Slow Cooker Shredded Buffalo Chicken

I love Buffalo chicken wings, and anything Buffalo chicken wing-flavored. I like to keep shredded Buffalo chicken on hand. That way I can throw together a quick sandwich at any time with no fuss or trouble at all. I love the kick of the Buffalo sauce. The more, the merrier I say! I often cook Buffalo chicken in my Char-Broil Big Easy, but also love making a big batch in my slow cooker. Slow cooker shredded Buffalo chicken is easy to make, smells fantastic all day long while it’s cooking, and can be used in a lot of ways. Make a double batch and keep the extra in the freezer.

Add Sauce As Needed

Don’t be afraid to add more wing sauce to this slow cooker shredded Buffalo chicken as it cooks if you think it’s getting too thick. Check on it every few hours just to be sure and give it a good stir. You can take off the slow cooker lid and let it reduce if you think it’s too thin.

Don’t chop the chicken super fine. I figure how fine I want it will depend on how I end up using it. You can always chop it more later.

I use this chicken in a variety of recipes. Such as my Buffalo chicken alfredo, tacos and subs .

Slow Cooker Spicy Corned Beef

I’ve done that corned beef and cabbage thing. Loved it. I’ve done the corned beef sliders thing. Definitely loved it. There’s nothing wrong with tradition, but it’s time for something new. Time for slow cooker spicy corned beef. Oh yes. Tender, sliced, and the best part, topped with a simple glaze that doesn’t remind you of the usual corned beef ‘thing’. You can tell that just by looking at the list of ingredients! Oranges and corned beef? Yes. Cloves, you bet! And lots and lots of other great things that end up packing the corned beef with crazy good flavor. This isn’t a boring dish by any stretch of the imagination.

This Isn’t Your Usual Corned Beef

I sliced this slow cooker spicy corned beef thinly and served it on rye bread with just a bit more of the glaze drizzled over the top. Piled high. Big time high. That’s it. That’s all it needed. No kraut, Swiss cheese, or anything else. Yeah, you can add those things. But, wow the glaze is so good I just wanted to enjoy it and the crazy delicious corned beef. At most I’d add a slice or two of cheese and put the sandwich under the broiler for a few seconds to get it hot and melted.

Ingredients

For the corned beef

  • 4-5 pound corned beef rinsed, lightly trimmed
  • ¼ teaspoon dried rosemary
  • 1 bay leaf
  • 1 teaspoon dried dill
  • 6 cloves whole
  • 1 stick cinnamon
  • 1 clove garlic
  • 1 medium onion cut in chunks
  • 2 ribs celery cut in chunks
  • ½ orange unpeeled, sliced thin

For the glaze (double to have extra for drizzling over the meat after slicing)

Instructions

For the corned beef

  • Place all of the corned beef ingredients into a slow cooker.
  • Cook for 8 hours until tender, but not falling apart.
  • Remove the beef from the slow cooker and let cool slightly.
  • Wrap tightly in foil and refrigerate overnight.
  • Preheat your oven to 350 F.
  • Unwrap the beef and place in a 9″ x 13″ baking dish that has been sprayed with non-stick spray.
  • Combine the glaze ingredients and pour over the top of the corned beef.
  • Bake for 30 minutes.
  • Remove and slice. Drizzle with any glaze left in the baking dish or double the glaze and warm the remaining before pouring over the beef.

Notes

Makes for the best, different Reuben sandwiches!

My wife and I really enjoyed the flavors of this super-simple chicken Cordon Bleu casserole. Tender chicken with a bit of ham and crunchy breadcrumb topping. And of course that wonderful Dijon mustard flavor in a creamy cheesy sauce. This is the perfect quick and easy meal for a cool late-winter evening.

Use Thin Chicken Cuts

I prefer to butterfly chicken breasts in just about any recipe where I need them. They cook up more evenly, and a bit quicker. And I like the texture better. I like a big ole thick beef steak, but that’s about the only time I need my meat cut thick. For chicken, I think thinner is better.

