and up to 24 hours).
  • Fire up your grill for direct and indirect cooking.
  • Shake off any excess marinade from the chicken and place over direct heat.
  • Sear for a few minutes, then rotate 90 degrees and cook another 2 minutes or until you get those perfect grill marks.
  • Flip and cook another 2 minutes.
  • Remove to indirect heat and cook until done.
  • Lightly toast the buns on the grill.
  • Assemble the sandwiches by topping buns with chicken and slaw.

Notes

The chicken is also great sliced thin and served over lettuce for salads.

Grilled Smoked Sausage Po Boy

This grilled smoked sausage po boy is one of those perfect po boys. The kind that drip yummy sauces down onto your plate. The kind with yummy sauces you slop up with the last bites of the bread. Heck, if no one’s looking, pick up the plate and lick up the drippings. No one will know except you and you’ll be the one smiling.

Everything about this sandwich is delicious, but the really great part is the Kaw-Cajun Comeback sauce. It has a nice spicy kick, and is great on absolutely every sandwich you could ever make. I make a big batch of Kaw-Cajun Comeback sauce and keep it on hand for great po boys. Chez John from Fat Johnny’s Front Porch is the creator of the sauce. Pay his site a visit. A Great Messy Sandwich

My Creole meatballs pack a bit of a punch. I like that. A lot. They’re tender and just perfect on a Creole meatball sub sandwich, loaded with lots of my Creole meatball sauce and topped with cheese. Smoked Pulled Pork Po Boy

One of my favorite things to throw on the smoker is a pork butt. Pulled pork is well worth the time it takes to make. I made a big batch of BBQ the other day. Now, usually, I’ll throw it on a bun with some BBQ sauce. Or I’ll even put it in a baked potato (soooo good!). This time, I went with a smoked pulled pork po boy.

I Have To Have Slaw

You can pretty much throw anything on a smoked pulled pork po boy and it’ll be good, but start with good BBQ and you end up with a fantastic sandwich! And don’t forget the slaw. That coolness, that crunchiness, that’s what makes a good sandwich great. As does the messiness. A great sandwich makes a mess when you pick it up and take a bite. The juices have to run down your arm and onto your plate. Or into your lap. An ingredient here, an ingredient there will fall out onto your lap. You pick those up, get some of the juices from your plate on them, and into your mouth they go. Hey, I know it’s not pretty. It’s not supposed to be.

  • 2 loaves French bread halved lengthwise
  • 1 cup Kaw-Cajun Comeback sauce or more, or your favorite remoulade
  • 1 pound pulled pork BBQ
  • 1 pound slaw mix broccoli slaw mix works great too!
  • 1 jar coleslaw dressing regular or Southern

Instructions

  • Lightly toast the bread, if desired.
  • Slather the bread halves with the Comeback sauce. Don’t be shy with it, either.
  • Add the pulled pork.
  • Add the slaw.
  • Cut into each loaf into 3 sandwiches and serve.

Notes

Tiny Tim’s Sub

I recently posted about one of my favorite places to eat back in my college days, Tiny Tim’s Pizza on the square in Fayetteville, Arkansas. My go-to sandwich there is the Tiny Tim’s sub. I’ve been hankering for one ever since I finished the last one, so I decided to make a clone of it. Though it’s not a complicated sandwich, it’s mighty good. I miss my days at Tiny Tim’s. This sandwich brings back great memories for sure!

The Keys To Sandwich Success

There are three things that make this Tiny Tim’s sub my favorite. First, the spicy pepperoni. Second, the delicious Canadian bacon. And last, of course, the Italian dressing. I couldn’t find creamy Italian dressing in my local grocery store, so I ended up making some from this recipe here.

I like to make my own Canadian bacon. It really makes this sandwich even more amazing!

  • 3 Hoagie buns
  • 4 ounces sandwich pepperoni not the small pepperoni used on pizzas
  • 6 slices Swiss cheese
  • 5 ounces Canadian bacon finely chopped
  • 2-3 tablespoons Creamy Italian dressing or use store-bought
  • handful lettuce shredded
  • Plain potato chips for serving
  • Dill pickle for serving

Instructions

  • Lightly toast the buns under your broiler.
  • Divide the pepperoni between the 3 bun bottoms.
  • Top with one slice of Swiss.
  • Add the Canadian bacon.
  • Slather the top half buns with the dressing.
  • Add the remaining cheese to the top buns.
  • Put under the broiler, open-faced, until lightly browned.
  • Top with lettuce and serve with chips and pickles.

Notes

Serve and eat with a smile.

Grilled Turkey Breast Po Boy

I picked up a 3 or so pound boneless, skinless turkey breast the other day. I was going to smoke it and use it in turkey salad sandwiches, but instead I grilled it and sliced it thin for po boys, which I made two ways. Nothing beats a tender, juicy grilled turkey breast po boy on fresh bread with fresh toppings.

You don’t have to make these grilled turkey breast po boys the same way every time. I didn’t.

The first time, I served up on a hoagie roll with Southern broccoli slaw. I’ve always liked slaw on pulled pork sandwiches, and have found it goes just as well on any grilled meat sandwich.

The second po boy (ok, more a sandwich) was served up on a hamburger bun with Kaw-Cajun comeback sauce (recipe courtesy Chez John), lettuce, red onion and tomato. The perfect sandwich.

For a classic sandwich

  • 1 medium red onion sliced thin
  • handful lettuce washed and patted dry
  • 1 large tomato sliced
  • ¼ cup Kaw-Cajun Comeback sauce or more

For the slaw-based sandwich

  • 12 ounce broccoli slaw mix
  • 1 bottle southern-style slaw dressing

Instructions

  • Place the turkey into a large resealable bag.
  • Add the dressing. Turn to coat.
  • Refrigerate overnight.
  • Start up your grill for two-zone (direct and indirect) cooking.
  • Salt and pepper the turkey, to taste.
  • Lightly sear the turkey over high heat then move to indirect heat and cook until the internal temperature reaches 170 F.
  • Remove and let rest at least 15 minutes.
  • Slice thin against the grain.
  • Lightly toast the buns or rolls, if desired.
  • Slather the buns with the Comeback sauce.
  • Add turkey.

For a classic sandwich

  • Top buns with sliced turkey, lettuce, onion, and tomato.
  • Serve.

For the slaw-based sandwich

  • Combine the slaw mix and dressing.
  • Heap the slaw over the turkey. Serve.

Notes

You can also make this using chicken breasts, but you’ll need several to make 2-3 pounds.