Spice It Up

If I’m feeling adventurous the next time I make this chicken Cordon Bleu casserole I might try a little twist or two. Maybe use pepper jack cheese instead of Swiss for a nice kick to the sauce. Or maybe add a pinch or two of cayenne in with the breadcrumbs. Oh, this dish is great as it is, but I hardly ever pass up the opportunity to add some heat.

Ingredients

For the casserole

  • 4 chicken breasts boneless, skinless, butterflied
  • 8-10 slices deli sandwich meat ham, thin
  • 1 ½ cups Swiss cheese shredded
  • 1 cup Panko bread crumbs
  • 3 tablespoons Parmesan cheese freshly grated
  • ½ teaspoon Kosher salt
  • â…› teaspoon ground black pepper
  • 3 tablespoons unsalted butter melted

For the sauce

Instructions

  • Preheat your oven to 350 F.
  • Spray a 9″ x 13″ baking dish with non-stick spray.
  • Layer chicken in the bottom of the dish.
  • Top the chicken with the ham sandwich meat and sprinkle with the Swiss cheese.
  • In a bowl, combine the Panko bread crumbs, Parmesan cheese, salt and pepper.
  • Sprinkle the Panko mixture over the top of the chicken.
  • Drizzle with the melted butter and bake for 35-40 minutes or until the chicken is done and the Panko has started to brown. Place under the broiler for a minute or two to brown further if desired.
  • Serve with sauce.

For the sauce

  • Melt the butter in a medium saucepan.
  • Whisk in the flour and cook for 3 minutes.
  • Whisk in the milk and broth.
  • Continue whisking until the sauce thickens.
  • Whisk in the mustard, Worcestershire sauce and salt and pepper and serve.

Notes

Substitute a little pepper jack for some of the Swiss for a little kick.

It’s time for an easy side dish. Something I can make quick but still enjoy. Veggies. Cheese. Creamy sauce. Oh, and crunchy French fried onions.   • Add the soup, all but 1/4 cup of the cheese, all of the sour cream, and all but 1/4 cup of the fried onions. Stir to combine.

Turkey and Stuffing Egg Rolls

When I came across this idea for making egg rolls packed with turkey and stuffing there was no way that I was going to wait until I had Thanksgiving leftovers to make them. I had to make them immediately. So I did. Cranberry sauce and gravy made for the perfect dipping sauces. Every bite tasted like the best Thanksgiving ever. Absolutely fantastic.

Terribly Addicting

I loved the crunchy egg roll contrasting with the sage stuffing and tender turkey. The cranberry sauce is a little thinner than your usual Thanksgiving version so that it’s easier to dip into. You might want to thin your gravy with a bit of milk or broth too if it’s too thick for successful dipping!

If I’m cooking for a crowd, I’ll break out my big deep fryer. But, if it’s just the two of us, I’ll fire up my Fry Daddy fryer. It’s the perfect size for both of us. It fries everything perfectly. And as an added bonus, it doesn’t use a lot of oil, which saves me money.

I get out my big deep fryer when it’s time to fry a large batch of food. It comes to temperature quickly and it maintains that temperature perfectly. It has a built-in oil filter and storage unit so I can re-use the oil several times.

For the egg rolls

  • 1 pound turkey breast cooked, cut into small cubes
  • 1 package Stove Top stuffing prepared (or two cups)
  • 1 egg beaten with 1 tablespoon warm water
  • 12 egg roll wrappers
  • oil for frying
  • gravy warmed, for dipping (I used our Cajun gravy)
  • Cranberry dipping sauce see below

For the cranberry dipping sauce

Instructions

For the egg rolls

  • Heat a few inches of oil to 375 F in a deep fryer or Dutch oven.
  • Combine the turkey and dressing in a bowl.
  • Working in batches. brush egg and water around edges of the egg roll wrappers.
  • Add 2 tablespoons of turkey in the center of the wrappers.
  • Roll up tightly and fold in the edges. Brush on more egg to help seal the rolls.
  • Fry the egg rolls for 1-2 minutes, rotating as they cook, until golden brown.
  • Remove to a paper towel-lined plate to drain and cool.

For the cranberry dipping sauce

  • Place cranberry sauce in a medium saucepan over medium heat.
  • Stir until melted.
  • Add the sugar and zest and stir.
  • Add water as needed to reach the desired consistency.

Notes

Egg rolls can be frozen and reheated in the oven later.

Fried Goat Cheese Croutons

I set out to make a great side salad for last night’s dinner. Nothing too complicated, though. A mix of greens, of course. Topped with sliced roasted beets (a favorite in our house!). Next, I needed croutons. Oh, but not the ‘usual’ croutons. Not dried crunchy bread croutons. Nope. Cheese croutons. Glorious fried goat cheese croutons, to be exact! Oh, what wonderful little bites these are. Decadent. Delicious. Dangerous.

Instructions

  • To make them a bit easier to slice, place the goat cheese logs into the freezer for 30 minutes. Then slice into 1/2″ thick slices.
  • Heat 1″ of oil in a deep fryer or Dutch oven to 375 F.
  • Place flour in a small bowl or pie pan.
  • Place beaten eggs into another small bowl or pie pan.
  • Place breadcrumbs in another small bowl or pie pan.
  • Working in batches, dip the cheese slices into the flour.
  • Shake off the excess then dip them into the eggs.
  • Finally, roll the cheese in the breadcrumbs.
  • Add to hot oil and fry 2-3 minutes per side, flipping once.
  • Remove to a paper-towel lined plate to cool and drain.

Fire-Eater Green Beans

I don’t even know where to start. I guess I’ll just start with ‘these Fire-eater green beans are absolutely incredible’. They are not mild, wimpy, beans. They have kick. Lots of kick. They have creamy cheese goodness. And smoky, crispy bacon. These beans are serious about flavor. And heat. If you’re making a batch of them (and this recipe does make a big batch so you’ll need two baking dishes) you might want to warn those that don’t like a little kick in their beans. They’re just flat-out good.

If you want to amp these Fire-Eater green beans up even further, substitute Mexican-style Velveeta for regular. You could actually leave out the cheese and still have really great beans, but the cheese takes these beans to bean paradise. I’ve never run across cheese in a baked green bean dish before. I wish I had.

Bacon-Wrapped Shrimp on the Char-Broil Big Easy

Note: This recipe was developed using the Char-Broil Big Easy Oil-Less Fryer. If you are cooking using the Char-Broil Smoker-Roaster Grill you should cook with the lid open and the temperature set to High. You might also need to adjust the cooking time.

I really should’ve listened to my inner voice. You know the one. The one that says “You should make a double batch of these bacon-wrapped shrimp on the Char-Broil Big Easy“. But I didn’t listen. I fired up my cooker and made just one batch. One little ole batch. I knew as soon as the bacon started cooking that I was in a for a treat. In almost no time I was enjoying hot, tender, moist shrimp wrapped in tasty bacon, seasoned with my favorite Fire-Eater rub, dipped in a cool remoulade sauce. You can’t beat it.

Eat ‘Em Like Popcorn

Darn near anything wrapped in bacon is good. Bacon-wrapped shrimp and cooked on the Char-Broil Big Easy is crazy good. Try my bacon-wrapped appetizer sausages. Or bacon-wrapped Brussels sprouts. And of course, bacon-wrapped tater tots.

Stainless steel oyster shells are great for cooking shrimp on the Big Easy. Try my BBQ shrimp, you’ll love them!

It’s always a good idea to keep a few spare grease trays on hand for your Char-Broil Big Easy.

Ingredients

  • 4 bacon 1 slice for every 3 shrimp
  • 12 shrimp shelled and deveined (I was able to cook 12 24-30 count shrimp at a time in the bottom of the Big Easy basket)
  • Your favorite seasoning I used our Fire-Eater Rub
  • Remoulade sauce for dipping (try our spicy Creole remoulade)

Instructions

  • Stick the bacon into the freezer for 15 minutes to make it easier to slice.
  • Fire up your Big Easy.
  • Slice the bacon into thirds and wrap around the shrimp.
  • Sprinkle the shrimp with the seasoning and place into the Big Easy basket.
  • Cook in the Big Easy for 20 minutes for large shrimp. Do not overcook or the shrimp will get tough.
  • Remove and let cool for 10 minutes to help crisp up the bacon.
  • Serve with remoulade sauce for dipping.

Fire-Eater Campfire Beans

Who doesn’t love a big pot of beans? Even on a hot summer day, give me some spicy beans and cornbread and I’m set. These fire-eater campfire beans combine a simple, straight-forward bean recipe with the kick from Steven Raichlen’s fire-eater rub. I started out using the rub just on chicken (and mainly chicken wings, for a seriously good hot wing!), but now I find myself using it in a lot of dishes.

Add Meat And Call It Dinner

If you have a few spare chunks of smoked pulled pork or brisket, toss them in the pot with these Fire-Eater Campfire beans. They’ll add even more great smoky flavor, plus also a nice texture. Heck, it’s a meal-in-a-bowl! I’ve also enjoyed a big bowl of these beans with a grilled hot dog, sliced, thrown in. Smoked sausage is great too. It makes for a great quick lunch!

I like to use my good ole trusty Dutch oven to make these beans and pretty much darned near anything like it on my stovetop. It’s nice and big and sturdy. That extra weight helps it maintain and distribute heat perfectly. As an added bonus, it’s actually pretty easy to clean up too!

  • Check beans for any rocks or bad beans. Rinse well.
  • Transfer beans to a large pot and cover with water by 2 inches.
  • Add the ham hock and cover.
  • Bring to a boil, then reduce to a simmer and simmer for 2 hours. Add more water as needed.
  • Add the garlic, peppers, and onion.
  • Cover again and cook another hour or two. The beans should be starting to soften.
  • Add the rub.
  • Cover and cook another 20-30 minutes or until the beans are tender. The liquid should be nice and thick.
  • Serve hot.

Notes

Best served with cornbread.

Grilled Zucchini Roll-Ups

I have to admit, zucchini isn’t something you often see around our kitchen. But now that I’ve discovered grilling and wrapping them around cheese, they are going to be seen and seen often.

These grilled zucchini roll-ups are stuffed with a wonderful mixture of feta, plain crumbled goat cheese, sun-dried tomatoes, chives and basil, and red pepper flakes. You can omit them, but the sun-dried tomatoes are what makes these bites really delicious.

Great Flavors In A Single Bite

Don’t omit the red pepper flakes when you make these grilled zucchini roll-ups. They don’t make the roll-ups particularly spicy, but just add enough heat to complement the creamy sweet goat cheese.

I used a very sharp Wusthof knife to cut the zucchini into thin strips, but you could also use a mandolin (you might have to cut the zucchini into halves so they aren’t so long). Make sure you sharpen your knives regularly. Not only will they obviously work better, they’re safer when sharpened. I recently picked up an electric sharpener that I absolutely love. I found that my manual sharpening skills weren’t doing the job. This sharpener does an amazing job, and it works on 20 degree (European) and 15 degree (Asian) knives, so it handles everything in my knife block without a problem.

I recommend that you use a grill basket when making these roll-ups. It makes cooking easier and you don’t have to worry about anything falling through the grates. And cleanup is easier too!

Ingredients

  • 4 large zucchini cut lengthwise into 1/4″ strips
  • 2 ½ tablespoons sun-dried tomatoes chopped, plus 2 tablespoons of the oil from the jar
  • 4 ounces feta cheese crumbled
  • 6 ounces goat cheese crumbled
  • 1 tablespoon chives chopped (or 1 teaspoon dried)
  • 1 tablespoon basil chopped (or 1 teaspoon dried)
  • ½ tablespoon dried red pepper flake

Instructions

  • Fire up a grill for direct cooking.
  • Brush both sides of the zucchini strips with 1/2 tablespoon of the oil from the sun-dried tomatoes.
  • Place onto grill and grill until slightly tender and you get good grill marks.
  • Remove to a cooking rack and let cool completely.
  • Meanwhile, in a bowl, combine the sun-dried tomatoes, remaining oil, the cheeses, chives, basil, and red pepper flakes.
  • Spread 1 teaspoon (or maybe a bit more depending on how big your zucchini are) of the cheese mixture onto the zucchini strips.
  • Roll up and secure with toothpicks.

Notes

You can serve these immediately or refrigerate and serve later.
